The Frame Gallerys recent exhibition of
new works by international wildlife artist, Pip
McGarry, has been its most successful to date,
achieving record sales for Jan Baker and the
team. The exhibition attracted new

from across the region, eager
to see the latest collection of
oil paintings of African big cats
and game by this world-renowned
artist. Pip is amazed by the success;
This is my second solo exhibition that has
gone into six fgures and my second most
successful ever exhibition. The fact that it
occurred in a small village location makes it

THE PERFECT VINTAGE
If cheese is your thing then a visit to the cheese stall is
a must. This impressive stall sells an enormous variety
of traditional cheeses cut to order, from the UK and
Europe. Whether its hard, soft, or blue cheese that
takes your fancy, the cheese guys, with their expert
knowledge, will be able to fnd the perfect one for you.
So Paul, what inspired you to make gin?
Ive been fascinated by the distinctive citrus-pine char-
acter of gin since being reintroduced to it at university.
The idea of making a Hampshire gin started at the end
of 2011 after a long conversation with a friend, prob-
ably in a bar, where we explored the local ingredients
that could go into it. I believe the session ended with
the immortal words how hard can it be?
It transpired that making a top quality gin is actually
very hard. After two years learning the craft of a dis-
tiller, I created a product I was proud to share. When
my family and friends assured me the gin was really
good, I took the terrifying leap to create the frst batch
and Twisted Nose Gin launched in May 2014.
Whats unique about your gin?
My goal was to create a contemporary gin that was
frmly rooted in Hampshire. I substituted the Asian
peppers found in many traditional gins with water-
cress from Alresford, creating a subtle spice and a
fresh greenness to the fnish. Lavender from Long
Barn adds a foral sweetness and the distilled spirit
is brought back down to a palatable strength using
pure spring water from the New Forest. Were truly
a Hampshire product. The complete production pro-
cess is performed in the heart of Winchester in tiny
batches of 50 bottles.
Twisted Nose is a great name. Where did it come
from?
I wanted a name that distanced itself from the typical
Victorian imagery used for gin; something that brought
it frmly into the 21st century for the new generation
of discerning gin drinkers.
The name comes from the watercress we use - Nasturtium in Latin - which loosely translates as
twisted nose, presumably from the physical reaction caused when biting into the peppery herb. I
also have rather a twisted nose myself, the legacy of a schoolboys miscalculation on the sports feld.

Where can we buy it?
Independent wine stores in Winchester, Alresford and Stockbridge, along with a few farm shops
in the region. Its also available to drink in many top restaurants, pubs, and bars in Winchester and
the surrounding villages. The full list is on our website. Winchesters Hotel du Vin has made Twisted
Nose their house gin, using it as a base for
the Winchester Martini - well worth stop-
ping by for! In September, the River Cottage
will be showcasing our gin when they launch
their new Winchester canteen, which is re-
ally exciting.
Are there any new favours in the pipeline?
At the moment our main focus is on in-
creasing production and stockists. We do
have a very spicy watercress and three pep-
per distilled vodka in development; wonder-
ful over ice and makes the most amazing
Bloody Mary. Were also launching a bar
masters blend of our gin for professional
cocktail making, and there are plans for an autumnal sloe gin.
What do you love about your work? Are there challenges?
To see the results of your hard work prominently displayed in shop windows and
on bar shelves is truly uplifting. There isnt a guide book on launching a distillery,
and no matter how much research you do, theres always holes in your knowl-
edge that can only be flled by getting out there and doing it for real. Ive found
the key to managing this is to acknowledge mistakes, learn from them, and move
on without kicking yourself too much in the process.
What do you love about living and working in Hampshire?
Hampshire has amazing local business support networks that have made life
much easier for a fedgling product like mine. I love the diversity of food and the
passion that exudes from the producers Ive met through these networks. All
this plus very knowledgeable and passionate customers, makes Hampshire the
perfect base for our distillery.

2 gelatine leaves
300g white chocolate
500g cream
3 egg yolks
125ml milk
DARK CHOCOLATE MOUSSE
1.5 gelatine leaves
150g dark chocolate
200g cream
3 egg yolks
50g caster sugar
150g milk
Small pinch of salt
CHOCOLATE SOIL
200g of caster sugar
200g of ground almonds
120g of plain four
100g of cocoa powder
135g of butter, melted
SPONGE
225g self-raising four
225g butter at room temp
255g caster sugar
4 eggs
1 tsp of baking powder
SOAKING LIQUOR
50ml of Kirsch
50ml water
50g caster sugar
CHERRY COMPOTE
150g cherries
50g of caster sugar
100ml of water
For the white chocolate mousse: whisk eggs yolks until light and fuffy
for about 5 min, heat the milk on a low heat to about 60 degrees.
Pour the hot milk on the egg mixture stirring at all times, cook on the
stove for 5 min. Be careful not to scramble the eggs. Add gelatine and
chocolate and leave to the side to cool slightly. Whip the cream until
stiff peaks; fold into the chocolate, chill in an airtight container in the
fridge for at least 4 hours until set.
For the dark chocolate mousse: repeat as above then add gelatine, salt
and chocolate, whip the cream until stiff peaks; fold into the chocolate,
chill in an airtight container in the fridge for at least 4 hours until set.
For the cherry compote: place all the ingredients in a heavy-based
saucepan, bring to the boil and simmer until the cherries are soft, re-
move half of the cherries and place the other half and the juice in a
blender and blend until smooth. Pass through a fne sieve then mix the
cherries into the puree, set aside until later.
Mix all the ingredients for the chocolate soil together and spread
evenly on a baking tray lined with parchment paper. Bake at 160C/gas
mark 3 for 20 minutes, stirring every 5 minutes. Once cooked, leave to
cool then store in an airtight container.
For the soaking mixture: heat up the sugar, water and kirsch and stir
until melted, set aside.
Preheat the oven to 180 degrees, mix all the ingredients, pour the
mixture into a non-stick 14 inch (36cm) tin.
Place in the oven till golden brown 15-25 minutes. Poke holes evenly
over on the top of the sponge. Pour over the alcohol mixture, leave to
soak for 20 min then turn out on to a chopping board and leave for
another 20 min. Cut the sponge in long rectangles.
To plate up, place the sponge in the middle of the plate, crumble the
soil over the top then get two spoons and quenelle each mousse and
place it either side of the crumble. Spoon a bit of the cherry compote
over the top and serve.

It was a lovely summers
evening when we pulled up
outside the Hoddington Arms in
the pretty little village of Upton Grey. Soft
lighting, a chilled out soundtrack and the gentle
hum of convivial conversation welcomed us in. Our
hosts for the evening are Alex and Greg, a charming
married couple who took over the pub in November 2013;
the same year it was named Hampshires Pub of the Year. Hailing
from France and New Zealand respectively, theres a nod to international
cuisine on their enticing menu. Moroccan, Spanish, Italian and French infuences
tempt the taste buds with dishes like gazpacho andalouze soup with crme fraiche,
and gnocchi with pea, mint and shaved pecorino.
Theres no beating around the bush with this menu. Simply listed dishes exude confdence in their
ingredients and execution. Theres a good choice of light starters to help hungry diners save room
for the main course and beyond. Locally sourced smoked Fjordling salmon and tricolore salad look
fresh and tempting, but tonight is all about indulgence. Without hesitation I order the crispy pork belly,
Braeburn apple sauce and fennel slaw. The rich, soft pork belly nestles beneath a crispy skin, lifted
by the sweetness of tangy apple sauce. The fennel slaw is a revelation; subtly favoured without an
overpowering taste of aniseed.
My dining companion, Polly, opted for the richly favoured foie gras and chicken liver parfait, served
with a sweet homemade red onion marmalade and crunchy sourdough. Note: earmarked for my next
visit. For our main courses we went big on the meat (apologies to the vegetarians). Polly chose the
homemade beef burger on Alexs recommendation. So often pub burgers can be disappointing, but
this beefy bad boy arrived stacked with British cheese in a top quality bun, ample triple cooked chips
and posh ketchup. Top marks for the rustic wooden board. My Moroccan spiced rump of lamb was
beautifully presented; sliced, juicy, perfectly pink fesh (just how I like it) served with fragrant vegetable
couscous, minted yogurt and a scattering of fresh parsley. There was just enough room for (sharing)
pud. Spongy chocolate pudding arrived laden with salted fudge, ice cream, a scattering of salted caramel
almonds and sweet pickled raspberry; the perfect fnish to an indulgent evening in Upton Grey.
The Hoddington Arms is a place for relaxed dining and great food, with cosy corners for catching up
with friends, and soft candlelight for dinner deux. The rustic chic interior will please the Livingetc
devotees, and with regular events, a new outdoor pizza oven and childrens play area, you can let the

Crondall, marvel at vast felds of wheat, barley, beans,
yes and peas too (an unusual sight). If the sunshine
favours you bask in the coolness of dark woods and
admire the grey blue view of the Ewshot heights.

Distance: 6 miles Time: about 3 hours
Start and fnish: All Saints Church, Crondall.
Park with care in Croft Lane.
TR Turn right TL Turn left SO Straight on FB Footbridge KG Kissing gate
FP Footpath FPS Footpath sign
Take the FP between the churchyard and the village school alongside a brick wall. Emerge from a
hedge and TL for 50m to follow SO bean feld edge. TR at FPS then SO and after 300m through
wire gate TR then in 25m TL and follow feld edge to enter Lee Wood. Take FP on right after 200m.
Go SO with edge of wood and fence on
left past a badger sett. Emerge at corner of
cornfeld and TL at feld edge. Pile of logs
for coffee stop. Continue to road where
TL path in wood parallel to road. At end of
FP TL walk along road to Bentley signpost
where TL. Look for hidden gap in hedge
where road bears right with steps up.
Cross feld on well trodden path to road
where TR a few steps then TL at FPS by
Travers Cottage. Go SO on edge of feld
with oil seed rape pods on right. Well
defned FP bears right to waymark and big
steps down to FPS where TL along deep
set pebble track with high banks to FPS where TR and go SO to end of feld. Enter wood and go
SO over a stile and out of the wood and bear right over a FB. Horsedown Common is on left
with trig point on top. Follow edge of wood on right. Enter open woodland with grass between
the trees and fnd a stile on right 50m after horsebox and barn. TR then TL after a metal gate and
go SO with hedge on right to FPS where TL round feld then TR with feld edge on left then SO
past overgrown pit on left.

Peas, barley and wheat are all around you. Under overhead
cables reach road where TR and follow road to left ignoring
road on right. TL at FPS after a few steps and follow edge
of feld on right to cross a FB and where TL and after 50m
at road junction half TL and across pea feld to reach tennis
courts where pass on right along hedge line to reach a metal
gate. TL to reach your start point.
Bernie says: Disused pits often overgrown or tree
lined are a feature of the landscape and are useful navigation
aids as they are often marked on maps. In the pre-chemical fertiliser age chalk or marl would be dug
out for producing lime or to break up stiff clays. Often neglected now, these pits can be a refuge for
wildlife providing cover and habitat.
