Now that we are in the thick of summer with harvest season fast

Downtown Paso Robles Gains New Eeatery Dedicated to Simple, Wood-Fired Food and Classic Cocktails
Nestled smack-dab in the heart of downtown Paso Robles is The
Hatch Rotisserie & Bar. A creation and long-time dream of Maggie
Cameron and Eric Connolly, this new neighborhood eatery is
designed as a gathering place for friends, old and new, to enjoy
simple foods, classic and craft cocktails and beautiful wines. Located
at 835 13th Street in Paso Robles wine country, the duo has hired
Chef Mateo Rogers to oversee the kitchen, which includes their
dynamic wood-fired rotisserie.
Crafted without waste, the food served at The Hatch Rotisserie &
Bar has been inspired by both respect for where food derives along
with family traditions taught to both Maggie and Eric as children.
This thoughtful approach can ensure guests that each bite savored
has been prepared with care and enjoyment in mind.
Nothing brings people together like a home-cooked meal, and we
want to share with our guests the respect we have for food traditions
and for the people who grow and produce the food we eat, notes
Maggie Cameron, co-owner of The Hatch Rotisserie & Bar. Opening
the restaurant has been a dream come true for both Eric and myself,
and we could not be more thrilled to be doing so in this historic old
building in the middle of our Paso Robles community.
Boasting an open kitchen, diners will gaze at Chef Mateo Rogers as
he watches over the restaurants wood-burning rotisserie, swirling
with the likes of chicken, ribeye or lamb. Not only will the protein
on the spit change daily, The Hatch Rotisserie & Bar will offer their
organic rotisserie chicken and delicious sides for take-away, giving
patrons the excuse to come back day after day.
Those dining in will simply devour the plates created by Chef
Mateo Rogers. Each dish has been thoughtfully prepared with
ingredients sourced from talented producers that Maggie, Eric and
Mateo are fiercely loyal to due to their quality, consistency and
growing practices.
Cocktail hour is a way of life at The Hatch Rotisserie & Bar! Each
classic or craft cocktail, and every wine or local beer poured, has

2014 Sauvignon Blanc Estate Paired
with Chef Julies Pan Seared Halibut
When it comes to summertime wine and food pairing, the obvious
choice is to reach for a crisp, refreshing white wine. Sauvignon Blanc
is an excellent choice and in fact, has even been referred to as
summertime in a glass. To keep in line with the theme of
summertime, choosing a dish with light, fresh flavors is the way to go
when pairing with Sauvignon Blanc. Weighty white fish, such as
halibut, is a natural choice.
In this months Perfect Pairs, Vina Robles Vineyards & Winery
located on the Eastside of Paso Roblesbrings together the
refreshing flavors of their 2014 Sauvignon Blanc Estate with Chef
Julies pan seared halibut. This recipe features fresh ingredients of
Kalamata olives, an array of culinary herbs, pistachios and preserved
lemons, and is quite simple to prepare.
In its final form, the pan seared halibut is served on top of a bed of
pistachio cilantro pesto, then topped with the preserved lemon
Kalamata relishdelightfully fresh, zesty and flavorful. Both the
pesto and relish work beautifully to enhance the flavors and textures
of Vina Robles 2014 Sauvignon Blanc Estate.
Halibut, being the robust white fish that it is, really works well
with Sauvignon Blancespecially one that is fermented on lees.
Fermenting the wine on lees brings a fuller body and rounder
texture, which really complements the rich texture of the halibut. On
the other hand, this Sauvignon Blanc still retains a lot of nice
crispness and acidity, which works very well with the zesty flavor of
the preserved lemons, brininess of the Kalamata olives, and fresh
parsley and mint.
As for the pistachio cilantro pesto, additional texture is brought to
the dish with the crunchy pistachios, while the cilantro dances with
the gentle minerality and fruit flavors in the wine. Guava, pear and
hints of grapefruit in the Sauvignon Blanc mingle with the complex
flavors of this dish and make for a perfect summertime pairing.

n the southern end of the Central Coast appellation, lies Santa Barbara Countys historic
wine growing region. The first vineyard production in these rolling coastal hills dates
back to 1782, when Junipero Serra planted vines on Mission land. About a hundred years later,
there was 260 acres of luscious vineyards and seventeen winemakers in Santa Barbara
County. Sadly, the Prohibition Era destroyed many of these historic vineyard sites and mostly
put an end to winemaking in the regionas was the case in many of the beautiful winegrowing regions across the state. With that being said, the spirit and passion for winemaking
never left Santa Barbara County, and this wine growing region is alive and well today. Talented
winemakers are producing outstanding and pure terroir driven wines from the five American
Viticultural Areas (AVAs), planted mostly to Burgundian, Rhne and Bordeaux grape varieties.
Although the movie Sideways is said to have put San Barbara Countys wine growing
region on the map in 2004, especially the Santa Maria Valley AVA, it is the high quality of the
wine across the county that has continued to uphold this bountiful regions reputation.
Sprawling vineyards and gently rolling hills create a picturesque scene for visitors and locals
alike, who visit the many wineries, tasting rooms and wine bars in the area. In the five AVAs,
wine tasters will find a nice range of wine styles amongst the Burgundian, Rhne and
Bordeaux varietals that are produced.
In the more northern region, cool climate Burgundian varietals reign, such as Pinot Noir
and Chardonnay, due to the maritime influence. This ensures a long temperate growing
season which the Burgundian varietals crave. With ample amount of sunlight, the grapes ripen
very slowlyperfect for producing terroir driven wines with pure varietal characteristics. In
the southern region, there is more of a diurnal shift with warmer nights and cooler days. This
area sees less fog and has different soil types than what is found closer to the coast. The
Bordeaux and Rhne varieties flourish in this warmer climate and the sandy soils with limestone and chalk impart a wonderfully desirable minerality in the wines.
The wineries in Santa Barbara County boast a concentration of incredibly passionate and
talented winemakers; join them year round at their many events, celebrations and festivals, as
well as in their tasting rooms.

balanced approach to life and winemaking. Their unique style of
winemaking has led to some luxuriousresultsthe result of creativity
and trial and error. Born and raised in Santa Ynez, siblings Zac and
Almond Wasserman always had a love for wine. Experiencing a case
of post graduation funk and looking for a change of pace after
college, Almond moved back to the valley and worked for Andrew
Murray Vineyards. Excited about Syrah, she made her fist single
barrel of Syrah in 2007.
Zac soon followed suit under the direction of Joey Tensley of
Tensley Wines. Inspired by Los Alamos Syrah, Frequency Wines was
born, creating their first vintage in 2010, a 2010 Tierra Alta Syrah.
Passionate about French Rhne Valley wines, Frequency Wines
sources from Los Alamos vineyards, utilizing a variety of sandy soil
Syrahs. These wines show more transparency, more aromatics and a
lifted, light approach, such as the 2014 GSMsourced from 100%
Santa Ynez Valley fruit. Finding his unique style through
experimentation, Zac hopes to build a brand that offers a niche
market to grow a newer scene in Los Alamos. One that is fun,
approachable and inspired.
Inspired by his own love of wine and music, Zac created the Artist
Series, collaborating with some of his favorite musicians. The project
pairs together wine and music, as exemplified in the 2014 Artist
Series Syrah, featuring musician Toro y Moi (Chaz Bundick). For the
2014 inaugural vintage, Chaz designed the bottle art and created an
audio mix to listen to while enjoying the wine. With Syrah sourced
from the sandy hillside of Vernas Vineyard and Grenache from the
warm Santa Ynez Valley, the wine combines notes of spicy white
pepper and deep blueberry, with supple texture and fresh acidity.
Keeping frequency and balance in mind, the Wassermans create
wines that are complex and yet simple. Low key and family-run, their
winery is a reminder of what we are really here forto be in the
moment and to bring that energy into our lives. Hoping to grow with
the town, Frequency Wines offers an intimate approach to tasting.
