New hire:
Celina McLellan
I worked at Northern Authority - First Nations of
Northern Manitoba Child and Family Services Authority
for 4 years as Admin. Asst.
Previously, I worked at Frontier School Division
(education).
I enjoy working at NCNCFS as Administrative Assistant.
Staff here are very nice to work with (team workers).

Summer Corn Squash Soup:
Ingredients:
2 slices applewood-smoked bacon $
3/4 cup sliced green onions, divided $
1/4 cup chopped celery $
1 pound yellow summer squash, chopped
1 pound frozen white and yellow baby corn kernels, thawed
and divided $
2 1/4 cups 1% low-fat milk, divided $
1 teaspoon chopped fresh thyme
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon salt
1/4 cup (1 ounce) shredded extra-sharp cheddar cheese $
Preparation
Directions:
1. Cook bacon in a large Dutch oven over medium-high
heat until crisp. Remove bacon from pan, reserving 2 teaspoons
drippings in pan. Crumble bacon, and set aside. Add 1/2 cup
onions, celery, and squash to drippings in pan; saut 8 minutes
or until vegetables are tender.
2. Reserve 1 cup corn; set aside. Place the remaining corn
and 1 cup milk in a blender; process until smooth. Add
remaining 1 1/4 cups milk, thyme, 1/2 teaspoon salt, and
pepper to blender; process just until combined. Add pureed
mixture and reserved 1 cup corn to pan. Reduce heat to
medium; cook 5 minutes or until thoroughly heated, stirring
constantly. Stir in 1/8 teaspoon salt. Ladle about 1 1/2 cups
soup into each of 4 bowls; top each serving with about 1
tablespoon bacon, 1 tablespoon remaining onions, and 1
tablespoon cheese.
Easy seasoned chicken:
Ingredients:
1 tablespoon dried parsley, divided
1 tablespoon dried basil, divided
4 skinless, boneless chicken breast halves
4 cloves garlic, thinly sliced
1/2 teaspoon salt
1/2 teaspoon crushed red pepper akes
2 tomatoes, sliced
Directions:
Preheat oven to 350 degrees F (175 degrees C). Coat a 9x13
inch baking dish with cooking spray.
Sprinkle 1 teaspoon parsley and 1 teaspoon basil evenly
over the bottom of the baking dish. Arrange chicken breast
halves in the dish, and sprinkle evenly with garlic slices. In a
small bowl, mix the remaining 2 teaspoons parsley, remaining 2
teaspoons basil, salt, and red pepper; sprinkle over the chicken.
Top with tomato slices.
Bake covered in the preheated oven 25 minutes. Remove
cover, and continue baking 15 minutes, or until chicken juices
run clear.

Annual Community Clean up
Spring cleaning came a
little later this year, but
that didnt stop
hundreds of people
from participating in
the Annual
Community Clean up.
In total, 350 NCN
members grabbed a
bag and kept to keep
the streets looking
beautiful.

The Family and Community Wellness
Centre was established to support
holistic wellness by providing different
opportunities to members of
Nisichawayasihk Cree Nation. The
Centre provides services in Public
Health, Child and Family Services,
Counselling and other family and
community needs programs. It has sub-
ofces in Winnipeg, Brandon,
Thompson and South Indian Lake.
