Bipolymermicelles(derivedfromamphiphiles,whichhavebothhydrophilicandhydrophobicproperties)functional
groupsdemonstratedimprovedwatersolubility/dispersibilityandinvitroanticanceractivityofphytochemicals.
ButtheresearchersfromtheFoodScienceDepartmentatRutgersUniversityinNewJerseysaidmoreinvestigationwas
requiredintonanoimpacts,especiallyininvivo,toaddresspublicconcerns.
Thescientificreview,supportedbyUSDepartmentofAgricultureNationalResearchInitiativeProgram,notedtherewas
increaseddemandfor,functionalfoodingredientswithimprovedwatersolubility,thermalstability,oralbioavailability,
sensoryattributes,andphysiologicalperformance.
Phytochemicalsareanexampleofanutrienttypethatispoorlyabsorbedbythehumanbodyandwhichhavebeenthe
subjectofencapsulationresearchtoboosttheirperformance,viamethodssuchasintroducingothernutrientsincluding
polysaccharides,proteinsandemulsifiers.
Thesecontrolledreleaseapproachescanbeassistedwithnanotechnologymethods.
Althoughmanydifferentdeliverysystemsarenowavailabletodeliverybioactivecomponentsinnutraceuticalsand
functionalfoods,clearinvitroorinvivoevidencesoftheirbiologicalefficaciesarestilllimited,theresearcherswrote.
Phytochemicallipophilia
Theynotedtheproblemwiththemajorityofphytochemicals,suchaspolyphenolsandcarotenoids,istheirpoor
solubility,orthefacttheywerelipophiliccompounds.
Toovercomeinstability,poorwatersolubility,andtoenhancethebioavailabilityofnutraceuticals,oneoptiontoentrap
thecompoundofinterestintoafoodmatrixistousenanoemulsion,thewrote.
Comparedwithconventionalmethods,suchascosolventaddition,micronizing/milling,spraydrying,andsalt
formation,theuseoflipidbaseddeliverysystems,suchasmicro/nanoemulsionsandmicelles,offersmany
advantages...
Theseincludehighkineticorthermodynamicstabilitytheabilitytocombinehydrophilicorlipophilicphytochemicalsin
thesamenanoemulsionstheabilitytomoreeasilytransportdropletsthroughcellmembranes.
Theresearchersnotedthatwhiletheuseofpolyphenolsincapsulesandtabletsiscommon,theirbiologicaleffectsare
frequentlydiminishedorevenlostduetoincompleteabsorptionandfirstpassmetabolism.
TheresearcherssaidthatnanoencapsulationcouldbenefitCoQ10,omega3sandcurcuminamongothers.
Inconclusiontheyobserved:Nanoemulsionsbaseddeliverysystemshavebeenprovedtobeoneofthebestplatforms
toenhancetheoralbioavailabilityandbiologicalefficacies(thatis,antiinflammation,anticancer,andsoon)ofdifferent
phytochemicals.
Similarly,polymermicellesalsoshowpromisetoimprovethewaterdispersibilityofmanycrystallinephytochemicals,
suchascaroteneandcurcumin,andalsoshowimprovedinvitroanticanceractivity.Awidevarietyofdelivery

systemswithdifferentstructuresarenowavailable,andtheirdesignprinciplesarequiteclearnow.
Butquestionsremained:Forexample,whynanoencapsulatedphytochemicalshavebetteroralbioavailability?Howare
thecellularsignaltransductionpathwaysdifferentfornanoencapsulatedphytochemicalscomparedwiththe
nonencapsulatedforms?Arethenanoencapsulatedphytochemicalstoxic?
"Therefore,moreeffortsshouldbedevotedtothedevelopmentofnovelvalueaddedfoodgradeorGRAS(generally
recognizedassafe)materialsfrombiomass,aswellastheunderstandingofthepotentialimpactsofthese
nanoencapsulatednutraceuticalstohumanbodyandenvironmenttoaddressthepublicconcerns.
