Good to Know Before Heading to the Wineries

For the most part, going wine tasting is about the easiest thing in the world, especially here in California where wineries and tasting rooms abound. You can find wineries specializing in red wines of all types, those that are famous for their white wines and others who pour sparkling wine. It is a matter of doing a little research and planning your day. Most tasting rooms open around 10 a.m. and close between 4:30 and 6 p.m. Here are some tips that have proven to be helpful and are designed to help make the sensory adventure of wine tasting all the more enjoyable. Before you start off pack a few essentials: Water (plenty of water) and something to snack on – crackers or a baguette. Many wineries have picnic areas and there are plenty of delis and bakeries that can make up a lunch for you, or make your own. Which brings us to eating and drinking, the kind that doesn’t directly involve wine. Be sure to nibble during the day and make sure you make time for lunch. Two tips: drink at least twice as much water as you do wine, and remember that you don’t have to drink everything poured into your glass. There is a reason tasting bars have dump buckets and a pitcher of water to wash out your glass. Don’t be afraid to ask questions. Time and time again I have heard knowledgeable winery workers say that there is no such thing as a stupid question, and they mean that. You can drink what you want, in the order you want. If you only like

reds, say so; if you don’t like sweet wines, speak up. But the idea of starting with whites, then going on to reds and then sweet wines is a good guide. Zinfandel is red. I am sure you know that but it never hurts to remind everyone. If there is a particular wine you want to try and it is not on the list, ask. There might be a bottle around that was opened for a trade tasting or by the winemaker. Most tasting rooms are happy to pour a little if you show enthusiasm. Take notes on the wines you most enjoyed. Take advantage of tours when the winery offers them, but keep in mind that they take anywhere from 20 minutes to well over an hour, so one a day is plenty. Buy wines that you can only find at the winery. These often include smaller (375 ml) bottles of limited production Ports or dessert wines. Don’t buy a wine you can get at a supermarket back home. You’ll pay more, and besides, what’s the point? Look for tasting rooms in towns. Many of these are cooperative tasting rooms, where in one place you might find wines from a dozen or more small-to-medium premium producers. They are scattered throughout the area and more are opening all the time. Don’t give too much thought to ratings and vintages. It’s like art: if you like it, it’s a good wine. It is as simple as that. Remember that you don’t have to do the driving. It takes no more than a phone call hire a transportation company to do the driving.

Why are some wines blended?

The term blend refers to a wine composed of two or more different varietal wines. Technically, even a single-varietal wine is built from a blend of wines: though the wines are made from the same grape variety, they may have come from separate vineyards, fermented with different yeasts, or aged in a variety of barrels. Whether using the same variety or a combination of different ones, blending builds a more interesting wine. Perhaps the most famous blended red wine in the world is French Bordeaux, a blend of two to five different grapes, frequently including Cabernet Sauvignon and Merlot. Bordeaux’s other red “blending grapes” are Petit Verdot (contributes color and structure), Cabernet Franc (contributes structure and richness of flavor) and Malbec (contributes flavor and some sweetness). The reason Bordeaux winemakers, among others, blend Merlot with Cabernet Sauvignon is to soften, or round out, Cabernet’s palate-drying texture. Cabernet can have more aggressive tannin, an astringent quality in red wine derived from grape skins, seeds and stems during maceration and fermentation. Cabernet Sauvignon grapes naturally develop

more tannin than Merlot, so blending them lessens Cabernet’s rigidity. There are also red wines made in Bordeaux from a single grape variety, as well as delicious white wine blends made from the Sauvignon Blanc and Sémillon grapes. In the Rhône Valley, another legendary French region, blending a small amount of white wine with red wine makes the aromatic, deeply colored Châteauneuf-du-Pape. It is made from a blend of up to 13 different grape varieties, including Syrah, a red grape and Viognier, a white wine grape. Additionally, Australian and American wines have had great success blending Syrah with Cabernet Sauvignon. The breakdown in percentages of the varieties that make up a blend may be indicated on the label, depending on the country of origin, though it is not required for American wines. Finally, when producers in the United States make a blended red wine using the same grapes as a classic Bordeaux- blend wine, they are permitted to identify the wine as Meritage (rhymes with heritage), a unique, and legally protected term.

BY JOSH STEIN Trellising: Herein Hangs a Tale Every grape vine pretty much looks like every

Every grape vine pretty much looks like every other one, right? Well, while driving past them it may seem to be the case, but the truth is small differences in the shape of the vines can have major impacts on wine quality, yield, bouquet, taste and mouthfeel. Believe it or not, the shape the grapes are grown within has a major but often unrecognized impact on what ends up in your glass. Trellising is dirty, un-sexy work, but it’s the lifeblood of growing great wines. The canopy is what converts “sunlight into wine,” so it’s vital on many levels. And since most of the fieldwork is done in cool times of the day when other folks aren’t around, few outside the industry ever really see how the vines create the future for that year’s wines. Each style of trellising has to take into account a number of variables along the way to creating a structure which allows for vine balance; that’s what’s key to producing grapes with lots of flavor without damaging the vine or its roots through stress, over- or under-cropping, or mismatching vine to location. These options include number of shoots per vine, number of leaves per shoot, number of clusters per shoot, orientation toward the sun, shading of the grapes via the canopy, and the overall shape of the canopy, which is determined by the guidewires of the trellis. There are dozens of possible combinations in commercial use today. Walk along the edges of several vineyards anywhere in wine country, and you will immediately see some of these small but vital differences. There are two basic kinds of trellising, though, vis-à-vis various ways of positioning the shoots vertically to maximize access to sunlight while maintaining less vigorous growth in poor, infertile soils, or different styles of dividing the canopy vertically or horizontally to control for vigorous growth in soil too-good for

grapevines. How can soil be too good, right? Everything we’ve absorbed about growing things the “right” way is the opposite for winegrowing. Soil that is too good encourages excess leaves and excess fruit. The former stresses the vine and requires more irrigation, keeping the vine from putting its energy into the grapes. The latter dilutes the flavors in the resulting wines. When winegrowers talk about “balance is key,” that’s what they mean: all of the elements are properly enfolded together. Some of the more common vertical shoot positionings, known generally as “VSP,” take the forms of candelabra. Guyot divides the vine quite low to the ground, leaving just two canes regrown each year below guidewires, to which shoots will attach themselves. VSP generally makes the arms permanent, allowing for spurs on the arms from which the vertical shoots grow, and cordon goes one step further with its permanency, with the shoots generally positioned up, over, and then back down so that the clusters are shaded from direct sunlight by how they grow once positioned. In contrast, divided canopy trellising is designed to try to take away excess growth by making the vine work harder for what it does put out. Winegrowers do this by creating more sections with more canes, shoots, and/or cordons. Scott Henry creates multiple vertical canopies, making the vine work twice as hard. “California Sprawl” separates the canopy in two, “flopping” large sections of growth to each side; Lyre uses movable guide arms to open or close the “V” and the flop. Geneva Double Curtain creates up to four cordons for each vine, doubling vine energy needs horizontally in contrast to Scott Henry’s upright, split form and forcing it to work much harder to produce its fruit. Do the range of options really matter? Absolutely, as the trellis style alone has been shown to have an impact on all levels of wine expression: softening or hardening tannins; adding or removing flavors, aromas, and range of ripeness options; affecting yield, concentration, and vine life. The term “winegrowing” is a bit of a linguistic oddity, for sure, but as you can see, it’s absolutely appropriate. One of the reasons it’s quite fair to say civilization is wine is that, unlike just about everything else we produce, wine requires our constant attention—even long before a single grape is harvested a bud breaks or anyone else is awake.
