days are getting shorter, but rest assured that our

roy, hallmark of our Sunday Brunches, welcomes
guests with themes typical for the time of year in
the Brasserie & Atrium restaurant.
the fruit of the autumn vintage has ripened, new
wines are now available, and they provide the
perfect accompaniment to our goose feast on St.
martins day. le Bar refuses to be excluded from
the fun, so it is preparing for the celebration with
a really special trio. After this, lovers of game,
mushrooms and forest fruits can sample dishes of
the season and get to know more about the
secrets and excitement of the hunt. the beverages
offer includes hungarian specialties such as
hubertus and Unicum, which have a heartwarming effect on damp autumnal days. then,
theres the chance to practice throwing for the
bulls eye in a darts competition. towards the
middle of the month the focus is on an overseas
festival, thanksgiving, coming in the wake of the
traditional autumn harvests. the final Sunday in
the month is the first Sunday in Advent, when we
hold a Christmas tree lighting Brunch.
once again, this months edition includes an
interview with another of our long-serving staff
members, one many of you may already have met
since Kriszta from Guest relations spends her
entire day among our guests.
Pter from our kitchen shares another excellent
recipe characteristic for the season, and Executive
Pastry Chef Attila makes sure there is the perfect
dessert to accompany it.

in tune with the festive season, they have a

Chapter 2
> After its opening, the royal became a popular,
regular haunt of contemporary hungarian writers and
journalists, including Jen heltay, Sndor hunyadi, lajos
Nagy, and Gyula Krdy. the royal soon became a
favorite topic of journalists. the first screening in
Budapest of a motion picture by the lumire brothers
also took place at the hotel and later became highly
successful as a regular exhibition. in 1909, the first
hungarian airplane was exhibited at the hotels cour
dhonneur. Several classical concerts were held in
royals Ballroom, and Bla Bartk, the world famous
hungarian composer, frequently conducted music
there. from the very beginning this magnificent room
hosted a number of elegant balls. With the growing
popularity of the motion picture, the Ballroom ceased
to exist as a part of the hotel when it was
reconstructed as the royal Apollo cinema and after the
Second World War it reopened its doors as the red
Star cinema with its entrance on hrsfa Street in 1959.
Actually the operation of this cinema even survived the
operation of the old royal, which was closed in 1991.
After years of decline, the Ballrooms legend was
reborn in 2002 when the whole property was
reconstructed and even this room was restored to its
original state. it was laid with italian limestone and
Spanish marble, framed by the expertise of hungarian
craftsmen: their fabulous plaster work puts the final
touch on the hotel and their gilded scrolls elevate the
beauty of the Grand Ballroom. from the Second World

How long have you worked at the hotel?
i started in the royal Spa as a trainee on 2 february 2009.
Which areas have you worked in, and where are you now?
i spent virtually all of my six-month college work practice in the Spa, and then i
remained there for another year in the post of Spa receptionist. in June 2010, i moved
across to the front office Guest relations section, where i have been a supervisor
since 2012.

War until 1953 the royal served not as a hotel, but as an


office building. in 1953 the building was restored into a
hotel, but three years later the roof was destroyed by
fire. this unfortunate event forced the architects to
reconstruct the whole building in 1956. the royal was
intended to be a hotel representative of the age, since
none of todays hotels on the danube bank had been
established yet. istvn Janky, architect of the
reconstruction, reconsidered the buildings interior as
the space idealism of his age. today, no remains of the
original interior can be found. the demolition and
reconstruction in 1956 destroyed every trace. in 1961 the
royal was re-opened as a hotel, with 367 guest rooms.
over the years the hotel became obsolete and finally,
it was closed in the autumn of 1991, although the
cinema remained in use until the autumn of 1997. the
original visitors book contains the signatures of some
of the most important people from around the world.
Just a few examples are max reinhardt, Asta Nilsen,
Saljapin, Valdemar Psylander, Professor Barnard,
roberto Benzi, mario del monaco, Anna moffo, renata
Scotto, Elisabeth Schwarzkopf, Amerigo tot, Valentina
tereskova. this year the restored and rebuilt Grand
hotel royal celebrates the 10th anniversary of its
reopening on April 30, 2003 as the Corinthia hotel.
Several additional historical periods and chapters will
be presented to the readers in the coming issues to
commemorate this magnificent hotel.

making this the third year
we have taken part in the
event. Entries were
accepted for three
sports: soccer, basketball
and table tennis. the
program was organized
in telki Globall Sport
hotel on Saturday 20
September. it was an
early start for all as the
somewhat sleepy looking
sportsmen and women
gathered at the hotels
staff entrance at 7 am.
our departure turned
out to be slightly
exciting since we forgot
one of the top players in
our basketball team

(because he overslept!
Sorry, mt!). the
setting and the hotel
itself were beautiful and
we all gave our best to
get into the top teams.
our football team
managed the best results
of the past three years
and finished the
tournament undefeated.
the team didnt come up
against a stronger side
but still overall the
players were
disappointed because
they could have
progressed into the final,
yet at critical moments
they only managed
draws instead of wins.
the most painful was the
first group match against
dhl, where our team

What are your duties?


my duties include, first and foremost, ensuring that ViP guests have a completely
trouble-free arrival, stay with us and travel, sharing information on them with the
various sections, and arranging as well as checking that everything is prepared correctly
in their rooms. Besides this, as i often say, anything else that needs doing. for
instance, we organize the special requests of guests and arrange birthday and
anniversary surprises. We also provide the other front office sections with
considerable help, which means that we have to know all about the duties of
reception and the concierge service. occasionally we stage views of
the hotel and assist other sections in choosing the rooms to be
presented. We are also responsible for delivery of room
accoutrements ordered for groups.
What was your happiest experience in relation to the hotel (if there was such)?
Naturally there were many. i well remember a very nice Spanish family that i helped a
lot in finding out what to do here in Budapest, suggesting programs and museums they
might be interested in. At the end of their holiday they were very grateful, they asked
for me by name and they gave me a small gift from the museum of fine Arts, which i
had recommended they visit to see an exhibition on Spanish painters.
What do you enjoy doing in your spare time?
i really like to get out into the open air. if there is time, i go touring, have garden parties
and recently i started running. in fact, another favourite memory of mine is associated
with this and the hotel, in that last year and again this year an excellent Corinthia
running team was organized. Not long ago, i also started singing in a chorus.
What is your favorite food and drink?
Unfortunately, i love pasta dishes and fine wines.
Do you have a favourite travel destination in Hungary and abroad?
Given my job, when i travel, i prefer quieter places since things are extremely busy
during working hours. in hungary, i love taking excursions in the Brzsny and Bakony.
Abroad, my greatest wish is one day to get to South America, say Peru or Chile.

Boil the milk with the lavender and


let it stand for 10 minutes. filter the
mixture. then, dilute the mixture to
1 liter and make a cream. When it is
ready, add the soaked gelatin sheets
and stir until it cools down. then
stir in the whipped cream.

> the US and Canada national holiday is a time for friends
and family to get together and celebrate. Corinthia hotel
Budapest is laying on a magnificent spread complete with all
the trimmings: roast turkey, stuffing, potatoes, cranberry
sauce, sparkling wine (ladled from pumpkins), and fruit
desserts from the royal Pastry. A scarecrow is set up at the
door of the restaurant and on entering guests come across a
massive plate of fruit and vegetables. the delicious aroma
of roasting chestnuts will fill the air.

tsp. vanilla | 2 tbsp. water | 6 egg
whites (stiffly beaten)

Beat egg yolks with sugar. Add


flavoring and water and keep beating
until light and creamy. then, fold in
the flour and stiffly beaten egg
whites by hand. mix lightly and pour
into a buttered and floured pan.
Bake in 350 degree oven until golden
color, about 30 minutes in 11x15 inch
pan. then roll as for jelly roll.

Vanilla or almond flavoring
Cook milk with vanilla or almond
flavoring, on low flame, stirring so as
not to burn. When cold add 150 g
sweet butter and mix well. fill and
roll dough. Cover with powdered
sugar or melted chocolate.

ANISE, JUNIPER AND COFFEE


CRUSTED VENISON LOIN
iNGrEdiENtS

garlic, lightly crushed

1 kg whole venison loin

ground | 1 pc large sprig
rosemary | 2
tablespoons ground
coffee | 1 teaspoon

0.4 liter cup of red wine


| 0.25 liter coffee | 10

lightly crushed | 4 sprigs
thyme | 2 cloves of

regular salt | freshly


ground black pepper for
seasoning

SAUCE
1 teaspoon beef base |
2 teaspoons arrowroot
| reserved marinade

PrEPArAtioN:
Preheat the oven to 180C, trim all the silver skin from the loin, in a container add all
the marinade ingredients and the venison. marinate the meat for at least 12 hours.
remove the loin from the marinade and pat dry (reserve the marinade). mix the
rub ingredients together, and spread evenly over the loin, covering all parts.
heat oil and butter in a heavy pan over medium high heat. Sear the loin on
each side, approximately 2 minutes each side, until a nice crust is formed.
Place the pan and tenderloin in the oven and roast about 15 to 20 minutes
for medium (cook longer if you like your meat more well done).
remove the loin to a plate and let rest. Place the pan on a burner set for a
medium heat. Add the marinade to the pan let the sauce simmer until it is
reduced by half. Add the beef base. mix the arrowroot with a little bit of
water, enough to make a slurry. Whisk in the arrowroot slurry until well
blended. Bring to a boil, boil for 1 minute whisking frequently, then reduce
heat and continue to cook until desired consistency is achieved. Strain the
sauce through a fine mesh sieve.
Serve the venison with pressed truffle & potato terrine, chestnut cream
and shimeji mushroom jus.

Golden Age, a large-scale
exhibition to run in the
museum of fine Arts from
october 31 surveys the
period of 17th-century dutch
art, one of the golden ages
of European culture.

the exhibition is built around rembrandt, the greatest master of the period, by whom 20
masterpieces will be on display. the exhibition will showcase over 170 works by some 100
painters, of which 40 originate from the museum of fine Arts rich dutch collection and 130
paintings will be contributed by private and public collections, with the most important loaning
institutions including the rijksmuseum in Amsterdam, the National museum in Stockholm, the
louvre in Paris, the National Gallery in london, the Getty museum in los Angeles, the
metropolitan in New york, the Uffizi in florence and the Prado in madrid. A further sensation
of the exhibition is that in addition to the significant number of works by rembrandt
including the painting known as his earliest and his last self-portrait visitors can also view
three works by Vermeer.

their works. A place where design meets urban hungarians, tourists
