In a large pot, *sweat the celery, garlic clove,
onion, leek and cut root vegetables in oil over low
heat for 10 minutes. Add the herbs and continue
to sweat for 5 minutes. Add 1 L jar of Angelicos
stock, bring to boil, simmer until vegetables
soften. Remove stems from herbs. Add spices.
Pure with hand blender. Season with salt &
pepper and garnish as desired.
*Te cooking term sweat refers to cooking food over gentle
heat so moisture and juices favour the pan and liquid.
