Flavours of My Kitchen A Visual Treat. Part II.

I truly feel that food is a celebration of life. It's the most important, most valuable gift that God gave humans.
Jeff Henderson .
The most remarkable thing about my mother is that for thirty years she served the family nothing but leftovers.
The original meal has never been found. Calvin Trillin
While I read this quote, a bit sheepishly I realised the cap
fitted me perfectly. The leftovers in our house certainly
made their appearance in attractive attires at the next
meal. Usually after a very sceptical examination by all
members present, and not succeeding

Cookery is not chemistry. It is an art. It requires instinct and taste rather than exact measurements. Marcel

"All cooks, like all great artists, must have an audience
worth cooking for." Andre Simon.
Luckily I had no dearth of such a discerning critical
audience at home, amongst extended family or friends.
"Cooking is a creation. As a creation, it is a personalized
view of the way we like to express our feelings. It is how
we share our sense of art, our knowledge, and our taste
with other people." Piero Selvaggio
Food is discovery; finding an untried spice or cuisine is
for me like uncovering a new element. Food is evolution;

fluid.

Can it be a mistake that STRESSED is DESSERTS spelled backwards?

Strawberries are the angels of the earth, innocent and sweet with
green leafy wings reaching heavenward. ~Terri Guillemets
We were converted to staunch Strawberry enthusiasts after our
Mahabaleshwar trip. Since then the favourite is always Mapros whole
strawberry jam.

And in season it is Strawberries with cream & honey!

A home cook who relies too much on a recipe is sort of like a pilot who
reads the planes instruction manual while flying. Alton Brown
Fussing over food was important. It gave a shape to the day: breakfast,
lunch, dinner; beginning, middle, end. Robert Hellenga

Pickles and Chutneys are my forte.. many of these are amongst my signature dishes.
Often made with less salt or without oil, they can be consumed like vegetables at times, when the need arises.
Chutneys / pickles bring excitement and drama. They spice up an otherwise dull and drab existence. They add
verve and pep to steamed rice and vegetables.

No matter how much creativity goes into it, cooking is an art. Or perhaps I
should say a craft. It abides by absolute rules, physics, chemistry, etc. and that
means that unless you understand the science you cannot reach the art. We're
not talking about painting here. Cooking's more like engineering. I happen to
think that there is great beauty in great engineering.
I approach cooking from a science angle because I need to understand how
things work. If I understand the egg, I can scramble it better. It's a simple as
that. Alton Brown
It's my belief that cooking is a craft. I think that you can push it into the
realm of art, but it starts with craft. It starts with an understanding of
materials. It starts with an understanding of where foods are grown. Tom
Colicchio

A simple Tomato Curry, a family favourite at the lunch or dinner table.

Great cooking is about being inspired by the simple things around you fresh markets, various spices. It doesnt
necessarily have to look fancy. G. Garvin.

One of the very nicest things about life is the way we must regularly
stop whatever it is we are doing and
devote our attention to eating.
Luciano Pavarotti
Cooking is not about being the best
or most perfect cook, but rather it is
about sharing the table with family

"A recipe is not meant to be followed exactly -- it is a canvas on which you can embroider." Roger Verge.
This has been a family favourite from our childhood, mothers special..salty & sugary, amazing taste when packed

tradition continues. Many of my friends and colleagues have been a fan of this item and it has become a favourite
in their homes too. I discovered that when one follows the artist's eye one sees unexpected treasures in so many
seemingly ordinary scenes. Julia Child, My Life in France

There is no love sincere

Cooking is at once one of the simplest

and most gratifying of the arts, but to cook well one must love and respect food. Craig Claiborne. Happy and
successful cooking doesn't rely only on know-how; it comes from the heart, makes great demands on the palate
and needs enthusiasm and a deep love of food to bring it to life. Georges Blanc, Ma Cuisine des Saisons

"Cooking is an art and patience a virtue...
Careful shopping, fresh ingredients and an
unhurried approach are nearly all you need.
There is one more thing -- love.

Love for

food and love for those you invite to your

you can be an artist -- not perhaps in the
representational style of a Dutch master,
but rather more like Gauguin, the naive, or

. Food is life; our well-being demands it. Food is art and magic; it evokes emotion and colors memory,
and in skilled hands, meals become greater than the sum of their ingredients. Anthony Beal. Give two
cooks the same ingredients and the same recipe; it is fascinating to observe how, like handwriting, their
results differ.

Find something you're passionate about and keep tremendously interested in it. Juliia Child . Just
the act of cooking made her feel better, because cooking was life. Stephen King, The Stand.
Yes. All three factors apply to me.

There is no spectacle on earth more appealing than that of a beautiful woman in the act of cooking
dinner for someone she loves. Thomas Wolfe. No one who cooks, cooks alone. Even at her most
solitary, a cook in the kitchen is surrounded by generations of cooks past, the advice and menus of cooks
present, the wisdom of cookbook writers. Laurie Colwin.
I continue to cook in my kitchen with love in my heart, guided by the wisdom and the august company of
generations past

Vegetable stew made with
whole/toned milk is a family
favourite and has spread its
wings in many homes by
now. The uninitiated are
often surprised and the first
question is: The milk doesnt
curdle? We, the experienced,
know the stew tastes even
better the next day.
