1: How many of you are a coffee drinker? Ok, Im also a coffee drinker, especially if I have a morning classes. But today, Im not going to talk about different kind of coffee, but about kopi luwak. How many of you have heard of coffee called Kopi Luwak? I hope after my presentation, you guys can still eat during the refreshment.
2: Kopi Luwak or civet coffee is called different names in different countries. These are some of the names variation called in different countries. In Indonesia, its called kopi luwak, in Phillippines, its called by many names Kape Motit, Kape Allamid, Kape Mel and Kape Musang. East timor called it kafe laku. In Vietnam its called C Ph Chn, which is Weasel Coffee in English translation.
3: Kopi Luwak or Civet Coffee is the most expensive coffee in the world. Normal Coffee in Indonesia cost around Rp.15,500 but for Kopi Luwak, the same size cost Rp. 160,000. This means Kopi Luwak is 10X more expansive than the normal coffee. Usually this coffee is enjoyed by people with high buying power. So what makes this coffee to be so expansive and intriguing?
4: Research has identified that a unique chemical in coffee is released through the Asian palm civet (Weasel) droppings. As animal, Weasels are able to choose the most delicious coffee by its smell and taste. After a while, the weasels expelled out the coffee beans together with their waste. The dirty coffee beans were cleaned, dried and roasted. It is then grounded to smooth and enjoyable roasted coffee beans.
5: Asian palm civets digested and destroyed the outer skin of the coffee beans. The coffee fruit pulp is also digested. Therefore, at the time of entry of the colon and small intestine, the beans are still intact and protected. By the time the coffee beans are stored temporarily in the colon, the shell (parchment) protects the meat of the coffee beans which are mixed together with civets feces.
6: At the time of the digestive process occurs over several hours in the large intestine, the Civet issued useful enzymes during digestion and fermentation process of the coffee beans also takes place at the same time. That's why coffee beans fermented by Civet have a distinctive fragrance that cannot be replaced by the process of making coffee by machine.
This also brings clarity to see why the taste of civet coffee is more remarkable than regular coffee, since it has passed through the stomach and mixed with civet feces.
