CONCLUSIONES
Se realiz la Osmodeshidratacin de productos agroindustriales (manzana y carne)
en soluciones azucaradas para la manzana y en salina para la carne, a una
temperatura de trabajo.
La importancia del proceso de deshidratacin osmtica, sus factores que influyen
en este y su representacin grfica para describir y analizar las prdidas de agua y
peso global de la manzana y la carne de res en este caso, donde se obtuvo
resultados ptimos de secado, mejorando sus caractersticas esenciales y su vida
anaquel de ambos.
Se verific el efecto de la temperatura, tiempo y concentracin en el proceso
osmtico tanto en soluciones azucaradas para la fruta como en la agregacin
salina para la carne.
II.
RECOMENDACIONES
Tener cuidado en la elaboracin de las soluciones (prepararla en el momento y con
materia prima de buena calidad).
El analista debe ser cuidadoso con los cubitos de manzana en el secado previo al
pesado, as tambin con la carne, pues un mal manejo podra daar la muestra y
provocarle un mal pesado.
