Creamy and spicy taco supreme macaroni


Ingredients:

1 tablespoon olive oil


1lb ground turkey
1 (1.13 ounce) packet Simply Organic Spicy Taco Seasoning
3 cups beef broth
1 (14.5 ounce) can diced tomatoes with green chilis
1 (4 ounce) whole green chilis, drained and chopped
2 cups dry elbow pasta
1 cup salsa
1 (15.5 ounce) can black beans, drained and rinsed
cup 1% milk
4 ounces cream cheese
1 cup shredded Monterey jack cheese
Instructions
1.
Heat olive oil, on medium heat, in a 6 quart dutch oven (or soup pot). When olive
oil is hot add in the ground turkey and cook until browned and no longer pink.

Stir in the taco seasoning and cook for another 3 minutes.

Pour in beef broth, diced tomatoes, chilis, and pasta. Bring to a boil then simmer
for 10 minutes or until the pasta is done cooking.

While the pasta is cooking make the cheese sauce. In a small pot, heat up the milk
over low heat. Stir in the cream cheese and continue to cook until it is melted. Stir in
the Monterey jack cheese and stir until all the cheese is melted and forms a cheese
sauce.

After the pasta is cooked stir in the black beans, salsa, and cheese sauce. Cook the
taco macaroni for another 10 minutes on low or until it starts to thicken up. Stir
every few moments or so. Remove from heat and let it sit for about 5 minutes. The
taco macaroni will thicken as it sits.

Serve with your favorite taco fixings

Oven omelette with sausage, peppers and onions


Cooking spray
6 fresh breakfast sausage links, casings removed
medium yellow onion, chopped
green pepper, seeded and chopped
cup chopped white mushrooms
12 eggs
cup 1% milk
1 cup of shredded cheddar
teaspoon salt
teaspoon freshly ground peppe

Greek Turkey roll ups- No bread

Ingredients:
1 slice deli turkey breast (use 2 slices if one is too thin)
1 tablespoon garlic flavored hummus
1 tablespoon crumbled feta cheese
1 slice tomato, chopped up
3 pitted greek olives, chopped
1 - 2 baby spinach leaves, torn into smaller pieces
Instructions
1.
Lay turkey breast out and spread hummus over the top. Sprinkle the rest of the
ingredients over top and then roll up the turkey breast. Cut in half and eat.
