nest and heading off to college this month. This next chapter
as emerging adults will require a
balancing act of academics, social
life, eating, exercise and sleep
without parents watchful eyes. Is
your graduate ready?
Whatevers fast is the typical
college students motto for meals.
Although there are usually a
plethora of food options available,
students just dont seem to take
time to eat regularly. A recent survey showed that a high percentage
of college students subsist on noodles, microwavable burritos, mac
n cheese, pizza, coffee, energy
drinks, chips and candy. These are
quick, cheap, high-carb meals
void of nutrients.
They think Breakfast? No time.
Lunch: whatevers quick and the
goal is to not to fall asleep during
afternoon classes. Dinnertime will
typically be the most nutritious
meal, while the remainder of the
evening is often filled with studying, socializing, snacking, and
more caffeine-fueled drinks.
How can we bestow upon our
college students the importance of
eating well and engaging in exercise to enhance their chances?
How can we help them avoid the
common Freshman 15-30 pound
weight gain? Or what if they devel-

1. Help them prepare a list for
groceries and supplies to stock
their fridge in their dorm room or
apartment.
2. Encourage them to take
inventory of the school cafeteria
and other eating establishments
on campus and determine which
foods will be the best go-to choices. For example: A lettuce
wrapped burger from In n Out, a
chicken salad from Jack in the Box,
or a deli lettuce wrap from the
cafeteria.
3. Budget for the amount of
money your student can spend on
food outside a meal plan. A prepaid or secured credit card may be
useful.
4. Encourage them to take an
exercise class, join a sport, or just
walk around campus. Exercise will
help your students sleep well, better deal with stress and can even
reduce late night junk food cravings.
5. Talk to them about stress eating, skipping meals, eating disorders, junk food and alcohol.
Most importantly, let your college students know that you love
them, are there for them and
ready to listen anytime without
judgment, and that you are willing
to send them care packages from
home.

or food lovers unfamiliar with the


term rustic fine dining, the new Cibo 7
is hoping to burn those words into the
regions culinary consciousness.
And its kitchen team is stressing that a skillful approach doesnt have to fall into the traps
of over-the-top elitism.
Cibo 7 opened in Roseville in early December.
Its menu is an amalgam of high-end Italian,
Spanish and French dishes, and its transporting
ambiance reinforces that from one side of the
restaurant to the other. Vintage brick veneer,
18th Century pastoral paintings and Castilestyle chandeliers all gently mingle with the
rooms ceiling plates of aged, hand-painted tin.
We wanted an Old European feel, said coowner Alan Stevens. We hoped to bring that
kind of energy to it.
Cibo 7s menu is stacked with breads, pasta
and antipasta. Its cast iron house pasta is
quickly becoming popular, augmented with
pomodoro, garlic-chicken sausage, pesto ricotta
and hand pulled mozzarella. The dish pops
with the moist tenderness of freshly rolled pasta, with a delicate undertone of herb traces and
clove conjuring.

We wanted an Old European feel. We


hoped to bring that kind of energy to it.

But for cuisine connoisseurs, the real magic


may be in Cibo 7s ambitious take on seafood.
The ristorante offers Branzino, or Mediterranean white fish, with Del Rio sunchoke
Carnaroli risotto and bacon-braised Brussels
sprouts. Another highlight is the bubbling
Cioppino, a mini cauldron of tomato and
Fennel broth chalked with Alaskan King Crab
legs, fresh white fish, whole prawns, diver
scallops, clams and Penn Clove mussels.
Steak fans can sink their teeth into an 18 oz
Masami Rib Eye with smoke cheddar gratin,
pepper creamed Arugula and a special handmade sauce.
For co-owner Chad Lanza, everything
happening in the kitchen is designed to get
food devotees excited.
Coming from the Bay Area, there are so
many great restaurants, Lanza noted. There
are three different Michelin-star places in a

little town like Los Gatos alone. Yet most of the
restaurants in Roseville and Granite Bay are
chains. So were trying to help break that mold
by offering great quality food at reasonable
prices and thats the whole inspiration.
Lanza has worked with respected California
vintners to come up with Cibo 7s wine list.
Most of its selections are from Napa Valley,
though a few choices hail from Paso Robles
and nearby Amador County. Cibo 7 is now
hosting a social hour from 4 to 7 p.m. on Monday through Friday. Emerging wines on its
social hour list include Complicateds Pinot
Noir, out of Sonoma County, with its bottombrushed blueberry base, chili tinge and vanilla
notes. A red wine thats even more popular at
Cibo 7 is the Sexual Chocolate Blend, bottled in
Santa Barbara, bolstered by a tender tannin
touch mixed with tobacco undertones and
crisp, cinnamon highlights.
The team at Cibo 7 has been watching its
social hour steadily introduce patrons to its
main menu. For the kitchen crew at Cibo 7
the future is premium ingredients. While the
restaurant buys Placer County produce from
sources like Laughing Duck Farms in Newcastle
or local mandarin orange growers, it is also
buying prosciutto from a family farm in Parma,
Italy, as well as heirloom saffrons from Spain. A
large portion of the seafood is coming from the
California coast, though diver scallops flown in
daily from Maine.
Now situated in a restaurant with a bold
concept, the kitchen team is on a mission to
change local perceptions around a term they
know carries unfortunate baggage. To them,
fine dining should not equal pretention,
but rather a hand-crafted approach to cooking
that allows the most interesting ingredients
space to breathe.

he unofficial motto of the United States Postal Service is nothing


stops a postman from his rounds and for three decades nothing stopped Bill Ripley from assisting the citizens of South Placer
County, first as door-to-door mail deliverer in Roseville and then
as the man who opened Granite Bays first post office. During that
time he was closely involved in both communities, training new postal
workers, supporting youth programs and being a quiet but solid
neighborhood mentor.

Ripley passed away June 4.


The longtime postal veteran
grew up in Ohio. While serving as
a young man in the U.S. Air Force,
he was stationed at McClellan
Base in Sacramento. It was there
he met Karen Bielefeld, a woman
who was working in the U.S.O.
The two hit it off and were married two years later. Ripley started
his postal career back in Ohio in
1962. Six years later he was transferred to the City of Roseville. For
more than 17 years he walked
three miles a day to deliver letters
in Roseville to an array of faces he
came to know and enjoy.
He always called the residents
along his route my people,
remembered Karen. He really
liked seeing everybody and being
able to follow things that were
happening in their lives. He felt his
customers were his, and he always
wanted to take care of them.
After sustaining a knee injury,
Ripley began working behind the
window in the Roseville Post
Office. It was 1979. The Saber City
neighborhood outside of Roseville
felt they knew Ripley so well that
they threw a pot-luck and made
him and his family the guest of

honor. The night included a decorated cake.


In 1985 Ripley was promoted to
a training officer and tasked with
opening Granite Bays first Post
Office. He worked there nonstop
for seven years before retiring.
When Ripley hung up his mail bag
for good in 1992, Press Tribune
reporter Robert Downing did an
interview with him.
If you had 15 minutes on
worldwide TV, what would you
talk about? Downing asked him.
I would like to see the education system not cut back so
much, Ripley replied at the time.
Too many programs that the students need are being cut out and
are going to hurt kids in the
future.
This answer did not surprise
Ripleys daughter, Misha Dortch.
Throughout the time she and her
brother Craig were growing up in
Roseville, they watched their
father constantly support youth
initiatives such as Club Scouts,
Camp Fire Girls, Little League
and, later, various high school
programs.
He was always making sure
that not only my brother and I

could participate in those kinds of
organizations, but that all of the
kids in the neighborhood could
too if they wanted, Dortch
recalled. My parents were sort of
the block mom and dad, and I
think he was kind of a father figure
to a lot of the kids who lived in the
area.
She added, A small town feel
he was just that kind of guy.
On June 4, Ripley passed away
from natural causes. He leaves
behind a wife of nearly 55 years,
his son and daughter and a large
extended family of grandchildren
and in-laws. The family recently
shared some memories of this
longtime community servant,

including an incident in 1967


when he helped a woman escape
a house that was on fire, and a
moment years later when he
jumped into a lake in the Sierra
and saved a boy from drowning.
During Ripleys 1992 interview
with the Press Tribune, one of the
last questions Downing asked him
was, If you had it to do all over
again, what would you do differently?
The
stalward

response was simple and likely
a comfort to his family in the last
two weeks.
I wouldnt really change anything, Ripley answered. Ive had
a good life.

Many Italian restaurants might call their
food authentic, but dont be fooled. Once you
try the ultra-fresh dishes made from
Dominicks family recipes, youll never set
foot in an Italian chain restaurant again.
Theres really no comparison. Dominick
Bellizzi and his wife, Raquel, prepare the
freshest foods from Boars Head Deli meats
to bread thats baked on the hour. Its quality
that youre not likely to see anywhere else in

the area and a testament to the value the Bellizzi family places on food.
Dominicks parents are from Calabria,
Italy, Raquel said. And my mother-in-law
was the best cook you will ever meet. Shes
still the inspiration for everything we do
here.
Raquel remembers Sunday dinners and
cooking alongside her mother-in-law and
sister-in-law.

be in the high chair with her own plate of
ground beef, learning to make her own meatballs. For Italian families, food is the window
to the soul, Raquel said.
Dominicks consists of both deli and sitdown restaurant with a full bar. A loyal group
of regulars come in for lunch and dinner
each week, and Raquel said its a common

misconception, likely based on


chain restaurant fare, that Italian
food is unhealthy.
We use Boars Head meats, the
Cadillac of cold cuts, Raquel said.
The meat has no nitrates or
preservatives, and everything we
make can be cooked to order. If
you want fresh fish with vegetables, we can do that for you. Many
of our specials are designed to be
light, and nearly every dish can be
altered. Quite a few of our items
are endorsed by the American
Heart Association.
Raquel begins each day at 9 a.m.
cutting, cooking and making sure
everything is same-day fresh. Popular items include the Goodfella
Hero, which combines capicollo,
sopresatta, prosciutto, fresh mozzarella, and grilled eggplant. The
Wise Guy Hero is also a favorite
and includes Mortadella, Genoa
salami, pepperoni, fresh mozzarella and sun-dried tomatoes. Paninis and pizzas are popular as well,
especially the Calabrese, the
namesake for the Bellizzis hometown. Other yummy items in the
deli case include lasagna, fried
calamari and arancini (Sicilian rice
balls).
The dinner menu is a combination of traditional Sunday dinner
items, and each dish is a particular
favorite of someone in the family.
Pizzas, calzones, pastas, and traditional dishes like Costolette dAgnello con Risotto di Funghi, which
is a pesto crusted premium lamb
chop served with mushroom risotto are just part of Dominicks
extensive menu. A kids menu,
catering and even a seasoned-toorder, freshly ground hamburger
are on the menu as well, not to
mention amazing desserts.
Dominicks is open daily, but
closes at 3 p.m. Sunday so the family can enjoy a traditional Italian
meal cooked at home.

magine being stranded in an airport


for two days with just one set of
clothes. Sounds yucky, right? Well, if
youre outfitted by Granite Bays
Bamboo Source, at least your clothes
will keep fresh no matter how many
times you wear them between washes.
You might not smell good after a
workout, but your clothes will, said Vicki
Peters, owner of Bamboo Source owner.
Peters knows her way around fabric
and clothing: Having worked in the retail
industry for three decades, her career
highlights so far have include serving as
regional manager for large brands like
Victorias Secret.
Peters fell in love with bamboo over
a year ago when she visited a store in
the foothills that specialized in bamboo housewares. She was soon purchasing bamboo clothing online for
herself, her husband and her three
adult children. All members of the
family were taking the apparel on a
test drive.
I believe one-hundred percent in
bamboo products, Peters said. Its the
environmentally friendly choice, using
one-tenth the land mass of cotton.
The fiber itself is anti-fungal, antiodor, and keeps the body two-to-three
degrees cooler in summer. The clothes
can also do the opposite in winter.
Theres no petroleum, which is found in
polyesters, and bamboo is a breathable

fabric. Lastly, Peters made-in-America


clothes, some pieces she designed herself, have UV protection added, making
them a great choice for anything outdoors.
Since opening her doors in December,
Bamboo Source has many loyal clients
who cant get enough of the stores active
wear, sleepwear, undergarments and
even skin care products, bedding and
home flooring.
Christy Epperson is impressed with
everything she has found at the boutique. The Granite Bay resident has purchased sheets, clothing items, and most
recently, flooring for her home.
Bamboos GANKO score is high,
meaning the wood has a high tensile
strength, she said. Theres no harmful
chemicals in the products and my bamboo sheets are far more comfortable
than the top-of-the-line bedding Ive
previously purchased from Macys.
Peters said once someone buys from
Bamboo Source, they always come back.
If you dont know about bamboo, you
might never consider coming in to the
store. You have to feel it to know how
great it is.
Surprisingly the stores top-selling
product is mens underwear. The garments, made by SAXX, have a comfort
compartment that eliminates chaffing.

mind, Peters said.

Nothing in my past would have prepared me


for this position, Evans confessed. It all comes
down to the smallest details.
On the first day of spring football, Evans recalls
his first mistake.
Im trying to watch my guys, but I started
thinking, Man, this drill is going on for a while,
Evans explained. I was waiting for (Coach Ernie
Cooper) to blow the whistle. He always kept us
on time. Then I remembered, Oh wait, thats me.
So its definitely been a transition.
Evans has the difficult assignment taking over
for the Green Machine, who stepped down
from his head coaching duties, but will continue
to run the logistics of the program from the front
office while letting Evans handled the stresses of
a head coach.
The main thing was I was ready to transition
into doing something different and we have the
right guy to take over, Cooper justified. Hes
also on campus and thats a rarity in high school
football these days.
Coopers legacy dates back to the day Granite
Bay opened its doors in 1996. But it was his wife,
Carol, that convinced him to be the schools first
coach.
At the time when the couple was considering
the transition, Carol was the one that fell in love
with the school, the community and she was the
one to light the fire inside Ernie, driving him to
apply.
Where else can I have a chance to create a
program, inspire traditions, start a legacy in a
blossoming and rapidly growing community?
Cooper thought to himself after originally second-guessing the move.
Cooper was not nave to the fact that this new
Granite Bay High School was in a very competitive league and he would have to work hard, but
he figured he had the community, the tools and
the staff to launch the program.
He admits this was the hardest and greatest
time in his life.
During the programs first year, the team went
1-8-1 and failed to win a league game. It was an
eye-opener for the coach and his staff.
He gathered his young assistants together and
they agreed to make some rapid changes.
One of the biggest early adjustments they made
was revolutionary at the time. They two-platooned, meaning the kids either played offense or
defense. Typically teams have their best athletes
go both ways, so theyre always on the field.
Coach Coop thought, We live in a community
where a great deal of kids wants to play, so lets
give them a chance.
Today, Cooper directly attributes this system as
the Grizzlies recipe for success.
The switch helped as the football program
started amassing wins, then playoff appearances,
then section titles and championships. The program even saw athletes achieve success at the
collegiate and NFL levels.

The success was rewarding, but taxing at the


same time.
After the birth of his daughter, Miko, in 2007
Cooper eventually found himself desiring rest and
found out he had little time to enjoy his ladies at
home.
In 2012, just after the Grizzlies had captured the
CIF Division I State Championship, and Cooper
was named Coach of the Year, he knew it was
time to begin his transition out of football.
He decided to take a step back in 2013 to catch
his breath.
If I had to do it over again, I would do things differently, Cooper said. It was more about frustration with the way things were going and I didnt
handle it well. Thats my bad.
My passion, even though I had a lot of it, dwindled down a bit due to the day-to-day details of
being a head coach, Cooper added. Ive always
wanted a year off like a sabbatical but in this
job, and in high school, thats very hard to do.
After recharging his batteries, the veteran leader
returned to the gridiron one year later, but admitted it wasnt enough time off.
I have a young daughter, so for at least a couple
years or so, I want to be able to say, Yeah. I can go
to that, without checking my calendar, Cooper
explained.
After leading Granite Bay to the Sac Joaquin Section finals last year, the veteran coach is able to
switch gears, give up the keys to the program and
head into the front office.
I can walk away with my head held high,
because I know the program is in great hands, he
said.

Dont be fooled though.


Come Friday nights in the fall, Coach Cooper will
be on-scene and his presence will be felt.
Ill be hanging out with the end zone crew, he
said. I wont be on the sideline, but Im still directly
involved with the program as the strength and
conditioning coach and Im helping Jeff as the
Director of Football Operations.
Im doing all the paperwork to free him up to
just coach. And Ill do that for as long as he wants.
While Cooper fades into the background, Evans
has stepped into the spotlight and filled in
admirably.
His play-calling abilities have always been top
notch. Hes handled the offense for years, even
when Cooper was still head coach.
His expertise was apparent on day one of a 7 on 7
passing camp at Del Oro High School in early July.
Facing El Camino High School, Evans took a shot
deep. Quarterback Brad Fina threw a 35-yard
bomb to his receiver Scotty Henrichs, who collected the ball in the corner of the endzone.
You just knew I was going to my favorite target
Scotty for the touchdown on the first drive back
from recovery, Fina said.
Henrichs is only three months removed from
surgery, which made him miss the 2015 baseball
playoffs, but his recovery has been speedy and
remarkable.
Hes looking good, Evans said moments after
Henrichs touchdown pass. Thats going to be a
good combination this year.
Despite no prior experience as head coach, one
thing is certain Evans knows exactly how to dismantle a defense and light up the scoreboard.

hen the Delta Breeze is gently moving over the state


capitol its rushing fast down the banks of the Sacramento River, and 13 miles from the citys skyline the
top of an aged megalith of industry peaks over cottonwood, black walnuts and wild grape along the waterway: Its
dubbed the Old Sugar Mill, and it was built in the Great
Depression as a stone and steel tribute to economic
hope along Californias port channels. Today, the once
dormant relic has been sparked to life
by a consortium of boutique wineries
using vineyards fed by river
wind.Whether sipping Barberas or
swirling Chardonnay in a glass,
visitors to the spot experience
Clarksburgs best creativity within
a factorys rising dimensions.
This month the site is celebrating
its ten-year anniversary of being
The Galleria Divina or the
gallery of the vines.
Its just before 5 p.m. and the
former husk of the American
Crystal Sugar Company is filled
with people. One of the winemakers moving busily between the wood
barrels and crowded bodies is John
Carvalho, the man who was first struck
with the vision of creating the Old Sugar
Mill. Carvahlo grew up in the Pocket neighborhood of Sacramento and understood that a vault of
broken glass and web-swept bricks was sitting empty along the edge of the river.
The building was constructed in 1934, at the
height of the Great Depression, Carvahlo explains.
The American Crystal Sugar Company moved here
along the Delta fromUtah. With everything that was
happening at the time, California was really the place
to be.
Carvahlo believed the abandoned factorys location and the fertile fields surrounding it could be
the catalyst for an agro-based endeavor. With his
family roots in winemaking going back four generations to Portugal, Carvahlo also knew that vino pioneer Clark Bogle had been proving since the

1960s that Clarksburg soil could yield magnificent grapes.


Carvahlo purchased the property. Renovations on the Old
Sugar Mill started in 2003, with its doors opening two years
later. Several other winemakers saw the potential and
joined in the venture.
It was about making the place a destination, Carvahlo
recalls. Here you have this huge sight of steel columns and
bricks that look like something youd see in San Francisco
something thats reminiscent of an era of the past. And its
standing here, just a ten-minute drive outside of Sacramento.
With the Old Sugar Mill drawing wine connoisseurs from
as far away as Massachusetts, Carvahlo has focused on the
on the finer points of being a vintner. His brand, Carvahlo
Family Wines, was among the first to champion harvesting
the Tempranillo grape in Clarksburg: That accomplishment
shows in its award-winning 2012 Tempranillo, a red flavor
whirl of Aronia, chased by pings of cool custard and stirring
clove notes in its body. And Carvahlo also enjoys producing
white wines like his slim-bottled Bootleg Blanc, a personalized hybrid of Sauvignon Blanc and Chenin Blanc: This
blend hits with a clean crispness stirred with touches of tea
leaf and the essence of honeycomb, its perennial lightness
glazed with a calm nectar finish.
Next door to Carvahlos operation winemaker Todd Taylor
is pouring glasses of his signature creations for the people
who remain. Taylor has a reputation of mastering the
nuances of individual grapes, as well as cooking mouthwatering food for his wine release parties.In particular, his
2012 Cabernet Sauvignon is considered a premium pairing
choice for barbecued steaks: When Taylor released this bottle to club members, he ordered 65 pounds of filet mignon
to cook and serve for them, topped with chunks of aged
blue cheese. The event was a hit. On this late afternoon,
customers are getting a taste for the muscle in Taylors
Cabernet, with its vibrant vanilla vibe swirled over oak hues
and a deep, simmering coco base. Its not hard for admirers
of the thick-skinned Cab grape to see how Taylors handling
of it offers a warm reflection for savoring red meat.
High heels continue to clank through the Old Sugar Mills
central chamber. Near the doors to its back courtyard the
Three Wine Company is keeping at atmosphere that is more
like a party than a tasting room. Devotees to this particular
winery are absolute in their commitment; and the somme-

Most vintners would love a piece of Napa Countys international fame, but Larry Dizmang is the proverbial one who got
away the successful winemaker who closed Folie`a Deuxin St.
Helena in the face of soaring demands from local officials. A
psychiatrist and U.C. Davis-trained wine master, Dizmangs
Chenin Blanc from Napa was rated one of the best anywhere
by Wine Spectator Magazine. When he walked away from
Folie`a Deux it started him on the path to opening Rendezvous Winery in The Old Sugar Mill. I sat down with Dizmang
to discuss the lauded structure and his decision to create all of
his varietals from grapes in the fields beyond it.

lier lifting the bottles during the shift knows how contagious the energy is.
I personally love whats being made here, says Denise Mantero, carefully filling a patrons glass. I was a wine club member for a while, and I liked it so much
I ended up on the other side of the counter.
Vintner Matt Cline does the steering at Three Wine Company. While some
winemakers at the Old Sugar Mill are using Delta-soil grapes from Clarksburg,
Cline has opted to get a bulk of his from vineyards on the southern waterways
of Contra Costa County. One flavorful achievement from this tactic is the Evangelho Zinfandel, harvested from a 130-year-old vine in Oakley near Bethal
Island. The Evangelho Zinfandel is sharply singular, with an open, grape-apricot
front riding light acid tints and the faintest traces of sweet peppers. Even with
the mills array of wine stops, few zinfandels here are as unique or popular as the
Evangelho.
It now 5 p.m. and the doors at the Old Sugar Mill are getting ready to close. A
handful of people who want to end the afternoon with a more electrified touch
on their tongues ask for dessert wines. Most vintners at the site make port and
muscatel-style after dinner bottles, though the rumor is that the dessert wines
of all desert wines is found at Rendez-vous: Its called the Late Harvest Petite
Syrah, and it tastes like winemaker Larry Dizmang somehow melted a raspberry
fudge truffle into pure sugar molasses and them imbued each crimson drip with
a glowing flourish on the palate.Numerous bottles of it are being carried out the
doors.
The lights are starting to dim in the tasting rooms. Visitors walk by the other
wine hubs; Heringer Estates, Elevation Ten, Perry Creek, Draconis, Due Vigne di
Famiglia, Clarksburg Wine Company and Merlo Family Vineyards. The sun is
still high over the outside lot, beating west on long rows of vines and east to the
grassy berm of the river bank. People exit the mill, some heading to the bars of
Freeport, some heading to restaurants like Broderick in West Sacramento,
some heading for much longer drives along the areas deep water channel.
Most have an uncorked energy to keep the evening going: As the great writer
Eduardo Galeano once observed, We are all mortal until the first kiss and the
second glass of wine.

Scott: In the wake of Napa, how did you decide on the Clarksburg soil?
Larry: I love making Chenin Blanc. What Ive discovered is that
the Clarksburg is one of the best places for Chenin Blanc. The
heat gets mild early in the evening, and its a few degrees
cooler even in the hottest part of the daytime because of the
Delta. Its just a magnificent climate.
Scott: Whats the biggest challenge to the art of winemaking?
Larry: Technically the most important part of the process is
getting the grapes picked at the correct ripeness. Youve got
to keep your eye on the sugars (in the harvest). Im a winemaker whos really involved in the picking of the grapes, and I
prefer to have them handpicked. Its crucial. We cant control
the weather and a lot of other things, but we can control
when the grapes are picked, and that masters the acids, the
flavors, the sugars, and ultimately, the alcohol content.
Scott: What makes The Old Sugar Mill a special place for wine
lovers?
Larry: It has a lot of variety with 11 different wineries that all
have different strengths. Each winemaker has their own style,
so this place gives people a chance to explore various
approaches and find out what they truly like. And they can do
it without having to drive all over a countryside.
Scott: Your Late Harvest Petite Syrah is a dessert wine thats so
amazing that it tastes like drinking sin. Is it
not defined as a Port because of the marketing pressures coming from Portugal?
Larry: (Smiles). Well, its really
made from a late
harvest in the
sense that I left
petite syrah on
the vine several
weeks longer
than it should have
been, on purpose,
which gave it that specific high-sugar,jammy taste
thats been so well-received.
Look, we cant call it a port
anyway because of the
marketing issues, but the
name shows the timing of
how it was made. Thats
what the bottle really is.

hannen Park is a busy lady. She is a


mom, restaurateur, martial artist and, as
of this year, an American Ninja Warrior
Contestant. Park trains at The Studio
Martial Arts and Fitness with Master Amitis
Pourarian, who owns and operates the
Roseville center located near Granite Bay on
Sierra College Boulevard. Park discovered the
Studio a little over two years ago when she
wanted to resume her martial arts training.
I took Taekwondo until I was fifteen, and as
the years passed I realized how much I missed
it, Park recalled. She added that she really
wanted to find an activity for her family of four.
Taekwondo was a great fit for them. As it turns
out, Parks husband Tony needed a little convincing. According Pourarian, once Tony was
in he just took off.
Tony came with an open mind and now he
is a great athlete, and his transformation has
been remarkable, the martial arts master
observed.
Park said her 4-year-old and 7-year-old are
also thriving. Shes been happy to share the
family element of martial arts training with her
loved ones. But Park also enjoys a challenge
a mentally of desire that led her to eventually
try out for American Ninja Warrior. Initially,
she was searching for a program to augment
her martial arts training and she found one in
the form of Pourarians brain child: The Ninja
Progressive Program based upon the obstacles used on the television show.
I built the course with the elements of the
show in mind, Pourarain acknowledged.
The course for the challenge consists of
monkey bars, rock-climbing walls and peg

2016, I have my eye on Las Vegas.

boards, just to name a few, and each station is


designed to push the limits of strength, agility
and endurance. Pourarian said Park took to
the course well and after 6 months of training
the idea of trying out for the show came up. At
first, Park was not so sure. After some research
the idea took flight.
Amitis told me to I should try out, so I
watched the show and when I saw a woman
my size (5-foot tall, 100 pound Kacy Catanzaro) actually completed the course, I was
sold, Park remembered.
Pourarian stressed that Parks work ethic and
drive to learn are what sets her apart from
many would-be competitors.
She has this desire to learn and master anything I put in front of her, the instructor
explained, and after a few months of training,
I felt she had a chance at the show.
In order to be considered for the television
adventure applicants must submit a video
showcasing their skill on Ninja-style courses. A
limited number are selected for regional competition. Those who make it through the area
competition move on to the finals in Las Vegas
for a chance at $1 million and, of course, the
title of American Ninja Warrior. Park was one
of 600 selected to compete at regionals from a
pool 50,000.
I started the class for fun and the next thing
I know, I am standing at the Venice Beach
regional competition, Park said.

Although she did not move on to the national level, Park did achieve the goal of making
the show. She intends to continue her training
and has set her sights higher for next year.
This year, I made the show, but in 2016,
I have my eye on Las Vegas, she confirmed.
For Pourarians martial arts studio, helping
Park prepare for next year has become a
team effort.

We are supplementing the regular training


classes with work in any area Shannen may
need to work on, Pourarain said. If it is explosiveness, the class works on it as a whole, if it is
upper body endurance, then the group will
focus on that area as well.
Selections for next years Ninja Warrior will
be announced in February. Until Park gets
a shot at making the finals, she will continue

to juggle family life, training, operating


the Rivers Edge Caf and just being a selfdescribed Ninja Mom. Anyone interested

ikram Yoga Granite Bay owner Patty Gray has been running her studio
on Cavitt Stallman for 15 years, and there are no signs of hot yogas
popularity simmering down any time soon. The Granite Bay View
caught up with Gray to talk all things yoga, and to answer the burning
question on the uninitiated mind: How can you stand the heat?

View: A lot of people love yoga, but hot yoga?

Especially in the summer?

Gray: Im turning 60 this month.


View: Youve updated the studio recently, can
you tell us about that?
Gray: The studio got fresh paint, new counters

and window tint, but the real update has been


in the class schedule. I have six instructors,
and weve added a yoga sculpt class, using traditional poses with light weights in a warm
room. Weve also added a yin yoga class in a
warm, not hot, room. Lastly, weve combined
Bikram poses with some flow movement for a
Power Fusion class.

Gray: You get used to it. I cant stand Sacramento summers. But being in that room, in
105-degree heat, it forces you to focus on
your breath and to get out of your head. It
really is addicting, and my students will
complain if the heat drops below 99 degrees.

View: Do you have any advice for those of us


who want to try hot yoga, but were a little
afraid?

View: Why is heat necessary?

Gray: Hydrate. Thats the most important

Gray: Heat is part of Bikram Yoga. And the

benefits are incredible. The combination really


improves your yoga practice. The heat calms
the nervous system, flushes toxins, helps your
circulatory and respiratory system, and increases your flexibility to perform the poses, plus you
just feel amazing when the class is over. In fact,
many yoga and pilates studios are adding heat
to classes because of the benefits.
View: How do you see yoga affecting peoples
overall health?
Gray: I have pregnant women who practice
through their ninth month, and students who
are ten years old to 80. Bikram yoga is antiaging for your skin; its like a full-body facial.
View: Any specific success stories?

Gray: Ive had students who have seen


improved blood pressure, and also a young
student, Hannah Stein, who stopped having
epileptic seizures when she started practicing
here three years ago. She said the practice
saved her life by eliminating her episodes and
decreasing her anxiety. Another student,
Chuck Mentz, is in his late 60s and has been
here for eight years. During that time he has
lost 25 to 30 pounds practicing Bikram regularly and participating in my Take Shape for Life
Health and Weight Loss program.
View: You talk about anti-aging benefits, and I
would guess you are mid 40s, has practicing
Bikram for nearly two decades helped you?

you come. We have specialized containers that
will keep water cold throughout the class, no
matter how hot, and students can be assured
that instructors are constantly watching everyone in class to make sure they are breathing
correctly, to help them in any way, and to ask
them to take a seat if they look fatigued. Sometimes on a first visit, the goal is just to stay in
the room the entire class, not necessarily to
practice yoga the entire time. And you cant try
the class just once.

routine should keep the focus on quality over
quantity. A few concentrated movements are
always more effective than dozens and dozens
of old fashion crunches.

feet and legs together as you lie on your right
side. Place your right arm under your body
and lift your upper body so that your right
elbow is directly under your shoulder. Your left

ground until a straight line is formed from
your ankles to your shoulders. Hold the position for a moment, slowly return to the starting position, and repeat.

Plank

When performed correctly, a simple plank is


one of the most effective ways to tighten your
entire core. Proper form is key. Keep your back
flat and your belly button pulled in toward
your spine. Lie face down on mat resting on
your forearms, palms flat on the floor. Push off
the floor, raising up onto your toes and resting
on your elbows. Keep your back flat, in a
straight line from head to heels. Tilt your pelvis
and contract your abdominals to prevent your
rear end from sticking up in the air or sagging
in the middle.

This vigorous variation of a standard plank


kicks the core tightening up a notch. Angling
your knees toward the opposite shoulder is a
wonderful way increase the intensity even
more. Place your hands wider than shoulderwidth apart on the ground in a push-up position. Bring one knee to your chest and then
back to the starting position, alternating each
leg quickly.

Side Bridges

All too often I see people neglect their lower


abs in favor of quicker, easier exercises. The
fact is that our lower abs typically need the
most work, so give them the attention that
they need with these Knee Tucks. Start on your
back, bend your knees with your feet on the
floor and knees touching. Extend both arms
overhead on either side of your ears, palms
facing up. Exhale and bring your knees up
towards your chest. Slowly lower your hips
back down to start position.

Nothing quite brings the burn like a properly done set of Russian Twists. By holding a
medicine ball or dumbbell in your hands, the
exercise becomes even more effective. Sit on
the floor with knees bent like in a sit-up
position. The feet should be kept together and
slightly off the floor. Keep your torso straight
and your back off the ground at a 45-degree
angle. Hold a medicine ball or dumbbell with

ecently, I went to visit my parents in Arizona. After we had gone out for dinner I
pulled the car up close to their apartment
and they got out and started walking towards
their door. As my father stepped up from the
parking lot asphalt to the sidewalk, he lost his
balance, fell backwards and landed on my
mother, who broke his fall and her own tibia
bone at the same time.
There is nothing worse than watching someone fall when you cannot help them. Falls are
more prevalent with seniors, though even with
all the precautions at times they will still fall.
But there is a lot that we can do: Since watching both of my parents fall it has made me
even more alert to potential hazards, and educate others to the risks.
Falls and fall-related injuries are the leading
cause of death in people 65 years and older
equaling more than 15,800 deaths per year. For

people 85 and older, one-in-five falls result in


death. Contrary to the myth that falls are
unavoidable accidents, most falls are the result
of manageable or preventable risks.
Physical changes that come with aging
make seniors more prone to falling. Changes
in muscles and joints make movement
increasingly difficult and make it harder to
correct for a sudden loss of balance. Changes
in vision make it tough for older eyes to adjust
to varying levels of light or perceive depth and
distance. Many medications, along with
depression, stress or lack of sleep, can also
affect a seniors judgment, balance and coordination.
One thing to remember is that seniors who
stay physically active improve their balance,
flexibility and strength. Exercise and socialization also reduces stress and depression, as well
as increases alertness and strengthens the

detect possible diseases, like glaucoma, that

A seniors own home presents risks, too.
There should be plenty of light in every room
and along hallways and in stairways. Motionactivated or timed lights can be particularly
helpful for nighttime. Emergency lighting or a
flashlight should also be within easy reach. You
can improve bathroom safety by having grab
bars installed in the tub or shower and by the

To reduce glare, only no-wax
cleaners should be used on
floors. Firmly secure handrails
are a necessity on both sides of
stairways and outside steps.
Steps should also have non-skid
treads. Furniture should not

block walking areas. Make sure


all electrical cords are out of the
way.

can also help prevent falls, especially if youre a senior who is living alone. Supervision is especially important for older people

Get ready for some amazingly
beautiful countryside where
American history comes alive
a place where the people
are nice and the beverage of
choice is always Bourbon.

Well, perhaps not always. There


is a bit of beer drinking in Kentucky,
as well as a plethora of wineries
emerging; but the bread and butter
of this state comes in glass jars and
bottles, emboldened with the name
Bourbon Whiskey.
The people of Kentucky
believe they own the term
Bourbon, and most would
agree. However, technically,
they dont. With all the craft
distilleries popping up around
the country, Bourbon will be a
much more common label;
though none will dethrone the
Bourbon boys of Kentucky, or
their heritage in the making
since the 1800s.
To be called Bourbon, the
contents must have a minimum
of 51-percent corn, be aged in
new oak barrels that are charred,
and distilled to no more than
160 proof. It also has to be put
into barrel at 125. Whisk(e)y,
on the other hand, which can be from Scotland,
Ireland, Canada, Japan or America, can be
distilled from most any grain mash including
rye, barley, corn or wheat and aged in regular
wooden barrels.
There are several must-see
Bourbon producers in Kentucky, particularly along whats
known as the Kentucky Bourbon Trail. The trail has an official
website with passports, maps and
deals. Its official motto is,
Where the Spirit Leads You.
While hitting the distillaries
in some areas you can visit
various Civil War battle sites
along the way, not to mention
stops with Blue Grass music
and good barbecue.
Its wise to visit just a few
Bourbon stops in a day, as the
alcohol content of a spirit is
much higher than wine.
Here are my top
recommendations:

BUFFALO TRACE
If you only have time to visit one distillery,
this is the one because it offers information
on so many different brands, including the
prestigious Pappy Van Winkle (not going to
get a taste though.) My favorites are Pappy
Van Winkle, Blantons Single Barrel, Buffalo
Trace, and Sazerac Rye (specifically for Sazerac
cocktails).

CHURCHILL DOWNS
Only 30 minutes from Buffalo Trace is the
famous Churchill Downs in Lexington. Buy
yourself a hat and get on over to the Kentucky
Derby Museum Tour of Churchill Downs
its an easy drive and a not-to-be-missed
adventure.

MAKERS MARK
Not right on the main trail but worth the
drive out due partly to its great Bourbon
and nice scenery. If youre making the trek,
you might as well take the Beyond the Mark
tour, which cost $35 and provides a much
more in-depth look at how this distillery
makes their Bourbon. The tour includes a set
of wax dipped rock glasses to bring back as a
memento. Reservations are required.

WOODFORD RESERVE
Woodford Reserve is a favorite for anyone
who loves sipping integrated barrel flavors.
Several tours are offered, including the twohour National Landmark Tour. If you are
there on a Tuesday or Thursday, take the indepth Corn-to-Cork tour, which gets into
the chemical, technical and sensory aspects
of Woodford Bourbon. From this distillery
you can take a break from Bourbon tasting
and hitch a ride on the Blue Grass Railroad.
Relax and let the scenic farm and horse
country go by.

BULLIET
Bulliet is my own go-to Bourbon for my
nightly Manhattan, and its distillery is located
in Louisville proper, with tours Wednesday
through Saturdays. If youre already going to
Louisville, then include Bulliet in your itinerary; but otherwise its too far from the major
Bourbon country to be worth the trip.
One Bourbon that you should taste while in
Kentucky is Angels Envy, which has a tasting
room that is scheduled to open in 2016. If you
are both a Bourbon and Single Malt Scotch
lover, this ones for you.
