CFS CutMaster, CutMaster V and CutMaster Duo

The CFS CutMaster uses an exceptionally fast (up


to 162 m/s), six-blade CFS TopCut knife system
that shortens processing times for particle
reduction, mixing and emulsifying for fine and
coarse sausage products. These machines are easy
to use, have an automated control system, and are
easy to clean and maintain.
FAST PROCESS TIMES
A high cutting speed and optimized cutting geometry enable
very fine emulsions to be processed extremely quickly.
Bowl filling of up to 95% further increases the productivity.
The bowl drive has a variable speed drive. The unique step
unloader disc is fast and effective for unloading liquid
products as well as high viscosity emulsions.
ADAPTABLE CFS TOPCUT KNIFE
The adaptable CFS TopCut knife system ensures consistently
quality for a wide range of products. Fine emulsions are
produced in combination with a removable sliding plate,
while removing the plate enables coarser cuts to be produced

The easy to change CFS TopCut knife system

95% bowl filling for high productivity

without smearing. The CFS TopCut knife is quick to install


(up to 80% faster) and very hygienic since residues neither
stick nor build up. The light weight enables safer handling
during assembly and disassembly. A range of universal and
special knives is available.
VACUUM FOR FIRM COMPACT EMULSIONS
The CFS CutMaster V carries out processes under vacuum
to eliminate air inclusions in the emulsion. The vacuum also
reduces the risk of jelly deposits, improves color and flavor
and extends the products shelf life. The resulting emulsions
are denser and more attractive.
TWICE THE CUTTING POWER
With two independently adjustable TopCut knife heads, the
CFS CutMaster Duo significantly reduces the processing time
and cost of high-quality dry-fermented sausage products
such as salami. It can process a 250 kg batch in around three
minutes, up to 45% faster than a single knife machine. The
CFS CutMaster Duo delivers highly uniform mixture and
granulometry.
MAINTENANCE FRIENDLY DESIGN
Features like the patented knife shaft seal, automatic bearing
lubrication and patented bowl-to-frame seal keep maintenance
requirements low. Knife changeover is fast, and cleaning time
is minimized because fewer parts need to be removed.

CFS CutMaster machines use CFS CutControl software to
monitor and control more than 60 functions. Optional CFS
CutControl Pro stores up to 100 programs. The control
system is compatible with CFS TrackMax and CFS Remote
Service software solutions.
