Introduo
Muitos alimentos so submetidos ao tratamento
trmico para serem conservados, e o aquecimento
pode levar a duas importantes reaes na tecnologia
de alimentos: a caramelizao e a reao de Maillard,
tambm denominadas de reaes de escurecimento
no-enzimtico.
Estas reaes tm impactos positivos em alguns
alimentos, como no desenvolvimento da cor e do
aroma da carne assada, caf e po (BOSTAN;
BOYACIOGLU, 1997; CARABASA; IBARZ,
2000), mas tambm levam a efeitos negativos, como
o bloqueio ou a reduo da biodisponibilidade de
aminocidos essenciais e da atividade de enzimas
