Ingredients
PAM® Professional™ No-Stick Cooking Spray
2 large Granny Smith apples, peeled, cored and halved
3 tablespoons Fleischmann's® Original-stick, cubed
1/4 cup firmly packed brown sugar
1 teaspoon apple pie spice, divided
1-1/2 cups fat free half-and-half
1 cup Egg Beaters® Original (1 cup = 8 oz)
1 teaspoon vanilla extract
8 slices honey wheat bread
1 tablespoon confectioners' sugar
Directions
1. Spray 9-inch glass pie plate with cooking spray. Cut each apple half into 8 slices and
place in pie plate. Dot apples with Fleischmann's; sprinkle with brown sugar and 1/2
teaspoon of the apple pie spice.
2. Cook apples in microwave on HIGH 4 minutes. Stir and spoon sauce over apples; cook 2
minutes more or until apples are tender.
3. Beat half-and-half, Egg Beaters, vanilla and remaining apple pie spice in shallow medium
bowl until well blended.
4. Spray large griddle or skillet with cooking spray. Heat over medium heat. Dip slices of
bread into Egg Beaters mixture, turning to coat both sides. Place on griddle; cook 3
minutes or until evenly golden brown on each side and cooked through. Keep warm.
Repeat with remaining Egg Beaters mixture and bread.
5. Top each serving evenly with apples. Dust with confectioners' sugar. Serve immediately.
Cook's Tips
For variation, try leaving peel on apple or adding 1/2 teaspoon of freshly grated orange rind to
Egg Beaters mixure.

Breakfast Burritos with Tomato-Basil

Flour tortillas packed with hash browns, scrambled eggs, tomato,fresh basil and Cheddar cheese
Ingredients
3. Combine tomato and basil; set aside. Spoon Egg Beaters mixture evenly down centers of
tortillas; top evenly with cheese and the tomato mixture. Fold in opposite sides of each
tortilla; roll up burrito-style.

1. Preheat oven to 400°F. Spray small nonstick skillet with cooking spray; heat over
medium heat. Pour Egg Beaters into skillet. Cook until almost set; stir. Cook an
additional 6 minutes, or until Egg Beaters reach desired doneness, stirring occasionally.
Remove from heat. Stir in bell peppers, tomatoes and bacon.
2. Place bread shells on ungreased baking sheet. Top evenly with the egg mixture and
cheese.
3. Bake 7 minutes, or until cheese is melted and golden brown. Cut each pizza into 4
wedges to serve.
Greek Omelet
Potato, onion, garlic, olives and feta cheese fill this single-serve omelet.
1. Spray small skillet with cooking spray; heat over medium heat. Add potato, onions and
garlic; cook 2 minutes, or until potatoes are lightly browned, stirring occasionally. Stir in
olives. Remove mixture from skillet; cover to keep warm.
2. Beat Egg Beaters, milk, oregano and pepper with wire whisk until well blended. Add to
same skillet; tilt skillet to evenly distribute Egg Beaters mixture. As Egg Beaters mixture
sets, lift edge slightly with spatula to allow uncooked portion to flow underneath. When
Egg Beaters mixture is set in center, spoon potato mixture over half of omelet; sprinkle
with cheese.
3. Slip spatula underneath, tip skillet to loosen and gently fold omelet in half. Slide onto
serving plate.
1. Preheat oven to 325°F. Spray 8x8-inch glass baking dish with cooking spray; set aside.
2. Combine sausage and Egg Beaters; pour into prepared dish. Bake 12 to 15 minutes or
until center is set. Cool slightly; cut into 4 squares.
3. Mix Fleischmann's and maple syrup in small bowl until blended.
4. Assemble 'waffle-wiches' by spreading 1 teaspoon maple spread on each waffle. Place 1
Egg Beater square between 2 waffles. Repeat with remaining waffles. Cut each in half.
Cook's Tips
To enjoy this on busy weekday mornings, prepare the buttery-maple spread and Egg Beater
squares on the weekend and refrigerate. Heat individual squares during week by microwaving
one portion on HIGH about 20 seconds. Assemble waffle-wich as described above.
