April is one of our favorite months here at Castoro Cellars and for
good reason! April is Earth Month and that makes it a perfect time to
reflect on, celebrate and continue our relationship with Mother
Nature. Since its inception, Castoro Cellars has been focused on
sustainability, organic farming and working with Mother Nature to
make the best wines possible. It isnt always easy and it keeps you on
your toes, but that is what makes farming so gratifying!
This year we are proud to be hosting the annual Earth Day Food
and Wine Festival on Saturday April 18th. The festival is a benefit
event that supports farmworker education and sustainable agriculture
research, conducted by the Vineyard Team (vineyardteam.org), which
is a collaboration of growers, wineries, consultants, researchers and
natural resource professionals dedicated to promoting sustainable
winegrowing on Californias Central Coast. The main event will take
place in our beautiful Meadow, the same wonderful location that
plays host to our annual Beaverstock Music Festival. Vendors from all
over the Central Coast will be providing an amazing variety of food,
wine, beer and live music. This is truly one of the Central Coasts
premier events and we couldnt be happier to be a part of it!
After hosting Beaverstock in the Meadow on year one, we
instantly knew we were on to something special. Not only was the

event a barrel full of fun, the venue was absolutely magical. After
many long debates, we decided to keep the festival alive and see if we
could build something special in the community. In the past two
years, we have learned so much from the event and we cant wait to
make this year even better. We have chosen the weekend of
September 19th and 20th for Beaverstock and are currently working
on an amazing musical lineup. Like last year, we will feature local
food vendors, beer, artists and Dam Fine Wine. The event will be all
ages with games and activities for kids, and plenty of entertainment
throughout the day. This is an event you wont want to miss so stay
tuned, as more details will be coming soon.
With spring, we enter a time of year we all love, as the weather is
amazing and not yet as hot as the coming summer months. Starting
in May, our outdoor summer concerts begin with the Lazy Locals
series followed by a number of SLO Folks concerts throughout the
summer. If youve never experienced an outdoor concert at Castoro
Cellars, there will be plenty of opportunities this summer and we
cant recommend them enough. There really is nothing better than
listening to wonderful music with friends, while enjoying great wines
and warm weather. As always, there are a lot of exciting things
happening at Castoro Cellars and we look forward to seeing you this
spring and summer.

Mamas Meatball
Fine Italian Restaurant & Catering in San Luis Obispo
Ask locals or somebody in the restaurant businessa bartender, a
waiter, even a bus boywhat they think of Mamas Meatball in San
Luis Obispo and their eyes roll towards the heavens as they breathe a
deep sigh; that is how good Mamas Meatball is. Set in a small
courtyard off of one of the towns main streets in a place called the
Old Creamery, Mamas Meatball is actually divided in two. On the
right is the takeout where people line up to get their orders of
meatballs and more. To the left, fronted by a huge-trunked tree and a
water fountain, is the intimate restaurant with its mural of the
Mediterranean across the back.
Meatballs aside, the restaurant, under owner and chef Nicola
Allegretta, offers a wide range of authentic Italian dishes. Among
them are half a dozen soups, a long list of salads (including grilled
salmon and a refreshing pear and gorgonzola), some wonderful
antipasto choices, both hot and cold paninis (including, of course,
one made with meatballs) and plenty of pasta dishesthe Ravioli di
Pollo all Vodka, homemade ravioli filled with chicken and served in a
vodka sauce, cannot go unmentioned. There is also a heady selection
of meat and fish dishes as well as any number of traditional and
specialty pizzas, and some far too-tempting desserts.

A Versatile Pairing
Oak Roasted Salmon with Baileyana Firepeak
Pinot Noir and Chardonnay
Pairing wine with food can be intimidating but with a little
experimentation and making sure youre stocked with a great
bottle of wine, you are already on the path toward success.
Think outside of the box; it doesnt have to be one wine
paired with one course. In fact, break the rules a little. With this
particular recipe, Baileyana Winery has offered a red and white
option that will transform your dish beautifully. Choose one, or
try them both side by side if you prefer!
Both Pinot Noir and Chardonnay are grapes that originated
from the highly acclaimed Burgundy region in France. These
grapes thrive in cool climates, much like within the AVA
(American Viticulture Area) of Edna Valley, where Baileyanas
estate Firepeak vineyard resides. The vineyard is a mere 5.4
miles from the Pacific coast. The cool, coastal climate and rocky,
clay-loam soil attributes to a very favorable flavor profile in the
wines. Each wine has a balanced acidity, subtle fruit
components, and hints of spice and vanilla which are attributed
to the French oak barrels utilized during the maturation of the
wines.
Some might ask, Salmon with white? or Fish with red? It
may be surprising, but because of salmons dense flavor profile
and heavy texture, it can not only stand up to a Pinot Noir, but
also not overwhelm a Chardonnay. By charring the salmon, it
adds more complexity to the dish, giving it a roasted component
The spices of the recipepeppercorns, coriander seeds, bay
leaves and fennelfuel the earthy nature of the Pinot Noir and
add zip to the Chardonnay. You will not be disappointed with
this easy and delectable dish!

In the winegrowing region of Paso Robles, there is no denying the
incredible wines that are produced from vines planted in the local,
calcareous soilseverything from Bordeaux varietals like Cabernet
Sauvignon to classic Rhne varietals like Grenache, Syrah and
Mourvdre. For Calcareous Vineyard, located on the westside of Paso
Robles, their 2012 Trs Violet is a beautiful expression of Rhne
varietals and the calcareous soils in which the vines are planted.
The 2012 Trs Violet is a classic Rhne blend of Grenache, Syrah
and Mourvdrethree varietals that have beautiful synergy on the
palate and make for a very food-friendly wine. This savory tarts
recipe from Calcareous Vineyard is a perfect match for this wine.
With just the right amount of complementary flavors and a delicious
flaky pastry, this pairing satisfies both in taste and texture.
When these three varietals are blended together well, the
combination creates a highly aromatic and flavorful wine that is full
of savory characteristics; leather, graphite and tobacco are balanced
by blackberry and mocha flavors, enveloped in earthy tannins and
subtle French oak. These savory qualities are a wonderful
complement to the fresh thyme, kalamata olives and feta cheese in
the savory tarts. Additionally, the flaky pastry brings a bit of body to
this wine and creates playful texture interactions on the palate. This
pairing is the perfect combination to serve as an appetizer before

Savory Tarts
Pate Brisee
2 cup flour
1 teaspoon salt
1 cup cold butter,
cut into small pieces
to cup ice water
Directions
1. In a food processor,
combine flour and salt
and pulse to mix for 10
seconds.
2. Add butter and mix until
mixture becomes like
rough sand.
3. Then add the water
slowly while running the
processor until mixture
becomes formed as
dough.
4. Remove and separate into
to balls; wrap and refrigerate for an hour.
5. Roll out dough and cut
into 4 squares. Grease a
muffin tin and put dough into circles.
Filling
3lbs. tomato
1 large onion
2 tbsp chopped fresh thyme
1 cup feta crumbles
cup chopped kalamata olives
1 egg, lightly beaten
Directions
1. Turn the oven on to 350 degrees.
2. Roast 3lbs. tomatoes with olive oil, salt and pepper in
the oven for one hour.
3. Roast 1 large onion , sliced in strips with oil, salt and
pepper until golden.
4. Put onion tomato mixture into pastry, top with feta and
thyme, then olives.
5. Bring points of dough together and brush with egg.
Bake 30 minutes , or until brown.
