There are as many versions of this apple cake recipe as there are cooks but we
love this lemony one. Serve with clotted cream.
Serves 8
Takes 25 minutes to make, 1 hour to bake, plus cooling
Ingredients
225g butter, softened, plus extra for greasing
450g Bramley apples
Finely grated zest and juice of 1 lemon
225g caster sugar, plus extra for dredging
3 large eggs
225g self-raising our
2 tsp baking powder
25g ground almonds
1 tbsp demerara sugar
200g clotted cream, to serve, optional
Method: How to make dorset apple cake
1. Preheat the oven to 180C/fan160C/gas 4. Grease a deep 23-24cm
springform cake tin and line with baking paper. Peel, core and cut the
apples into 1cm pieces, and toss with the lemon juice.
2. Using an electric hand whisk, cream together the butter, caster sugar
and lemon zest in a bowl until pale and uffy. Beat in the eggs, 1 at a time,
adding a little our with each addition to keep the mixture smooth.
3. Sift the remaining our and the baking powder into the bowl and fold in

with the ground almonds. Drain the apple pieces well, then stir into the mixture.
4. Spoon into the prepared cake tin, lightly level the top and sprinkle with the demerara sugar. Bake in
the oven for 1 hour or until well-risen, brown and a skewer inserted into the centre of the cake comes
out clean. If the cake starts to look a little too brown, cover with a sheet of baking paper after about 45
minutes.
5. Leave to cool in the tin for 10 minutes. Remove the cake from the tin and place on a serving plate.
Dredge heavily with the extra caster sugar. Cut the cake into generous wedges and serve warm with a
spoonful of clotted cream, if you like.

Wonderful....Absolutely Wonderful....I did quite a survey of apple cake recipes before deciding on
this one.......and took into consideration the comments which really helped, and the outcome was
sublime... Dont hesitate...a moist, light, taseful and yummy cake.. Go for it!!!!!

I have just made this amaizing recipe for the Dorset Apple cake. It came out brilliantly. Thank you.
Didn't have lemons, had limes so used them instead. Not keen on ground almonds so left those
out. Perfect, easy cake recipe :)

I have just made the Dorset Apple Cake - it's still cooling in the tin as we speak! I have made it
before and it's been delicious but I've forgotten to put in the ground almonds so hope it doesn't
detract from the avour too much.

Ok so I made this and it's in the oven.......in the oven yes, still in the tin, alas no!!!! It's pouring like
lava all over the place !!! 23cm tin..check, correct our, check.....hmmmm 450g of apples used
POST peeling and coring, this must be the problem!! Oh well, lets hope what remains in the tin is
as good as you all say it is :)

Brilliant recipe - makes a delicious, soft cake/pud with a crunchy crust. Love it! I omitted the lemon
and added freshly grated nutmeg, which goes well with apple.

Because of the lovely comments so far, I decided to made this cake for the rst time on Sunday
for Church refreshments. It turned out fantastic. Light, uffy and moist. Served it with a side
helping of strawberries and clotted cream. Delicious. Plan to make it again and again. Thank you.

Wow, what a great recipe. I didn't change any ingredients and the taste was great, just loved the
lemony zing. I did nd that it needed longer in the oven but then I did have the temperature a bit
lower (fan oven). I also have to cover the top to prevent burning. Ten minutes is denitely not long
enough for cooling in the tin afterwards. Mine was out in the porch (cold) for over an hour and the
tin was still warm around the sides and too hot on the base. On opening the tin, my mother in law
was very envious as hers had collapsed, mine stayed in shape. We were having a family get
together for my sons birthday and the cake was gone in seconds, everybody loved it. My girls
didn't like the lemon taste so I might leave it out next time. Great recipe, will denitely use it again,
maybe tomorrow!

Made the cake for my wife as she kept on about a cafe in Poole that sells the most delicious apple
cake, mine came a close second still but wil try again. Kept nuts off the recipe and turned out
delicious deantly easy to make even for a man . Have a go

Fantastic and easy - but added more ground almonds and and extra spices - also found cake
needed MUCH longer than stated - did cover top after 45mins though and cake was not at all
sunken in middle and lovely light texture with crunchy top, denately added to my favourites!!

Put wayy to much apple in my cake so it went a bit wet and fell apart :( but still tasted pretty good!
Try it but make sure yours isn't odded with apple chunks like mine lol good luck people!!

I'm going to make this on Sunday for a dinner party on Tuesday. Can anyone give me any tips on
how to keep it fresh until then? Although I did notice below that one comment said it was better
after a day or two so perhaps I'm on to a winner!

This is the most delicious apple cake ever! I have been making it for over a year now and my
(very large) family can't get enough! My partner has a Worcester apple tree and he tends to dump
all his windfalls on me and then looks at me hopefully - so I have to make all these cakes. People
at work love it too and I'm always asked for the recipe. I make it with eating apples and the
sweetness is just right. It's very nice with soured cream as well. I asked my family last week if they
were getting fed up with it and was bombarded with emails to say 'No, carry on!' Well done,
whoever invented this recipe!!

Brilliant recipe! I omitted the lemon and also the ground almonds as i'm allergic to nuts. I added a
teaspoon of cinnamon and found that this worked perfectly with the apples. My cake did sink
slightly in the middle, and all the apples sunk to the bottom :( everyone still thought it delicious
though!!!

Made this cake for my Mum who absolutely loves Dorset Apple cake and it went down a treat. The
cake lasted about 2 days before I had to make another one. It taste better for keeping a day or 2
in the fridge if possible!

though I cooked it at the recommended 160 deg (fan oven) it was too soft in the middle and just
fell apart on cutting. The top and outer edges though were ne and had a crust. I even cooked it
for 10 mins longer as I suspected it was not cooked properly. Tastes so good I will try it again
some time and maybe try a slightly higher temperature or oven shelf.

Great cake!! Love it!! Only things I would change, maybe add a tablespoon of milk as the mixture
is very thick. I also add ground cinammon to the mixture. Very easy recipe and tastes soo good :)

I've made this a couple of times now and it's really great! My mum says it's the best cake I've
made, and she's a VERY picky eater. I found that sprinkling the demerara sugar on top creates a
bit of a crust which you can crack with a knife. If you put the sugar on top it can help with stopping
it from sinking as it cools!

I had apple cake in a little cafe in Bridport about 5 years ago and it was gorgeous. I saw this

Absolutely delicious! Whilst looking for ways to use up my garden apples, I came across this and
what a nd! It was superb! I used eating apples and the cake kept for almost a week. It is just how
a cake should be, light, moist..... I could go on! Just about to make it again now.

Made this for the rst time, delicious. Sent half with my husband to our sons. Their comments
after eating it were fantastic and they're wondering how soon I can make another. Pity son lives so

To answer Jude's comment, I made one and managed to keep it for 4 days. It got a bit 'wet' as the
moisture from the apples seem to spread to the cake. But it was still delicious and would be ne if
you heated it up again in the oven before serving.

What an excellent recipe - just tried if for the rst time and am pleased with the result. I did add a
handful of chopped walnuts to the mix and prior to baking, slung a few more on top with some
demerara.

Great recipe for my and my 3 year old son. We enjoy collecting the apples as much as making the
cake. Didn't have any castor sugar, so used demerara suger instead - lovely fudgey taste :)

I tried this today and I am just so very pleased with myself. It was very easy to follow and the cake
just tastes so delicious. I did put some cinnamon in the mixture though, I thought what's an apple
dessert without cinnamon. Thank you for the recipe. I will denitely be making this again.

Just to let you know this dorset apple cake is my signature dish, My mum will send apples down to
me and my sister and also my mother in law, to bake this I do miss out the almonds, (not got any
in cupboard),,, morish and fab, just made one as I had some eating apples left and needed to use
them up LOVELY!!!

I have made this cake many times and it is always a winner. In my opinion the best apple cake. It
is light, moist, avoursome and with a lovely subtle crunch of sugar on the top. Serve as a anytime
cake or as a dessert with pouring cream or warm with vanilla ice-cream. Yum.

I had a lot of apples given to me. Free off someone nice lady's tree!! Absolutely gorgeous! I made
it with less sugar and a bit of sweetener and I omitted the almonds. I had some hot and some
cold. I must admit, I like it better warmer. I also had it with homemade custard. Let me tell you, I
will be making it again. Yummy!!

Fantastic recipe, I have made it several times now and never know whether to eat it hot or later as
a cold cake.... Am just about to embark on a version using pineapple as a substitute for the main
ingrediant for tonights pudding.
