Indonesian restaurant has a traditional way of serving food through the fine dining,
why not?
Generally, most of people know that eating in a restaurant is only for certain people. It is
because the restaurant is designed luxury, so it served the classy fine dining, the waiters wear
decent clothes who completely serviced, the table also neatly arranged, and if we want to eat
there, we must wear a formal clothes. Therefore, it cost expensive. Almost all over the world
have restaurant including The United Kingdom. One of famous chef in United Kingdom, Marcus
Wareing, minded to change the system that we know restaurant is typical with expensive, by way
of changing the way people think.
He said that a restaurant does not have to be always expensive, the waiters do not have to
wear uniform then poured a drink, do not need wear well-dressed, so that the atmosphere of the
restaurant is so weird. Thereafter, he made a restaurant named Marcus, with different concepts.
He opened a restaurant with reasonable price, so everyone can feel how eat fine dining that is
usually only certain people, yet they do not have to dress formally, and the waiters seem friendly.
I myself agree if this concept happen in Indonesia, Indonesian traditional food by fine dining
with affordable prices, so everyone can taste Indonesian traditional food.
According to Bondan Winarno, a writer who wrote an article in food.detik.com said that
there is a famous fine dining restaurant in Solo named Soga restaurant and Longue, selling
Indonesian traditional food such as gado-gado, nasi ndalem wuryo, rawon bakar, and many more

dining-restaurant-termurah-di-dunia). He said that the owner sells the food by adjust solo people.
The food also decorated as luxurious as possible but prices are still within reach. That is why that
restaurant dubbed as a cheapest fine dining restaurant in the world.
Not only Bondan Winarno and I who agree that Indonesian traditional food also can be
served by fine dining, but also my friends who love Indonesian traditional food, Nabilah and
Ulfa said that they agree if in Indonesia opened a fine dining restaurant with cheap price. Besides
that, the most important is they need a restaurant which can comfort them, they do not have to
maintain their attitude like they can laugh or else, they can wear clothes as they want, and they
do not have to be watched by the waiters.
One of my friends who obedient to tradition said that not all Indonesian traditional food
cannot be served by fine dining. It because Indonesia is a country that has a lot of provinces and
thus has its own tradition, must have certain foods which not all can be eaten freely and it may be
can removes the traditional food. She said that some of food, for example in Banten, kue Pasung
that must be presented as a complement to the offerings in the ceremony Pudjan Bromo Tengger
tribe as their gratitude for the safety of which has been given by God Almighty. Other is Rabeg,
soupy dish made from mutton and offal. Previously, this dish is considered sacred because it is
symbolic homage to the Prophet Muhammad and this dish is only served during the celebration
of the birthday of the Prophet Muhammad, some say these dishes are served to the sultan of

I agree that it can relieve our tradition food, but it is just several food that has own
tradition that cannot be bothered. We still have many traditional foods which can be served
without rule, so I think through fine dining with appropriate price, humble waiters, relaxed
atmosphere, no rules, but it also can show and introduce us to a typical Indonesian food, in our
country and outside.
