SPEAKS AT THE ARNOLD
The Arnold Schwarzenegger Fitness Festival is the largest tness expo of its kind in the United States. More
than 120,000 people travel to attend events and workshops at this special annual extravaganza.
Twenty-two years ago tness innovator Dr. Jack Barnathan created with Arnold Schwarzenegger and
the International Chiropractors Association Council on Fitness & Sports Health Sciences a special educational
program for doctors and elite tness professionals with workshops led by the best experts in the world. The
keynote for each yearly event has been Mr. Schwarzenegger himself.
Karen Mullarkey was one of seven invited experts to serve as a panelist in the presentation immediately
following Mr. Schwarzeneggers keynote address this year. Topics included innovations in client motivation,
nutritional design, anti-aging and community education. Karen Mullarkey is an internationally respected
expert in tness, sports and wellness design, and we were proud to have her as a part of this special

We all want extra energy. These
simple steps often get overlooked
on a daily basis, yet they can
easily boost your energy levels
dramatically.
Make sure you drink plenty of
water throughout the day. Water
is literally a miracle worker when it
comes to overall health and energy.
Its great for your digestive and
circulatory system. Your skin craves
water, especially if you live in the dry
western states. Weight-loss gurus
usually recommend daily intake
of water of at least - 1 gallon
throughout the day. Fill up a water
bottle or jug every morning and
sip it throughout the day. Dont be
surprised to see your energy levels
jump up quickly.
Get in the habit of working out
daily. I like to start my day by
going to the gym every morning.
After a few weeks of going, it
becomes habitual and you feel bad
if you dont go. You can also plan
a 20-minute walk daily. Right after

times. When you keep healthy snacks
conveniently available, you will eat
them. This will help you conquer the
emergency cravings for a candy bar
when you feel famished before or after
lunch. These smaller energizing snacks
will again lead to a faster and healthier
metabolic rate, which also increases

Cut back on soda and coffee. While

Most people are aware that long-term


stress, such as that experienced after
the death of a loved one, may contribute
to health problems, such as anxiety,
weight gain, high blood pressure and
digestive problems. But a new study
from the University of Iowa shows a
potential link between stress hormones
and the development of short-term
memory loss as we age.
The study, which was performed on
rats, looked at blood levels of cortisol, a
natural hormone that helps us respond to
lifes challenges with alertness and quick
thinking. What they found: older rats with
high cortisol levels performed poorly on a
maze exercise using short-term memory
skills, while elderly rats with lower cortisol
levels performed almost as well on the
maze exercise as young rats. Young rats
performed equally well on the maze
regardless of cortisol levels.
While the study authors acknowledge
there are many factors that play a part in
mental decline and short-term memory
loss, the research suggests that stress
hormones may lead to weathering of
the brain that may eventually cause such
problems. They also say that this may be
an important reason to treat people for
conditions that cause high cortisol levels,
such as stress and anxiety.

Have you ever obligingly chuckled at a colleagues joke that you didnt nd the least bit funny?
Well, chances are, she knows that youre faking it. Researchers from UCLA found that study
participants who listened to recordings of genuine and forced or fake laughter were able to pick out
the spontaneous laughter about 75 percent of the time and the fake laughs about 66 percent of the
time.
Laughter is an important social tool for both humans and animals, said the study authors. It helps
us to signal to others that we are not a threat and that we want to be friends. So if you force out a
laugh or two in the appropriate situation, it isnt always wrong or unappreciated. But take note: Even
children older than age ve or six can tell when youre faking it.
FAKING YOUR MIRTH DOESNT FOOL ANYONE

Are you addicted to the sun? If you love to spend long


hours at the beach basking in the sun despite the known
risks of sun exposure you just might be, say researchers
from Massachusetts General Hospital and the Harvard
Medical School.
According to the study, chronic exposure to ultraviolet
(UV) radiation releases endorphins, feel-good hormones
that cause pleasure (and relieve pain) by activating
opioid receptors through the same pathway activated
by prescription painkillers, morphine and heroin. In the
study, rats exposed to UV light for six weeks showed
increased endorphin levels in the blood, along with physical
dependence, tolerance and addiction-like behaviors.
Skin cancer is the most common form of cancer in
the United States, and UV-seeking behavior is a major
risk factor for skin cancer. The study authors note that
many who are UV-seeking also meet clinical criteria for a
substance-related disorder, giving more credibility to the
possibility of an addictive mechanism at play in sun-
worshipers.
The study may help public health educators to direct
skin cancer education to UV-seeking people, helping them
to understand that the decision to protect their skin or the
skin of their children may take a more conscious effort on
their part than it may take for others.

Not again. You missed an important
meeting the second time this month
youve forgotten one and the boss wants
to see you in his ofce. Immediately. Or
maybe you're so buried in Post-It notes
that you don't know which way is up. Or
you've got a stack of papers to get through
on your desk, but you can't even get past
the rst sheet of paper.
Do you have chronic trouble with
forgetfulness, disorganization, listening
to others, inability to start or complete
tasks or being late to work or other
important events? If so, you may have
attention dehcitfhyperactivity disorder
(ADHD). If you think that ADHD is
just a kids diagnosis, youre mistaken,
said Stacey Spencer, EdD, a clinical
neuropsychologist practicing in New
Jersey. Four and a half percent of
adults have ADHD, she explained. The
focus in the media is on children with
this disorder; we tend to overlook the
symptoms adults have that may also
indicate ADHD.
The disorder may be under-
recognized for several reasons,
according to Stephanie Sarkis, PhD, a
Florida psychotherapist and author of
four books on adult attention dehcit
disorder. While mental health experts
know today that adult ADHD is merely
a continuation of childhood ADHD,
some adults were never diagnosed as

children, so are unaware they have


the condition. When you have a lot
of structure in your day to day life and
your parents are in control of things,
the symptoms arent always obvious,
said Dr. Sarkis. But once you start
college or a job and youre left to
your own devices, they start to cause
problems.
Another problem, added Sarkis,
is that even if youre aware you had
ADHD as a child, the symptoms
change in character from childhood
to adulthood, being somewhat more
subtle and making the diagnosis more
difhcult. Some of the hyperactivity
turns into an inner restlessness, she

TIPS FOR COPING WITH ADULT ADHD
Many of the challenges we all face both in the workplace and at home are even more difcult for those with adult ADHD. Here are
some tips from the experts for coping:
Choose your career wisely, advised David Sack, MD, psychiatrist and CEO of Elements Behavioral Health in California. People with
ADHD have trouble with management jobs due to lack of organization and inability to sit still and focus. Yet they may be much
more successful at a job in sales or contracting, where they can move around and be in the moment.
Take advantage of technology, suggested Stephanie Sarkis, PhD, a Florida psychotherapist and author of four books on adult
attention decit disorder. Go as paperless as possible to reduce the clutter and help remind you of things, she said. Use your
phone calendar and to do list, use apps for travel packing and shopping, use money management software, direct deposit and
automatic bill payment.
Enlist help, even if you have to hire someone to help with organization, light cleaning and necessary paperwork, said Dr. Sarkis.
Friends can also help you manage impulsive behaviors by providing feedback about what they see and help you to practice more
positive behaviors.
See a therapist, in addition to taking prescribed medications, said Dr. Sack. Behavioral therapy is a cornerstone of ADHD
management. It can help with the frustration of living with the disorder, and with social skills training.
Break tasks down into small pieces. Study or work on a difcult task for a half hour, then go outdoors and take a walk,
recommended Dr. Sarkis. Exercise helps you to raise the brain chemicals you need to help you focus.

They have ongoing problems with not
getting work done on time, missing
deadlines, forgetfulness at a job or at

place. At home, in a relationship, they
may even forget to pick up the kids
from school or child care.
The good news, said Dr. Spencer, is
that adult ADHD can be diagnosed and
treated, both with medication and with
behavioral therapy. Beware, though, of
self-diagnosis. There are lots of online
tests you can take to see if you have
ADHD, she said. But its important to
talk to a mental health professional, a
human being, to have a dialogue about
your symptoms, so that you can be
treated appropriately.
Making the Diagnosis
These days, weve become accustomed
to high tech tests, such as imaging,
to help doctors make a diagnosis. But
while some research suggests that

purport that those with ADHD have a
different theta/beta brain wave ratio
than those without the disorder there
is no biological test at this point that
can conclusively diagnose the disorder,
said Spencer. According to Dr. Spencer,
the best way for a mental health
professional to diagnose adult ADHD
is by conducting an interview with the
patient and his or her family members,
using criteria from the Diagnostic and
Statistical Manual of Mental Disorders,
(DSM-5), published by the American
Psychiatric Association, a listing of
certain symptoms that may be present
in those with ADHD.

childhood, the diagnosis is fairly easy
for those who have been diagnosed
previously. But In adults who werent
diagnosed with the disorder during
childhood, it can be a little trickier, said
Dr. Spencer. We need to look back to
middle childhood to identify symptoms
that may give us clues of ADHD.
This, she explained, may be done by
examining school records to identify
grades that were lower than might have
been expected, or behavioral problems.

help to identify both past and current
symptoms that the person may not
recognize.
Sometimes, a diagnosis of adult ADHD
may come as a surprise, added Dr.
Spencer. Many times, people with adult
ADHD seek help for other problems that
go hand in hand with the disorder, such
as anxiety or depression, she explained.
The best advice? If you have any
symptoms that are interfering with your
job or relationships for more than a brief
time, see a mental health provider, said

Growing up I have always been very
active. Dance and gymnastics were my
life from age 6 all the way through high
school. As a young adult I became an NFL
Cheerleader for the Arizona Cardinals, spent
5 years on the team and received the honor
of Pro-Bowl Cheerleader in 2005. While I
was cheering, I was also going to school and
working part-time so it was important to keep
my energy up, but I always felt tired. Living on
processed foods and energy drinks, I could
never gure out why I always felt sluggish and
zapped of energy. In 2007, I married my
husband, who is a personal trainer, and slowly
I began to learn from him how to modify
my eating and exercise habits. In 2013, I
decided to take my tness to another level and
competed in my rst bikini competition. After a

few weeks of training, I felt better than I ever have in
my life. I had long-lasting sustained energy,
my skin was glowing and overall I felt
t and healthy. I realize now how
important it is to eat right and
take care of myself because
as a busy working mom I
need energy to get through my
workday, take care of my family
and fuel my workouts.
You don't have to be a tness
competitor to feel better or look better,
but you can help boost your energy
levels with some of these tips:
1
EAT CLEAN,
WHOLESOME FOODS
Eating 5-6 small meals throughout the day
helps keep my energy up. I try to eliminate
processed foods and I do not skip any meals.
I also try to eat foods that are high in magnesium such as
almonds, whole grains and hsh.

EXERCISE
I try to exercise 4-5 times per week and integrate a
mix of weights and cardio, but on days I cannot make
it to the gym, even a brisk 20-minute walk boosts my
energy for hours.

DRINK PLENTY OF WATER
I make sure I stay hydrated by drinking plenty of water.
Even the slightest amount of dehydration can make you
feel sluggish. A simple way to hgure out how much
water you should drink per day is to take your weight
and divide by two. This is the amount of water measured in
ounces that you should drink per day.

SLEEP
This sounds like a no-brainer, but sleep is so
important when trying to boost your energy
levels. Even a 20-minute power nap can make
you feel rejuvenated.

REDUCE CAFFEINE INTAKE
A cup of coffee or energy drink may give you
a temporary rush of energy, but too much
caffeine can have an adverse affect such
as dehydration, anxiety, difhculty sleeping
and emotional fatigue. Try to keep caffeine and high
sugary energy drinks to a minimum or eliminate them
altogether.
Living a healthy and t lifestyle is important to me and
my family and these are some simple tips that help me
boost my energy and feel better. Power up your life by

I started working with a
TRX about three years ago
and have noticed signicant
changes in my core strength.
It helps with overall balance,
core and whatever body
part you choose to blast! Try
the following exercises to not
only sculpt your upper body
but to also give you the abs
you have been dying for.

Try each of the listed exercises in a super-set fashion. Do 12-15 reps for a total of 4 sets. Once you have nished one rotation take
a 30 second rest and repeat. You should be shaking to the core once you are nished!
REAR DELTS
Grip the straps with palms
facing the hoor. The further you
angle your legs towards where
the TRX is mounted the harder
the exercise. Start at a slight
angle with your feet together
and then increase it as you gain
core strength. You should have
all of your body weight on your
heels, don't stand hat footed. Be
sure and keep your hips forward
and abs engaged as you pull the
handles in towards your body,
while keeping your elbows out.
Once you reach the top of the
movement be sure and squeeze
your rear delts. Slowly release
your arms back to the start
position while keeping your hips
forward and abs engaged.
ROW
Begin in the same start
position as you did for the
rear delt exercise except
your palms will be facing
each other. Again, keep
your hips forward and
abs hexed throughout
the movement. Pull the
straps in at your sides
and squeeze the middle
of your back as you reach
the top of the movement.
Slowly release back to
the start position while
keeping your core tight.

grips against one another,
which makes it easier. You

Begin gripping the straps

arms reach 90-degree angles
and you feel a good stretch
through your chest, slowly
press back into the start
position. Be sure not to let
your glutes raise on this
movement by keeping your
hips forward.
Now that, my friends, is an intro to TRX training! If you
are an athlete like myself and are looking to better your
performance by increasing core strength, be sure and
hit the TRX. There are numerous full body exercises you
can do with suspension training so dont limit yourself,
just make sure you keep good form. I work at least one
TRX exercise into my program every day I lift. Dont be
scared to try something different, you just might love the
results you get! I know I will be hitting the pool proudly

Eight years ago, I was a good 80 pounds overweight
when I walked into a gym offering Brazilian Jujitsu, an
aggressive grappling art involving chokes, arm locks
and throws. Ten minutes into the warm up, I was
already utterly exhausted and in a good deal of pain.
Two hours later, I literally crawled off the mat, nearly
hyperventilating, my gi soaked with sweat, my hair looking
as though I had just stepped from the shower.
I was hooked.
I immediately began attending 4 to 5 days a week.
Every night, I struggled with sore muscles and copious
bruising, wincing as I stooped to tie a shoe or lay down
to sleep. Still, never once did I think, I cant do this, I
cant go back. Instead my thoughts were, Training today
was so amazing! I cant wait to do more! I was not on
any special diet. I had no personal trainer. I had never
even heard of a sports drink. All I knew is that every
time I walked into that gym I felt a drive and ambition to
participate and perform. Now, nearly a decade later, I am
down from a size 55 to a 34 pants, I have endless energy,
I can run for miles and at age 39, and I am in the best
shape of my life.
My belief is that the key to locating a seemingly
unlimited supply of energy and endurance has less to do
with exercise and diet, but rather with one thing and one
thing only: passion.

But what does passion look like?
How will you know it when you see
it? Well, for one thing, passion does
more than simply challenge your
limits: it utterly destroys them. In
the presence of passion, you may
hnd yourself abandoning all sense
of reason and rational thought.
Take rock climbers and surfers, for
example. Anything that gets you up at
4 a.m. with a potential mortality rate
to catch a giant crashing wave or to
climb a rock so steep and so perilous
where even goats wont go, can only
be rocket-fueled by passion. Parkour,
the art of hopping buildings without
the aid of super powers, is also an
option for the true beasts among us.
And for this particular maniac, when
someone is trying break my arm,
choke me unconscious or simply crush
me senseless under a mass of sweat,
bone and hair, let me tell you, nothing
else compares.
I dont mean to suggest that
you literally quit your gym, forgo
protein powders or avoid that
designer sports drink, rather that
you allow your newfound passion to
supercharge your healthy lifestyle.
For example, in my gym, those who
love Brazilian Jujitsu the most are the
same individuals who consistently
practice the healthiest eating and
exercise habits. They often pair up
to go running or lift weights, or to
simply trade healthy dieting tips.
Lean meats, brown rice and steamed
vegetables are the staple of the
driven Brazilian Jujitsu practitioner.

One of the most coveted grappling
tournaments on the planet took place
from May 29th - June 1st at the iconic
Blue Pyramid in Long Beach, CA. The
IBJJF Worlds is aptly named as it literally
brings the best of the best in Brazilian Jiu
Jitsu from all over the globe. So it was
with months of training and preparation
that Max Muscle Fullerton (California)
sponsored athlete Edwin Najmi entered
the tournament.
FIGHT DAY
Edwin is an elite level featherweight purple
belt who trains under multiple-time world
champion Romulo Barral. Leading up to the
Worlds, Edwin was a juggernaut in winning
every tournament he had entered. I felt
amazing, everything went right, he said.
Training, weight cut, mental preparation
I felt like I was hitting a stride. I was
dehnitely expecting to get the gold medal in
my weight class.
!t was with this conhdence that Edwin
methodically tore through his hrst four
opponents via submission on his way to the
hnal hght. !n the championship match he
faced a familiar opponent.
I had beaten my opponent four times
before and I think that made me a little
over conhdent. ! made a mistake in strategy
that cost me the hght," Edwin admitted. He
fought with a good game plan and congrats
to him for that.

the elation that comes with it, quickly turned into shocking
devastation. One year prior, Edwin had been disqualihed in the
same competition on a questionable call by a referee for an
alleged illegal leg lock. Edwin now had two shots at redemption.
He would either have to wait a year or enter the absolute
competition. The absolute competition is essentially an open
weight tournament within a particular belt class. Edwin (a
featherweight) could hght a super heavyweight and anyone in
any weight class in between. No featherweight in the history of
the Worlds has won the absolute.
AN ABSOLUTE WIN
Losing my weight class was the worst feeling Ive felt in my
life, Edwin said. The absolute wasnt a thought as I was so
focused on my weight, and as a featherweight its tough to
compete with those huge guys. But after that loss I was sitting
there just devastated and thought to myself, There is no way
I can wait one more year to have the chance to win a World
Championship. So I went on a mission, I signed up for the
absolute and fought with everything I had!
After hghting hve hghts in his weight class earlier in the
day, Edwin now faced the monumental task of hve more in the
absolute. Its a clich, but sometimes one must fail in order
to succeed. Edwin took that frustration from his loss and let it
loose on his competition. He submitted four of hve opponents,
including a gorgeous hying triangle in the hnal to become the
hrst featherweight to win an Absolute World Title.
I can easily say winning the absolute and becoming a World
Champion is the best moment in my life thus far, Edwin said.
There are no words to describe that feeling. All the sacrihce
and hard work, training nearly everyday two to three times a
day for almost 4 years of not medaling at the Worlds. Then
being the hrst featherweight to win the absolute made it that
much more special.

to me the coolest thing in the world,
Kristian said.
Not yet knowing he wanted to make
racing a career, Kristian served in the
U.S. Army after high school, honoring
his country through two tours in Iraq.
His time in the Army was challenging
and rewarding at the same time, but as
often happens along the way, life threw
him a curve ball.
UNEXPECTED CHALLENGES
During his second tour in Iraq, Kristian
started having mysterious health
problems. He wasnt feeling right

what exactly was wrong. He had an
unquenchable thirst and he constantly
had to go to the bathroom. Eventually,
he went to the hospital and the doctors
ran tests. When the doctors told him
he was diabetic, he was devastated.

lifestyle changes that were ahead
of me, but because when I was a

Picture this: its a hot, humid, dusty
summer day temperatures close to 100

sharp and virtually all energy focused on
one task: using his incredible strength to
control the high-powered machine at his
hands. A machine that will be tearing
around a track at speeds of 180 miles per
hour with 2Gs of pressure on every turn,
constantly juggling with the competition
for position against a eld of other skilled
athletes. This elite athlete might not be
what you expect, but as a professional
race car driver in the IndyCar USF2000
Series and the Formula Lites sanctioned by
SCCA Pro Racing, Kristian Aleixo, from
Tacoma, Washington knows rst hand
what it takes physically to compete at
the top levels in his eld. His dream is to
compete in the Indy 500 and he knows
what it will take to get there. He also
knows what tremendous strength it takes
to control his car and endure the difcult
conditions of racing and he trains hard to
prepare his body for these demands. He

went into a diabetic coma one day and
didnt wake up. I thought I was given a
death sentence.
Forced to reevaluate his life with a
diagnosis of Type I Diabetes, Kristian
did a lot of soul searching. I put the
rest of my life into the context of I
have this disease that could kill me and
I decided that I needed to do things
that made me really feel alive, he
said. I recognized that was what I felt
like when I was driving that car. And I
decided then that I wanted to do this
but on a bigger scale.
Kristian said he refused to succumb
to the disease like his mother so

and then back to being productive with
his life.
TURNING POINT
It was at this point in his young life that
Kristian recognized that if he was going
to deal responsibly with his Type I
Diabetes and follow his dreams he was
going to have to manage his nutrition
and health. This was when I decided
I better get to it, Kristian said. I
attacked it.
TRAINING LIKE A PRO
Kristian not only spends hours a day
training on the track, he also works
directly to support his sponsors, market
his brand and manage his health. He
trains extensively in the gym. This
requires 100 percent dedication and
discipline.
In the gym, Kristian must focus on
core development and arm strength
training. The amount of strength
required to race at this level is amazing.
Kristian said, Did you know that a
drivers reaction time is equivalent to
that of a Major League hitter swinging
at a 95 mph fastball, his heart rate
is just two beats shy of an Olympic
swimmer during the 1,000 meter?
Because of his Type I Diabetes,
Kristian has to carefully manage
his nutritional needs and focuses
on a healthy mix of protein and
carbohydrates. This gives his body
the fuel it needs to perform as the
elite athlete he is in the same way his
racecar has to be properly maintained
and managed with fuel.

heart rate of an Olympiad for hours and
wrestling with a Silverback in a cage
takes the hardcore conditioning to be
expected of any professional athlete,
and I for one, take my training very
seriously, Kristian said.
TIPS FROM THE PRO
1. Planning is essential. If you have
a meal game plan already in place,
you are less likely to grab whatever
you can get your hands on.
2. Prepare your own food as often
as possible. This is the only true way
to control whats going in. Also, if you
can, set aside a day or few hours one
day a week and pre-package your
meals for the next 7 days.
3. Hydrate. Too many of us are being
active with less than optimal hydration.
Studies show that even being just
5 percent below target has effects
that could wreak havoc on the bodys
function and performance!
4. Keep a journal of what you
ingested and how it made you feel.
Read it back at the end of the day.
Increase the things that made your
body feel better and nix the things
that made you feel sluggish and tired.
5. Stay away from alcohol. The

At rst, Natalie Hernandez, 30, from
Rancho Santa Margarita, CA, started making
healthy choices for her son. As a single mom
to a young teenager, she started to realize
her lax approach to health and tness were
having a negative impact on his health when
she realized they were both out of shape and
overweight. Natalies weight had steadily
increased since her early 20s, and much of
that could be attributed to a lack of activity
and excessive eating and drinking. She
couldnt believe it when the scale topped out
at 196 pounds. When her son started getting
teased for his weight Natalie knew it was
time to make tness a priority in their home.
THE CHANGES
Natalie started by cleaning out her entire
kitchen of every bad thing" including
butterfoils, sweets, pasta, etc. She
replaced these convenience foods with
fresh produce and lean meats and she
started walking. At hrst, she incorporated
daily walks around the lake near her
home. !n time this increased to short
runs, stairs and eventually strength
training, running and kickboxing. Clean
eating became second nature and her
new healthy living changes became family
habits.
As she focused on physical activity and
clean eating, her body started to respond,
and before she knew it other women were
coming to her asking for help with their
htness. Her co-workers noticed the major
changes even before Natalie did, one day

because her old ones were literally falling

ASTRAGALUS
In Traditional Chinese Medicine
(TCM), astragalus membranaceus is
a well-known herb said to tonify
or strengthen a persons Qi
(translated as vital energy.)
Active ingredients from the
astragalus plant have been
studied extensively over the
past several decades and it has
shown to be effective for treating
heart conditions, preventing damage
to skin from UV rays, improving insulin
resistance and a variety of other
benehts. Until recently, few studies
using astragalus had looked at the
possibility of its use in decreasing
fatigue.
A Taiwanese study published in
March of this year measured the effect
of astragalus supplementation on
exercise-related fatigue in mice.
The results were positive,
showing enhanced performance
and less fatigue in mice who
had received the supplement than those
who had not. Further clinical studies
are necessary to determine if the same
ergogenic effects would be seen in
humans.

ASHWAGANDHA
Ashwagandha root, commonly known
as Indian Winter Cherry, has been used
for centuries in Ayurvedic medicine
as a rasayana or rejuvenating herb.
A number of clinical studies have
conhrmed the ashwagandha root's

Ashwagandha is also prescribed
for arthritis, to boost energy and to
treat a variety of neurodegenerative
diseases such as Parkinsons disease

According to the International Association of Sports Sciences, exercise falls
into two key categories: anaerobic and aerobic, with aerobic exercise involving
more endurance type activities such as long distance rowing, skating, cross-country
skiing, jogging and long-distance swimming. Regular exercise in any form requires

Makes approximately 20 Sweet ENERGY

INGREDIENTS
cup amaranth
cup molasses
1 teaspoon orange zest
cup plus 2 tablespoons chopped dried cherries
DIRECTIONS
Heat a deep saucepan over medium high heat. Add
cup of the amaranth and stir until most of the seeds
have popped. Remove popped seeds from the pan and
repeat with the remaining seeds.
In a separate saucepan, heat molasses over medium
high heat until it reaches a soft boil. Insert a candy
thermometer and softly boil the molasses until it
reaches 225 degrees. Stir in amaranth, orange zest and
dried cherries. Scrape onto parchment paper and allow
to cool until mixture is partially set, about 5 minutes.
Scrape about 1 heaping tablespoon and roll into a ball.
Allow to rmly set; then store in an airtight container in
a cool, dry place.
Makes about 20 balls. Will keep for up to 2 weeks.

People today are busier than ever before. With the
demands of careers, families, relationships and hobbies, most
of us are running on fumes just to keep up. Luckily, energy
drinks are available everywhere to provide that boost of energy
needed to get through the day and perform when it counts.
The History of Energy Drinks
Throughout history, people have used various beverages to
feel that extra burst of energy. During that time, trends have
changed from tea to coffee to soft drinks and back again. But,
just as people have long sought out drugs more powerful than
caffeine, they now seek soft drinks with additional energy-
boosting chemicals.
Enter energy drinks. From 2008 to 2013, the energy drink
market grew 60 percent, totaling $12.5 billion in U.S. sales
in 2013. In fact, according to the Energy Drinks and Shots:
Market Trends in the U.S. report, sales of energy drinks and
shots will grow to $21.5 billion by 2017, driven by continued
economic recovery, expansion in retail distribution and strong
potential in new product development.
But despite the markets recent explosion, energy drinks
arent a new concept. In fact, theyve been around since
the days of the early soda fountain. The hrst energy"
drink could actually be considered Coke since it originally
contained both caffeine and another stimulant cocaine
when launched in 1886. The soft drink carries that history
to this day the companys name, Coca-Cola is derived
from the ingredients: the coca plant from which cocaine
is derived and the kola nut, the source of caffeine. Coca-
Cola's founder used hve ounces of coca leaf per gallon of
syrup, but it was reduced to a tenth of that in a later recipe.
Cocaine was removed from Coke in 1903.

contain up to 80 mg of caffeine (about
the same amount as a cup of coffee).
By comparison, a 2011 study found that
the average 12-ounce soda contains 18
to 48 mg of caffeine.
Other than caffeine levels, how do
energy drinks differ from sodas and
sports drinks? Soft drinks are mainly
water, sugar and havoring. They don't
do anything for your body; they're just
supposed to taste good. Sports drinks
are designed to replenish huids lost
during activity. They typically contain
water, electrolytes and sugar. Energy
drinks have added caffeine and other
ingredients that their manufacturers
say increase stamina and boost
performance. They're designed for
students, athletes and anyone else who
wants an extra energy kick.
Here are some of the ingredients
found in popular energy drinks and
what they do to the body:
Ephedrine A stimulant that works
on the central nervous system. It is
a common ingredient in weight-loss
products and decongestants, but there
have been concerns about its effects on
the heart.
Taurine A natural amino acid
produced by the body that helps
regulate heart beat and muscle
contractions. Many health experts
aren't sure what effect it has as a drink
additive.
Ginseng A root believed by some
to have several medicinal properties,
including reducing stress and boosting
energy levels.
B Vitamins A group of vitamins that
can covert sugar to energy and improve
muscle tone.
Guarana Seed A stimulant that comes
from a small shrub native to Venezuela
and Brazil.
Carnitine An organic acid that helps
supply energy for muscle contractions.
Inositol A member of the vitamin B
complex (not a vitamin itself, because
the human body can synthesize it) that
helps relay messages within the cells in
the body.
Ginkgo Biloba Made from the seeds
of the ginkgo biloba tree thought to
enhance memory.
Although the manufacturers claim
that energy drinks can improve your
endurance and performance, many
health experts disagree. Any boost you
get from drinking them, they say, is
solely from the sugar and caffeine.
Caffeine works by blocking the
effects of adenosine, a brain chemical
involved in sleep. When caffeine blocks
adenosine, it causes neurons in the
brain to hre. Thinking the body is in
an emergency, the pituitary gland
initiates the body's hght or hight"
response by releasing adrenaline. This
hormone makes the heart beat faster
and the eyes dilate. It also causes the
liver to release extra sugar into the
bloodstream for energy. Caffeine affects
the levels of dopamine, a chemical in
the brain's pleasure center. All these
physical responses make you feel as
though you have more energy.
Energy drinks are generally safe,
but like most things, you should drink
them in moderation. Because caffeine
is a stimulant, consuming a lot of it
can lead to heart palpitations, anxiety
and insomnia it can also make you
feel jittery and irritable. Caffeine is also
a diuretic and causes the kidneys to
remove extra huid into the urine, which
leaves less huid in the body, so drinking
an energy drink while exercising can
be dangerous. The combination of the
diuretic effect and sweating can be
severely dehydrating.

Instead of splurging on commercial
energy drinks, you can easily make
your own at home for much healthier
alternatives and skip the artihcially
colored energy drinks and pasteurized,
highly-processed, rehned juices in cans
or bottles. Not only can you save money

Dairy Products May Be Most Efective in
Targeting Metabolic Syndrome (MetS)

MetS is characterized by obesity, dyslipidemias, hypertension and hyperglycemia,


and impacts 34 percent of the U.S. adult population. Nutrition scientists at the
University of Connecticut, Storrs evaluated data from epidemiological studies and
clinical interventions suggesting that one or more dairy components might directly affect
MetS parameters. Researchers found that calcium reduces
body weight by modulating vitamin D concentrations in
plasma and activating genes involved in fatty acid synthesis
and reducing those involved in lipolysis. Peptides present in
milk have been associated with blood pressure reductions.
BCAAs may increase post-prandial insulin secretion
and regulate plasma glucose levels, and leucine, an
abundant amino acid in milk, may be responsible
for decreased plasma glucose through modulation of
mTOR. Through different proposed mechanisms, dairy
