THE ORIGINS OF THE VALLA DRYER
The Valla Dryer was invented and patented by Mr. Valla Mauro, owner of the company, which is located in the center
of a popular, touristic town, in the heart of Valle del Taro: Borgotaro, home of the well-known mushrooms,
particularly called Boletus edulis.
Just from the experience of the local culture about mushrooms, together with the needs of mushroom-pickers and
the local restaurants arose the need to dry a huge quantity of mushrooms, which gave the birth to the patent, that
later has been proved to be very useful in many occasions... even customers themselves, reported to Mr. Valla about
new applications he could apply. Some of them were able to dry more than over 10 kg of mushrooms at a time,
reaching about 30 kg in 24 hours using continuously that single device.

instructions for use:
Wash thoroughly before using the baskets with a degreaser for dishes and dry, repeat if necessary after use,
they can be washed in the dishwasher, too.
It is recommended to store the equipment in a dry and hygienic place, for example in a kitchen cabinet.
Before inserting the plug into a power outlet, verify that the installation complies with the equipment and read
the safety rules.
Prepare fruit and vegetables, cut in half by resting them with the peel in contact with the net of the basket.
Arrange the products uniformly on the net of the basket without superimposing.
Valla Food Dryer is equipped with a switch of 3 different temperatures:
(cold / environment to position 1; warm 35 c - 250 W to position 2, hot-475 W at 3 o'clock position, setting
the thermostat to 65 )
IMPORTANT SAFETY:
When you use Valla Food Dryer it is necessary to adopt some important safety precautions:

DRYING TIMES - TIPS times are approximate, since they depend on the thickness of the food and the degree of humidity
Mushrooms
Clean the mushrooms gently and thoroughly, cut into slices of 5-10 mm
Time required: 6-8 hours, but not less than 6 hours, for a correct conservation (ca 2 hours on temperature 3, then
proceed on temperature 2)
NOTE: After the first 2 hours in 2 baskets below the mushrooms will be reduced leaving too much space between
the slices, then you can gather them all in one basket and place it at the base of the column, if you add new
mushrooms to dry, consider putting them on top of the column.
It is recommended that the mushrooms are completely dehydrated, in case of doubt, leave 1 hour more.
You may also want to try lottima mushroom powder to flavor, in oder to taste the dishes: just finely grind the dried
mushrooms.
Chestnuts
place the entire chestnut onto the baskets
Time required: 4 days (permanent on temperature 3) compared to 30 days with the traditional method
Tomatoes
wash them entirely, cut in half, remove the seeds and liquid, dispose them on the side of the peel
Time required: 15-18 hours (on temperature 3)
Peppers - peroni
wash them entirely, dry , cut in half, remove the seeds , dispose them on the side of the peel
Time required: 10-12 hours (on temperature 3
Figs
wash them and dispose them entirely
Time required: at least 24-28 hours (depending on the size and juiciness of the fruit)
Apples - Pears
wash them entirely, cut into slices after having removed the core
Time required: 8-10 hours
Plums - Apricots
wash them entirely, cut in half, remove the core and dispose them on the side of the peel
Time required: 8-10 hours (permanent the temperature 3)
Aromatic herbs
wash them entirely, dry in a cloth and then dispose them on the baskets, then if you want, pulverizing them and store
in glass jars
Time required: generally 15-18 hours (on temperature 2)

Pollen

choose fresh roses , place the stems on the grid put, to support the base of the buds, in oder to avoid squeezing
them , the colors are preserved
Time required: 2 days (on temperature 1) and 1 day on the temperature 2
