MANY people are mad about instant noodles, with good reas on. They are cheap, eas y to prepare and,

well, instantly gratif ying. Children love them.


But are they good for you? Nutritionists would never say that eating the ubiquitous noodles every day is
healthy, but the occ asional bowlful will certainly do no harm.
Take a look at the ingredients list. The first item is always white flour. In dietary terms, this is a refined
complex carbohydrate. Carbohydrates are required for the processing of nutrients within the body and it
is also our main s ource of energy.
The second largest nutrient group in instant noodles is fat. Most of us eat pasta with the understanding
that it is a high-c arbohydrate, low-fat food. Not s o with the instant variety. "Most instant noodles are
dried by deep frying, and only 3 to 4 percent are air-dried. Instant noodles are about 18 percent fat,"
said professor Harold Corke, a wheat expert at the University of Hong Kong.
Nutritionists recommend that about 20 to 30 perc ent of daily calories come from fat. If you are at risk of
coronary artery dis eas e, avoiding instant noodles is advis able. But aside from health concerns, most
noodle lovers would choos e a fried variety simply bec aus e oil makes foods taste better.
There is, however, more to instant noodles than simply flour and fat. Potassium carbonate is a s alt.
W ithout this additive, the noodles would be s ofter, easily turning mushy. There is no nutritional value in
potassium carbonate, but it is not unhealthy. The s ame goes for the mysterious xanthan gum that often
appears toward the end of the ingredient list. It is a bacteria-derived food stabilizer that has long been
approved for human c onsumption.
The condiment pouches contain most of the product's salt content. Again, if you are required to maintain
a low-salt diet for blood-pressure reas ons, instant noodles are not appropriate. The flavor pouch als o
contains coloring to make the broth look more appetizing.
Dr. Edmond Li, a Hong Kong nutritionist, has this advic e: "Do not rely on instant noodles for a source of
vegetables. They are added only to make the dish more satisfying and are not intended to provide the
consumer with nutrition."
