ENCHILADAS SINALOENSES fr 5 Personen

Ingredients /Ingredientes/:

3 Pasilla chile (they have to be dry) /Chile pasilla/

1 Clove of garlic /Diente de ajo/

hicken consomme powder (2 cubes or 2 tablespoon) /Consom de pollo/

Tomato puree (210 grs) /Pur de tomate/

Oil /Aceite/

Tortillas

Spring onions /Cebollita cambray/

1/2 Ltr. of water /Agua/

1 purple onion /Cebolla morada/

Lettuce (as much as you want) /Lechuga/

Cheese ( It's like dry cheese. You can grate it easily. The taste is kinda salty. The cheese that my

mom uses is called "queso fresco")

Avocado /Aguacate/

Sour cream /Crema agria/

White vinegar (1 tablespoon) /Vinagre blanco/

1 lemon / limn/ and a half

Steps /Pasos/:
The dressing or salsa:
In a pot or casserole you will pour the water in it and put the 3 pasillas chile there. You will cook
the chiles until they are soft or tender.
Then, you will remove the seeds and the little tail (the stick) from the chiles
Later, you will mix the tomato puree, a clove of garlic, 1/2 Ltr. of water and 2 tablespoons or 2
cubes of chicken consomme powder on the blender.
Prepare a pan putting 1 tablespoon of oil in it.
Then, you will strain the mixture you did with the blender on the pan. You will cook the mixture.
When it boils you will still cook it 2 minutes more and you'll turn off the oven. (You have to stir the
mixture or it will get stick on the pan)

The filling /relleno/:


Grate the cheese
Cut the spring onions like this:

Mix the cheese with the spring onions.

Lettuce /lechuga/:
Cut the lettuce like this:

Seasoned onion /Cebolla curtida/:


You will cut the purple onion like half moon, just like this:

Then, you put the onion in a container with very hot water. You will leave the onion there until it
gets soft or tender.
Later, you will remove the water from the container. Not strain, just remove the excess of water.
Remove that thin, kinda transparent layer from the onion.
Add the juice of a lemon and a half and 1 tablespoon of white vinegar to the onion.
Add salt as much as you wish. To taste :)
The color of the onion will turn to pinkish or something like that.

Tortillas:
In another pan, you will add some oil in it.
Put one tortilla in it until it gets kinda soft or tender (not crunchy)
Take the tortilla out of the pan and remove the excess of oil with a napkin.
Then you will put the tortilla in the pan where the salsa is. Cover all the tortilla with the salsa.
(The salsa must be hot)
Take the tortilla out of the pan and put it on a plate. Put the filling on the tortilla.
When you have your dish done (Like 3 enchiladas or more lol :P) put the lettuce above the
enchiladas, then the seasoned onion, avocado and then add sour cream as much as you want.
