Makes 8 rolls
2 1/2 ts dried active yeast
300 ml warmed water
1 ts sugar (caster sugar)
500 gr strong white flour
125 gr wholemeal flour
1 ts each dried mint & oregano (I didn't add them..)
1 1/2 ts sea salt + extra to sprinkle
3 TB extra virgin olive oil +extra to drizzle
175 gr kalamata olives,pitted [I didn't have kalamata olives :-( ]

1.Dissolve the yeast in the warmed water,stir in sugar and
leave to froth in a warm place for 10 minutes.
2. Sift the flour into the bowl of a mixer,stir in the herbs and
salt. gradually work in the frothed yeast mixture and oil to
form a soft dough, adding a little extra warm water, if
necessary. knead for 8-10 minutes until the dough is smooth
and elastic.
3. Finely chop 25 gr of the pitted olives and slice the rest.(I
didn't do this ..), transfer the dough to a lightly floured
surface and work in the chopped olives . shape into a ball,
place in an oiled bowl,cover and leave to rise for 1 hour until
doubled in size.
4. Knock back the dough, divide into 8 and shape each one into
a flat round.
place a spoonful of the remaining olives in the center of the
dough,pull up and pinch the edges together to seal and shape
into rolls.
5. Place the rolls seam side down on a baking sheet, cover and
leave for 35-45 minutes (1 hour..), until doubled in size.drizzle
the rolls with a little oil,sprinkle over some sea salt and bake
in a preheated oven- 220C (425F), for 20-25 minutes, until
risen and golden.cool on a wire rack.

Full Recipe:
Farmhouse White Bread
Tried and tested....
750g unbleached white bread flour
(I use Doves Farm) 2 tsp fine sea salt
30g unsalted butter, diced 2tsp
caster sugar 10g (1 1/2 sachets)
easyblend/instant yeast (NOT dryactive) 450ml lukewarm water
1kg loaf tin, greased
Gently warm the flour before you
start. Leave it in a low oven for a
few minutes, or in the microwave
for 15 seconds.
Mix the salt with the flour and rub
in the butter gently until the
mixture resembles fine crumbs. Stir
in the sugar and yeast well. Make a
well in the flour and pour in approx
3/4 of the liquid. Using a wooden
spoon, start mixing in the flour. Add
the rest of the water if necessary.
The mixture should be a soft but not
sticky dough. If the dough seems dry
or there are crumbs at the bottom
of the bowl then add a little more
warm water.
Turn the dough out onto a lightly
floured surface - don't worry if it
looks a horrible mess at this point.
Using lightly floured hands, knead
for approx 5 minutes. The dough
will feel firmer, very smooth and
pliable. Return the dough to the
mixing bowl (wash it out and lightly
oil), cover with clingfilm and leave
to rise in a warm place for about
one hour until doubled in size.
Remove the dough from the bowl
and knead gently on a lightly

floured surface to expel all the overlarge bubbles of air. Using plenty of
flour on your hands and the work
surface, flatten the dough to a
rectangle with the short end the
same width as the tin. Roll up
tightly (from the short end) and
place in the prepared tin, seam side
down. Lightly dust with flour. Cover
the tin with clingfilm (leaving
enough room for rising) or place in a
large food-grade plastic bag. Leave
to rise until almost-doubled in size.
Do not let the dough rise any
further or it may collapse in the
oven. (This will take about 40-60
minutes depending on the heat in
the kitchen and the vigour of the
yeast.)
Towards the end of the rising time,
preheat the oven to 230C/450F/
Gas8.
Remove the clingfilm (or take tin
from bag) and bake for 30-35
minutes until the bread is a dark
golden brown and sounds hollow
when turned out and gently rapped
underneath. Return the turned out
bread to the oven, placing it
directly on the shelf, and bake for a
further 5-10 minutes until the crust
is really crisp all over. Cool on a
wire rack before slicing.

INGREDIENTS
Sponge Starter (Begin 2 to 16 hours ahead)
1 cup cool-lukewarm water, preferably spring water (90 to 100
F)
1/2 teaspoon active dry or instant yeast
1 1/4 cups King Arthur Unbleached Special Bread Flour
1/4 cup King Arthur 100% White Whole Wheat or Traditional
Whole Wheat Flour
Dough
All of the sponge starter (above)
1 cup lukewarm water, preferably spring water (l00 to 115F)
3/4 teaspoon active dry or 1/2 teaspoon instant yeast
1 tablespoon sugar
3 3/4 to 4 cups King Arthur Unbleached Special Bread Flour
1 tablespoon kosher salt
INSTRUCTIONS
To Make The Sponge: Stir all of the sponge ingredients together
to make a thick, pudding-like mixture. Cover with plastic wrap
and leave on a counter overnight or for at least 2 to 4 hours.

as I said we love them all,the list is long.. and I bake those again and
again. I was busy with reading cookbooks , looking for some new Bread
recipe, something special , and you know what ?? I've found.. maybe 10
or 20 or more recipes which look SO good.But during my day outside
today, I've decided to bake the most famous Israeli Bread (yes I know not
in Isarel only), PITA BREAD .You can't find even 1 Israeli which has no
Pita's in his freezer.. you can eat Pita Bread with salty or sweet food..
you can find Pita Bread everywhere, and It's very easy to bake them.Once
I've tried Elie Nassar's (Foodman) Pita Bread recipe ,I think It's a great
recipe (And all the other in his Introduction To Lebanese Cuisine should
be wonderful too) .2 years ago , It was October 2004.. I've baked his
Pita's and wrote about it in Ort Food forum, It was funny to get those Pita
pockets.Somebody from that Forum wrote Elie in egullet Forum about
me..baking his 5 Pita's with the pockets..It was a success, and today I've
baked Pita's again. Here is the recipe, try them , and please let me know
about the pockets..

That green spice mix is called:
Zaatar,It's a Middle Eastern Spice Mix .It's made
of ground spices like :sesame seeds,thyme,
oregano, marjoram and salt.I buy it here in Israel,
and I can send you one.
The cheese besides is Labane, which is a white
and 'sour' cheese (we love this one very much) ;)

750 gr all-purpose
[ AP] flour
1/2 cup fried onion
1 ts salt
1 TB dry yeast (or 30 gr
1/2 ts sugar
1 1/2 +1/4 cup warm water

1 small onion
sesame seeds
fresh yeast)
________________________
Mix flour, fried onion and salt.
Dissolve yeast+sugar+1/3 or 1/2 cup of the water ,cover
and leave for 5 minutes or until frothy.
Put the flour mixture in the mixer bowl (or mix it by
hand), make a hole in the center ,and add the yeast
mixture and the rest of the water, knead dough until
smooth and elastic, 5- 10 minutes. (you can add more
water/flour as needed)
Place dough in a large oiled bowl, cover and leave in a
warm place for 1 to 1 1/2 hours - until well risen and
doubled in size.
Knead the dough again,form a round ball.
Slice an small onion to thin slices.
Sprinkle sesame seeds and the onion cuts on a big surface,
roll the loaf in it..
Let the bread rise again , for an hour or more (until
doubled in size)on the baking dish [yes, yes.. that big
dish..].

Reduce the heat to 170C and bake for more 20-25
minutes .

We love those small rolls- rosemary rolls from tuscany, the recipe is from this
magazine 2-3/2004
[Another Recipe is -Here =Pan Di Ramerino - Rosemary Buns]
1 ts activ dry yeast
1 ts salt (or 1/2 ts)
1 ts plus 3 TB extra-virgin oil,divided
1 3/4 cups bread flour
1 spring rosemary
2 TB raisins, soaked in hot water for 10 minutes and drained

In a large bowl,combine 3/4 cup luke-warm water,yeast,salt and 1 ts of olive
oil.set aside for 10 minutes,then add the flour.
Mix by hand until the dough gathers into a mass. Turn it out onto a floured
work surface,and knead for a few minutes.Place the dough in an oiled bowl,
cover and let rise in a warm place for 45 minutes.
After it has risen,place the dough on a floured work surface.In a small
saucepan,warm 3 TB of olive oil and the rosemary.Make a large indentation
in the center of the dough. Remove the rosemary from the oil,and pour the
oil into the indentation.Knead the dough just until the oil is incorporated.
Form the dough into a ball,place it in an oiled bowl,Cover and place it in a
warm place to rise for 1 hour.
Preheat oven to 400F (200C),Add the raisins to the risen dough,knead them
in.Form the dough intosmall rolls (8-12).Place them on baking sheets,cover,
allow to rise in a warm place for 35-40 minutes.

1. Combine the yeast and half the warm water.Let stand for 10 minutes until
foamy (I add =1/4 ts sugar)
2. Sift 1 cup of flour and the salt.Make a well in the center of the flour.Add
the remaining warm water,the cold water,and the oil to the yeast mixture,
then pour the liquid into the well.
3.Gradually stir the flour into the liquid until it is absorbed.sift in another 2
cups of flour.(I mix it in the Mixer..),When dough becomes too stiff to stir,
shape it into a ball, (the dough will be elastic).
4. Use the palms of your hands to stretch it to a thickness of 1/2in and form
it into a circle or a rectangle.
5.Transfer the focaccia to an oiled baking sheet,cover and let rise for 30
minutes.
6.Mark the focaccia= using your fingers,make indentations all over the
focaccia base,creating little dimples to trap olive oil.Cover and let rise until
doubled,about 1 hour.
7. Preheat the oven to 400F (200c).
8. Brush the focaccia with oil,sprinkle with rosemary (or marjoram or black
olives)and spinkle with more olive oil if you wish..
9. Bake in the preheated oven until the edges are golden ,20-25 minutes.Let
cool for 5 minutes before cutting. Serve hot or warm.

I've baked some Focaccia recipes(I'll bring some
more later), this one is easy,and I think nice too,I'm
sure your focaccia was fine without holes ;)
The rolls are realy good, I think less salt (as I wrote)
will be better, some are thinking those rools are
sweet.. but they are not.

Bread and we'll see...just wait.. :-) Ok.. I'm back: This
Bread is rich in flavor and Very rich in smell ( buttery
smell ) and Realy very tasty ! Oh, I'm very happy !

7 gr dried yeast (=2 ts)
1 ts sugar
3 cups plain flour
1 cup wholmeal plain flour
1 ts salt
water
________________________
1.Mix the yeast,sugar and 1/2 cup (=125 ml) of warm
water in a bowl.cover and set aside in a warm place for 10
minutes, or until foamy.
2.Sift the flours and salt, make a well in the center. (I did
this in the Mixer bowl), pour in 1 cup (=250 ml) of extra
warm water and the foamy yeast. mix to a soft dough and
gather into a ball.knead for 10 minutes or until smooth (by
mixer..)
3.Place in a large, lightly oiled bowl,cover , and leave in a
warm place for 1 hour, or until doubled in size.
4. Punch down the dough and knead for 1 minute. press
into a large, oval shape 2 cm thick. Lay on a large, floured
baking tray, cover and leave to rise for 20 minutes (I gave
it more time to rise..)
Preheat the oven to 210C (415F).
5.Bake for 35 minutes, or until crisp (after 15 minutes
spray with water to make the crust crispy- I didn't do
this..)

don't think
you can buy
any here, in
Israel, but
'talking' about
this kind of
Bread in one
of the Israeli
food forums
made me very
curious.. I
couldn't wait
to find stones... but which one? someone gave me an advise to use the
same natural stones you can find near the sea or somewhere in the
negev.. or to buy some , in the same place you buy your flowerpots /
seedling .. so I received there stones and now I have some new flowers
around.. I've washed the stones, boiled them..to be sure they are clean
for baking the Farina Bread.This recipes is very easy, let the dough rise

time after time ..you'll get 4 breads ,larger then pita bread, just let you
know :not all farin's have holes in... please be careful with the stones,
they become very very hot in the hot oven, and they're still very warm
long time after it.another thing to remember :you can't bake with any
stone, one stone in my oven was broken, whill baking.. :-( maybe this
stone was another sort of stone ,not like the other pebbles. OK, now,
what about the Farina taste?... all those stones around and under gave
the Bread a very nice shape, please take a look at the bottoms.We like
the Farina, eating every piece with olive oil or without nothing else...

Thank you, this Farina Bread is realy good, the
outside is crispy, and inside is soft, but not too
soft, I've baked the bread with AP flour, not with
bread flour, do you think it will make any
difference with bread flour?
I have to thank you one more time !- I wasn't
sure the holes are Ok..I was thinking something is

Chanit,
I'm sure I've said it before and I'll say it
again...I love your food photos, they
always get my appetite going! But the
one photo that really caught my eye
was that pink/green pomegranate/kiwi
ice cream!! What a lovely combination
of flavors and it gives me an idea to try
those flavors together one day.

I think above recipe is very good, it has
some butter taste, and you can fill it as

Makes 6 naan
- 2 teaspoons dry yeast
- cup warm water (about 110 degrees)
- 1 cup cold plain whole-milk yogurt
- 1 cup boiling water
- 3- cups all-purpose flour
- 2 cups whole wheat flour
- 2 tablespoons corn or safflower oil
- 2 teaspoons salt
- 6 tablespoons sesame seeds
1. Sprinkle yeast over warm water in a large bowl. Stir to
dissolve. Place yogurt in a medium bowl and gradually stir in
boiling water. Let cool to tepid (105 to 115 degrees).

For the bread:
1 1/2 cups flour
1 teaspoon salt
1 cup sugar (or 1/4 cup less as I did..)
Grated peel of 1 lemon
1 tablespoon baking powder
1/2 cup whole milk
2 large eggs, beaten
1/2 cup melted butter or stick margarine
For the glaze:
Juice of 1 large lemon
1/4 to 1/3 cup sugar
To prepare bread: Preheat oven to 350 degrees. Mix flour, salt,
sugar, lemon peel and baking powder in a bowl.

A light and tender bread, suitable both for breakfast and afternoon tea..
Ingredients:
300 ml milk
25 g yeast (12 g if dry)
1 egg yolk
1 tsp salt
ca 600 g white flour
1 egg white for brushing
100 ml poppy seed
Method:
Heat the milk to lukewarm and mix in yeast, egg yolk .. Full

the livebait cookbook
TB yeast (dry)
ts sugar
1/2 cups lukewarm water
1/2 cups flour (I use AP flour)
TB salt

2 ts poppy seed
_____________________
1.Dissolve the yeast with the sugar in a little of the water (I use
1/2 cup of the water for this),
and wait until it is frothy.
2. Mix the flour + salt on a work surface.
3. Make a well in the center of the heap. add the rest of the
water to the yeast mixture, draw the flour together by pouring
the liquid into the middle, and making a dough by hand. [yes I
did it by hand !]
4. Knead for 7-8 minutes... the doughwill no feel sticky.
5. Oil a bowl and put the dough into it, cover and let rise for
hour or two (I think 1 hour is good)
6. When the dough has doubled in size, return it to the work
surface and knead until you have knocked the puffiness out of it.

GRANDMA'S
WHITE BREAD
2 packages dry yeast
3/4 cup warm water
(105 to 115 degrees)
2 tablespoons sugar
1 1/4 cups milk
1/4 cup butter
(unsalted)
1 tablespoon salt
5 cups bread flour (approximately)
Melted butter for brushing
In a large bowl, dissolve yeast in warm water. Add sugar. Let
set for 3 minutes until a layer of foam covers surface.
Heat milk, butter and salt to 110 degrees and add to yeast
mixture.
Add half the flour and mix with a wooden spoon or heavy wire
whisk for 2 minutes.

1 1/2 ts sugar
---------1 kg bread flour (or all-purpose flour )
2 1/2 cups warm water (+ 1/4 cup if you need)
---------2 ts salt
---------sesame seeds
---------In a small bowl, dissolve the sugar + 1/3 cup of water and
the yeast,let it stand for 10 minutes ( until it gets frothy).
Using an electric mixer ,mix:
Flour,yeast mixture and 2 1/2 (or 2 3/4) cups of warm
water.
Slowly beat for 10 minutes.
Place the dough in a greased bowl, Cover ,allow it to rise
for 1 hour( until the dough has doubled) .
After rising, punch the dough down add the salt and knead
it several times.
Divide the dough into 10 pieces ,and make 10 balls.. let
them rest for 5 minutes.
To shape the Bagels:
Take every ball,make a hole through the middle with a
finger and then pulling at the dough around the hole to
make the bagel .
You should know :Not every bagels will be perfectly
shaped .. :-)
Take 2 bowels: One with water, the other with sesame
seeds .
Soak every Bagel in the water,then give it in the sesame
seeds bowl.
Place the bagels apart on a baking sheet. Let them rise for
30 minutes.
In the meantime,preheat the oven to 250C (500F).
Bake the Bagles 10 minutes in turbo* heat oven.

Ingredients :
1 cup lukewarm potato water (This is essentially the water left over from
boiling potatoes. Covered, this will refrigerate for up to 3 days or frozen
for up to 4 months. You can also dissolve 1 tablespoons of potato flour
in 1 cup of lukewarm water, but I havent tried this.)
1 envelope of yeast
1 tablespoon beaten egg
3 tablespoons canola oil
1 tablespoon malt syrup
~3 cups all-purpose flour
2 tbsp granulated sugar
1 teaspoon Kosher salt
Poaching Liquid
16 cups water
1/3 cup honey
Glaze
1 egg yolk
1 tablespoon water
poppy or sesame seeds
In a large bowl, dissolve 1 tablespoon of granulated sugar into the
lukewarm potato water.
Sprinkle the yeast on top and let it stand for 10 minutes or until it gets
frothy.
Stir the tablespoon of beaten egg, canola oil and malt syrup into the
yeast/water mixture.

chanit,
in montreal we are famous for our bagels. they
are VERY different from other kinds because they
are chewier and sweeter. others tend to taste like
baked bread only round with a hole in the middle.
we do not like those here and called them
"american style bagels" though there are people
who like those.
they are made the way you did with boiling water
and honey. we have bagel factories which run 24
hours a day! people actually go and buy them in
the middle of the night for the perfect "nosh". we

I've never visited Greece but I told Ran today I would like to.. Koulouria
[page 53 Here/a PDF Book]-Those realy wonderful sesame rings are
known in Greece as a street Food , and you can find them in towns, all
over Greece. As written in Culinaria Greece Where I've found this tasty
recipe (I've made very small changes from the original recipe from this
great Cookbook) ".The koulouri is more then just a sesame ring,however.
The koulourds (the sesame ring seller) belive that it is what unites the
Greek people,and he should know"
" the aroma of fresh,warm koulouria in the early evening was enough to
make people think of better days" You know what ? I ate 2 of them, but
I could eat more, without nothing,, It's not salty , not too sweet, It's even
not like the Arabic sesame Bagels which are more like buns or rolls, couse
you can fill them with goodies..and are very good too. But I'll try filling
those too.. I'm not sure this Cookbook is very popular in Israel, don't ask
me why, maybe Israeli gourmets prefer cookbooks in Hebrew..I don't..
and I realy love this cookbook !
It's very easy, but you have to make the yeast mixture (250 ml water+3/4
tsp dry yeast+ 3 TB flour) 24 hours ahead, the next day you can make the
Koulouri dough and bake them.. this recipe is for 20 rings.Again I realy
hope you'll like this recipe as we do. I think It can be a nice gift too.
Koulouria/ based on Culinaria Greece
3/4 tsp+ 3/4 tsp dried yeast (1 1/2 tsp at all)
850 gr Ap flour
2 tsp salt
1/2 cup (=100 gr) sugar
4 TB (=50 ml) oil (not olive oil)
Sesame seeds (200-300gr)
Dissolve 3/4 tsp dry yeast in 250 ml warm water and mix in 3 TB of flour.
Leave the rising yeast to stand for 24 hours.Next day,mix 3/4 tsp of dry
yeast with another 250 ml warm water,add 3 TB flour and leave to stand
for about 15 minutes.
Sift 750 gr AP flour into a bowl with the salt,then make a well in the
center. Pour the sugar, oil and the 2 lots of rising yeast into this and
knead slowly until the mixture form a dough,add 100gr flour to make the
dough.cover the bowl and leave to prove until it has doubled in size (1
hour) .Then knock it back and knead for another 5 minutes.pull of small
lumps of dough (about 70-80 gr- you get 19-20 )and roll them into thin
sausage shape, about 14 in =35 cm in length.
Dip these in water and roll them in sesame seeds before pressing the 2
ends firmly together into a ring.
Preheat the oven to 430 F(220C), lay the sesame rings on a baking sheet
and bake for 15 minutes, until golden on the outside .Eat warm or cold...

These 'Soft Pretzels' are more like buns, not salty not sweet.. I've
refrigerate the dough for 6 hours,it's nice to make them..I think next
time they will be more nicer , Now I have 32 Pretzels ..too much..anyway

dry yeast
2 C warm
water (105 to
115 degrees)
1/2 C sugar
1/4 C butter
1 egg
2 tsp salt
6-1/2 to 7 C
all-purpose flour
1 egg yolk
2 TBS water
coarse salt
Instructions:
In a large bowl, dissolve yeast in 2 C warm water. Add sugar, butter, egg,
salt and 3 C flour. Beat until smooth. Stir in enough additional flour to
form a stiff dough. Cover tightly with foil and refrigerate 2 to 24 hours.

Ingredients:
"Lavash is
light, crusty
and the
oldest known
bread in the
Middle East.
Since it keeps
well for long
periods of
time, it is
baked only
once every few months, in a tanour or bread oven. Then it is wrapped in
clean cloths and eaten as needed. A simplified recipe is given here. "
1 package yeast
1/2 cup warm water
5 cups all-purpose flour [+1 1/2 cups..]
1 teaspoon sugar (yes not salt..)
1/2 cup melted butter
2 cups milk
2 tablespoons poppy or sesame seeds, (optional)
Instructions:1. Dissolve the yeast in a bowl of warm water; add 1
tablespoon four and 1 teaspoon salt. Allow to ferment for 10 minutes at

INGREDIENTS
Za'atar, Lemon And Oil Topping
1/4 cup za'atar spice
1/2 teaspoon kosher salt
juice of two lemons, about 1/2 cup juice
3/4 cup extra-virgin olive oil
Bread
1 tablespoon instant yeast
2 cups lukewarm water (l00F to 110F)
2 teaspoons granulated sugar
2 tablespoons extra-virgin olive oil
2 cups King Arthur Unbleached All-Purpose Flour
5 cups King Arthur Unbleached Special Bread Flour
1 3/4 teaspoons kosher salt
INSTRUCTIONS
Topping: Stir together all the ingredients in a small bowl and
set aside.
Bread: Whisk together the yeast, water, and sugar. Stir in the
oil, the all-purpose flour and most of the bread flour, then the
salt. Mix to form a soft dough. Knead the dough for 8 to 10
minutes, till it's elastic and supple, adding additional flour as
needed.

some extra virgin olive oil in a small
bowl, then add some zahter. That's it
(no need to stir or smth)

water,poppy seeds
Stir sugar into warm water,sprinkle with yeast.let stand 5
minutes .stir .sift flour and salt into a large bowl.lightly beat
egg into yeast mixture. pour into flour misture,combining to
make a dough.on floured surface,knead dough until smooth.
cover and let rise until doubled in size ,about 30 minutes.divide
risen dough into 9 balls.Make each piece into 3 thin rops about
6 inch(15cm) long.using 3 rops at a time,weave into small
braids.Brush braids with water and sprinkle with poppy seeds.
arrange on a baking sheet.cover and let rise about 15 minutes.
preheat oven to 450F(230c), bake 10-20 minutes or until done.
serve hot.

Makes 10 trios
7 gr(1/4 oz)dried yeast (I use 2 ts)
1 ts sugar
4 cups (=500 gr) plain flour
1 Tb sugar,extra
1 ts salt
1 cup (=250 ml) warm milk
1/4 cup vegetable oil(=60 ml-2 oz) (I use canola oil)
10 smal springs or rosemary
--1 egg yolk
sea salt ,to spinkle
1 Combine the yeast,sugar,and 1/2 cup(=125 ml) of warm water,in a small bowl.
cover and set aside in a warm place for 10 minutes,or until frothy.
2 Sift the flour into a large bowl and stir in the extra sugar and salt.
Make a well in the center and pour in the warm milk,oil and frothy yeast.
mix to a soft dough,gather into a ball,them turn out onto a lightly floured surface and
fnead for 10 minutes, or until smooth and elastic. (add a little extra flour if the douge
becomes too sticky)
place in a large,oiled bowel,cover,and leave in a warm place for 1 hour,or until doubled
in size.
3 punch down the dough,turn out onto a lightly floured surface an knead for 1 minute.
prepare 2 large baking trays.
divide the dough into 10 pieces.
Form each piece into 3 balls-keeping the remainingpieces covered-and place close
together on the baking tray; add a spring of rosemary onto the centerof each trio.
repeat with the remanining pieces of diugh,an lay each set separatly on the baking tray
4 Cover the trios,and set aside ror 20 min. or until well risen.
Preheat the oven to moderate=180C (350F)
Brush the trios lightly with the combined egg yolk and 1 ts of water,and sprinkle with
sea salt.
Bake for 15-20 minutes,until golden brown.
cool on a wire rack.

Bagels
Bagels II
11.Roll half into 17.5" by 12" rectangle.Brush with half of melting butter; top
with half of sugar mixture.
12.From 17.5" edge,roll dough (as shown in the picture..)pinch to seal.
13.Cut into 9 wedges, 2.5" at wide side,1"at short side.
14.Turn wedges short-side up; press with your finger across each.Repeat.
15.Place on cookie sheets; let rise until doubled. (I let them 1 hour)
6. Punch down dough; turn onto floured surface ;cover for 15 minutes.
7 .Grease 2 cookie sheets.
8. Mix brown sugar,nuts,raisins,cinnamon.
9. Melt 4 TB (=60gr) butter.
10. Cut dough in half.

14..) , after 15 minutes of baking I've poured over 1 liter of very hot milk(with vanilla), and then
baked the cake 10-15 more, wonderful. Rosen means Roses .. that's the way dad calls this
cake .. :-)

Makes: 14 Rolls
For the Sweet Dough
Combine:
3 1/2 cups all-purpose flour
3/4 cup sugar
1 t. salt

Dissolve Together:
1 1/4 cups 100 milk
1 pkg. active dry yeast
Stir Milk/Yeast into Flour Mixture, Add in:
2 eggs, lightly beaten
2 T. unsalted butter, melted
Gradually Add:
1 1/2 cups all-purpose flour
Mix and Spread:
1 cup sugar
1/2 cup unsalted butter, softened
3 T. cinnamon
