Personally, I think Gertrude is on to


something. Let me explain...
On February 1st, my husband's
son Colton shipped of to U.S.
Marine Corps Boot Camp in San
Diego, California. While he is there
for 13 weeks, my husband and I
are doing our own boot camp back
home to show our support. We have both completely cut out alcohol and
we are both on these incredible Max Muscle Nutrition meal plans (many
thanks to our awesome coach Megan Casey at Max Muscle South Metro in
Colorado for her support and knowledge). We are taking our supplements
every day and we are hitting the gym at least four times a week. By week
six, we both lost 10 pounds each and every day we are slimming down in
inches all over our bodies and our body fat percentage is dropping. That's
the background story. Why the quote?
OK, since becoming the Editor in Chief of Max Sports & Fitness, I have
written and edited countless stories of people's transformations with
the help of Max Muscle. I believe this to be one of the most important
services Max Muscle provides changing lives for the better. One of the
common complaints from those who've undergone a transformation is all
the "naysayers" and "diet saboteurs" they encountered on their journeys. I
never fully understood this until recently.
I had one family member who has struggled with weight since her 30s
tell me that losing weight is harder to do the older you get (I just turned
41) and that I would most likely gain it all back so I shouldn't bother. I had
some friends at my own birthday party pushing me to drink wine with them.
When I asked my doctor if perhaps my hormones were a little to blame for
my weight gain, he told me that I should accept that I live in Texas and that
women are heavier here. Um, huh??
Yes, I have put on some extra pounds in the last few years. But guess
what? Until Feb. 1st, I wasn't truly living the healthy lifestyle I know how to
live. I was eating bad, drinking wine, not exercising my normal healthy
habits took a backseat to losing my father, going through a divorce, fnding
love, becoming immeasurably happy, losing my sister, working too much,
and being plain ol' lazy. Sure, I dieted here and there, worked out once in a
while, and I even gave up wine for a month. But I wasn't consistent. I knew
it was time to put an end to all the bad habits. For real this time.
So now when friends want me to drink with them, when people try to
get me to eat bad foods, or when my doctor tells me I should just accept
that I will be heavier because of where I live, I say, "Let me listen to me
and not them." You see, I know what I want. I know this is a lifestyle I have
to maintain for the rest of my life. It just feels too good! People who don't
invest in the lifestyle will fail. The weight will come back.
You have to decide every day to make the right choices. So listen to
yourself. What do you really want? What do you truly need? Forget the
naysayers. They have no power over you. Only you do. As Eunice Camacho
Infante said, "In the end, people will judge you anyway. Don't live your life
impressing others, live your life impressing yourself."

Making a True Lifestyle Change

In January 2015, I began


the MaxFormation
program with Steve
Lucchino at Max Muscle
Omaha, Nebraska. Te
program boasts a true
lifestyle change to not
just reach your goals,
but progress from there.
In addition to using
the great Max Muscle
products, I chose to do
the personalized meal
plan as well.
By enrolling in this
program, and working with Steve, I have learned a vast amount of information
regarding both health and ftness. As I look back from the last year, I would say the
most important thing I have learned is the importance of meal preparation. My own
personal mantra is, "If you fail to plan, you plan to fail."
Another important rule that I live by is to have healthy snacks available not only at
home, but at work and while travelling. One product in particular that I relied on is

2-3 Tbs. of golden faxseeds. Calorie

2-3 drops of liquid stevia to sweeten

the power and speed of your blender.
This recipe will make an

contains approximately 25 to 38
grams of protein, 30 to 35 grams
of carbohydrates, and 8-12 grams

banana will add about 40-50 calories
and make it very smooth.

muscles a good long time to recover after an event. The research studied 72 participants
in the 2015 Western States Endurance Run, a 100-mile race through the Sierra Nevada
Mountains of northern California, fnding that it took fve to seven days for blood samples
measuring muscle damage to return to normal. Participants reported an even longer time
for their running speed to return to normal.

Can Working Out Kill Cancer Cells?


Many cancer treatment centers include holistic therapies, such as diet, massage, and yoga
to help manage cancer and its symptoms. Tere may be one additional recommendation
based upon recent research reported in Cell Metabolism. Te study from the University of
Copenhagen showed that when mice spent time doing high intensity exercise, the surge
of adrenaline that comes with the workout helped to move cancer-killing immune cells
toward tumors, causing a reduction in tumor size. Tis research paves the way for human
trials that will help to guide docs in providing advice for lifestyle changes that will help
with treatment.

Melbourne researchers, especially if you have prediabetes. A new mouse study has shown that the lowcarb, high-fat diet touted by some celebrities even
if followed for a mere eight weeks can lead to rapid
weight gain and an increased risk for diabetes. The
fndings prompted the scientists to issue a warning
not to put faith in fad diets that arent backed by solid
scientifc evidence.

FEED YOUR GUT

Scientists have known for some time now that good


gut bacteria thrive on the veggies that we consume.
But a recent discovery by Australian researchers
made it clearer how this happens. According to the
research, E. coli bacteria, a type of bacteria found
in the gut, produce an enzyme that is used by the
bacteria to absorb and metabolize sugars found in
leafy green vegetables, like spinach and kale, for
energy. This assures a healthy population of good
gut bacteria, which in turn leaves less room for the
bad guys.

To Drink Or NOT TO DRINK?


Yet another study, this time from the Norwegian University of
Science and Technology, has shown that three to fve servings
of wine, liquor, or beer per week is heart healthy. But this
study was unique, claimed the researchers, because while
previous studies have contrasted
those who drink moderately
with those who rarely or
never drink, the non-drinking
population used in countries
such as the United States and
southern European nations
where almost everyone drinks
may have included people
who have stopped drinking due
to alcohol problems, making study
fndings less accurate. For this reason,
the researchers wanted to explore the issue
with a Norwegian population, where many
people drink rarely or not at all. The fndings:
the more often participants consumed alcohol
within normal limits (3-5 drinks weekly), the
lower their risk of heart problems like
heart attack and heart failure.

The New Frontier of Medicine

IF YOURE ONE of those people


who wont leave home without the
hand sanitizer, you may be surprised
to learn that the vast majority of
microbes those organisms too
small to be seen with the naked eye
which you come into contact with
are not the enemy. In fact, your body
is host to trillions of these tiny cells
(collectively called a microbiome),
about one to three times the number
of your human cells, living in your
mouth, nose, gut, and genitourinary
system as well as on your skin.

This bug portion of us is essential to


our health, said Bill Miller, MD, physician
and scientifc advisor to OmniBiome
Therapeutics, a pioneering company in
discovering and developing solutions
to problems in human fertility and
health through management of the
human microbiome. It determines our
metabolism, our taste in foods, and our
moods, and plays an essential role in the
development of our immune system.
According to Dr. Miller, what
scientists are learning about the
human microbiome may hold the key
to fnding treatments or cures for a
score of diseases and conditions that
have few treatment options at present.

Personalized microbial manipulation


is the new frontier of medicine, he
claimed.
Much of what is presently known about
the human microbiome, he continued,
is courtesy of the Human Microbiome
Project, a fve year, $115 million National
Institutes of Health initiative with the
goal of identifying and characterizing
the microorganisms living in and on
healthy human bodies. The ultimate goal
of this project, which began in 2008,
and subsequent microbiome projects,
is to determine how changes in the
microbiome are associated with the
development of diseases and to develop
effective treatments for them.

The human microbiome begins to


establish itself right at the moment
of birth, when the newborn is coated
with microbes from the mothers birth
canal, then continues to grow with
the ingestion of breast milk and from
contact with siblings, parents, and other
caregivers. As we age, our microbiome
changes, depending upon environmental
contact with pets, soil, plants, and
people, and also upon the foods we eat.
Every human being has a mixture of
microbes, including bacteria, archaea,
fungi, protists, and viruses and each
persons microbiome is different.
The function of each of the players
is so carefully orchestrated that the
microbiome has been described by the
American Academy of Microbiology
as a newly recognized organ with a
range of metabolic activities. Certain
bacteria in the gut, for example, aid in
the digestion of carbohydrates; others
break down the sulfur you eat in foods
like animal proteins and cruciferous
veggies to hydrogen sulfde, still another
reduces the sulfates to the proper level.
And on the skin and in the mouth and
genitourinary tract, good bacteria
produce compounds that inhibit diseasecausing pathogens.
Its when the balance of your
microbiome goes awry a condition
called dysbiosis that the trouble
begins, said Mark Heiman, PhD,
vice president and chief scientifc
offcer of MicroBiome Therapeutics,
a company that is
currently developing
microbiome
modulators to
shift bacterial
populations in the
gastrointestinal
tract. If you look
at people with
Type 2 diabetes, for
example, he said, they
have a lack of organisms
that ferment carbohydrate fbers.

Why do people develop dysbiosis?


While there may be a multitude of
factors, two of the most important
underlying reasons are antibiotic use
and diet. When you take an antibiotic
for an infection, it helps to eliminate
pathogens, and in some cases, may
even be life-saving. Yet the very thing
that helps you can cause damage,
because the antibiotic also kills off
other non-harmful microbes, and
alters microbiome activity, including
the function of the digestive system
and the immune system. Recent
research performed at the University of
Amsterdam suggested that while these
side effects of antibiotic use are short
lived in the microbiome of some
areas, such as in the mouth,
they can last for months
even years in the gut,
leaving you open to a host
of problems.
As for diet, our modern
Western diet doesnt
promote microbiome
diversity, which is the
ideal condition for human
health, said Dr. Heiman.
Years ago, we used to eat
virtually hundreds of plant
species, plants that were not treated
with pesticides, he added, and today,
the typical diet includes only 12 plant
species, many of them treated with
pesticides.
The more plants you eat the more
diverse your microbiome, explained Dr.
Heiman. And when plants are untreated
with pesticides, they develop their own
defense system of healthy microbes
that can help to fend off those bugs
and diseases that plague a plant. When
you eat a plant that has those healthy
microbes, you diversify your own
microbiome.
While it is too early and probably
too simplistic to suggest that complex
diseases like diabetes are caused solely
by dysbiosis, said Dr. Heiman, it
is most defnitely a contributing
factor in many diseases and
conditions, including arthritis,
allergies, asthma, infammatory
bowel disease, cancers, autism,
and obesity, to name just a few.
The potential for
microbial manipulation
to treat dysbiosis is
best illustrated by the
development of a successful
treatment for Clostridium diffcile, a

disease that is caused by the disruption


of normal healthy bacteria in the colon
(often following the use of antibiotics)
with fecal microbiota transplants (FMT).
A FMT involves delivering a slurry of
fecal matter (strained and mixed with
saline) from healthy persons through
an enema, colonoscopy, sigmoidoscopy,
or endoscopy for the purpose of
reestablishing a healthy and diverse
microbiome that will overpower the
C-diffcile bacteria.
Although a bit unappetizing to think
of, fecal transplants have revolutionized
the treatment of recurrent severe
C-diffcile, with an estimated success
rate of over 90 percent. Research
studies are underway
now to determine
the treatments
effcacy in other
bowel conditions
such as irritable
bowel syndrome,
Crohns disease,
and ulcerative
colitis. And
very recently,
a capsule
form of FMT
has been developed,
in which a frozen suspension of fecal
material from healthy donors is used,
raising hopes that a simple and effective
treatment for bowel conditions may
soon become mainstream.
But it takes more than just
introducing healthy microbes into the
body to reestablish health, said Dr.
Heiman. For one thing, a FMT is a
mish-mash of microbes which
are not identifed, and
it may be a particular
bacteria that performs a
particular function that
is needed. And even
if the correct microbe
is introduced, the
unhealthy host may
provide an inhospitable
environment where the
microbes wont survive and
maintain their population. Enter
companies like OmniBiome Therapeutics
and MicroBiome Therapeutics that
are exploring not just which bacteria
are needed to reestablish a healthy
microbiome, but what the bacteria
do. This means that a treatment for a
particular disease would focus on what
is missing as a result of depleted strains
of bacteria.

One study by MicroBiome


Therapeutics, for example, involved
treatment of people with diabetes 2 and
prediabetes, who have been determined
to have a different microbiome makeup
than people without those conditions.
A formulation of inulin (a fber), beta
glucan, and antioxidants dubbed
NM504 was given to half of a group
of people with these conditions twice
a day, with the other half receiving
a placebo. Those who received the
NM504 had a shift in the makeup of
their microbiome (determined by stool
samples), and also had improved blood
sugar control as well as diminished
hunger.
After completing this study,
MicroBiome Therapeutics developed
another formulation called MT303,
derived from whole soybean pods, using
it in a study on obese mice. Those who
were given the MT303 showed a positive
change in their microbiome populations,
and also showed decreased weight gain
and less colon infammation.
Theres no doubt that as research
continues on the underlying mechanisms
by which the human microbiome affects
our health, we will see a number of safe
and effective therapeutic treatments for
diseases and conditions that are as of
yet, poorly understood and inadequately
treated. The more we look at the
associations between changes in our
microbiome and our health, the more
we understand what an important
impact it has on us, said Dr. Miller.
Someday we will see personalized
microbial management, and it will
revolutionize medicine. It will take a
few decades before we really truly
understand what were doing, but Im
flled with optimism, he said.

SHOULD YOU STOP


WORRYING ABOUT GERMS?

If the vast majority of microbes that


you encounter in life are harmless, even
benefcial for your microbiome, does this
mean that you should stop doing the
things you do to protect yourself from
germs?
Maybe to some extent, say experts.
Research has suggested that increased
levels of hygiene over the past century
(such as using antimicrobial soaps and
cleaners or keeping our homes airtight)
has led to less diverse microbiomes
and poorer health. Its still important,
though, to protect yourself and
others against harmful germs by hand

hygiene products, and environmental
cleaners, because they can kill off
healthy microbes not to mention
promote antibiotic resistant strains of
pathogens. And try not to stress too

to pets and some dirt can help to
diversify your microbiome.

SUMMER IS JUST around the corner and what better way to rock your
tank top, bikini, or strapless dress than with sexy, sculpted shoulders?
Having nicely shaped and toned shoulder caps (deltoids) gives your
physique a balanced, hourglass fgure. Who wouldnt want the appearance
of having a smaller waist and a more proportionate hip width? My
shoulder routine will target every angle (anterior, medial, and posterior)
of your deltoids to give them a full, rounded look, creating balance,
symmetry, and proportion.
When choosing a weight, keep in mind that in order to gain the results
you are looking for you must lift heavy to really tax your muscles. Doing
so will develop your deltoids faster than you think and you will be ready
for summer in no time! Select a weight that is challenging, yet safe. If the
weight you choose cannot be executed with proper form or without using
momentum and swinging the weight, then it is wise to select a lighter
weight. The weight should be challenging enough to complete the last
three repetitions of your set with a struggle.

Growing up all through my high school years
I never had weight issues. I lived life without
any concern of my physical appearance. It was
not until I reached my sophomore year in high
school that my weight started to creep up. Over
the course oftwo years, I gained nearly10
pounds. I started to become self-conscious; my
clothes were not ftting as they were intended. I
knew I needed to shed some body fat but I had
no idea how to go about it.
My only thoughts were to reduce my daily
caloric intake. Little did I knowI was about
to embark on a downward spiral of various
eating disorders for the next fve years. I began
jumping around from fast weight-loss remedies
to low-carb diets, extreme cleanses, food

restricting, bingeing, and purging.I developed


anxiety, depression, anger, jealousy, and
self-hatred. I hated who I became.I thoughtI
would forever live life in a constant battle with

After countless diets and years of starving
myself,it was time to put an end to that vicious
cycle. I made a promise to myself on July 14,
2010 that I would do anything possible to
overcome my old habits. Now, over fve years
later of consistent training and proper nutrition, I
am a completely new person.
After my second year of training I decided to
take on the challenge of competing in my frst
NPC Bikini Competition. Taking home the 1st
place trophy motivated me to continue. Ientered
three more shows, placing 1st, 2nd, and 5th.
Along my journey, I have had many
accomplishments and have overcome many
obstacles. Mygreatest joy now is being able
to help others through their journeys and
experiencing their changes with them! I have
no words for the feeling I gethelping my clients
transform their lives, become stronger, and gain

WARM-UP: Shoulders are prone to injuries if they are

not warmed-up properly. Before beginning my workout I


like to start with arm circles, performing these in a forward
motion and then reverse for approximately 2 minutes. I also
perform one set of the frst exercise using a lighter weight
for 20-25 repetitions to warm them up.

FOR THE WORKOUT: Complete all three sets


of each exercise before moving on to the next exercise.
Rest period between sets vary anywhere between 30-90
seconds. Find the number of sets and reps at the end of
each exercise description. Always use proper form and
make sure you breathe correctly!
Standing Dumbbell Shoulder Press
Standing straight up with your feet shoulder width apart, with a
dumbbell in each hand. Raise the dumbbells to head height, elbows
out with a 90 degree bend. This will be your starting position.
Extend through the elbow to raise the weights together directly
above your head. Pause, and then slowly return the weight to the
starting position. Exhale as you execute and inhale as you lower the
dumbbells back down slowly to the starting position.
Do 3 sets of 12 reps.

Dumbbell Front Raise

Stand with a straight torso and the dumbbells in front


of your thighs at arms' length with the palms of the
hands facing your thighs. While keeping the torso stationary, lift one dumbbell to the front
with a slight bend in your elbow. Lift up until your arm is slightly above parallel to the foor.
Exhale as you execute this movement with a slight pause at the top. Lower the dumbbell
back down slowly to the starting position as you inhale and then alternate arms.
Do 3 sets of 12-15 reps (per arm).

Dumbbell Lateral Raise

Stand with a straight torso and dumbbells by your sides at arms' length with the palms of
the hands facing you. While keeping the torso in a stationary position, lift the dumbbells
to your sides with a slight bend in the elbows (do not lock your elbows). Continue to go up
until your arms are parallel to the foor. Exhale as you execute this movement with a slight
pause at the top. Lower the dumbbells back down slowly to the starting position as you
inhale. Do 3 sets of 12-15 reps.

EZ-Bar Upright Row

Grasp an EZ-bar (curl bar) with an


overhand grip that is slightly less than
shoulder width. The bar should be
resting on the top of your thighs with
your arms extended and a slight bend in
your elbows. Your back should be kept
straight at all times. This will be your
starting position. Exhale as you execute
this movement, using the sides of your
shoulders to lift the bar raising your
elbows up and to the side. Keep the bar
close to your body as you lift until you
reach the top of your chest. Pause and
lower the EZ-bar back down slowly as you
inhale. Do 3 sets of 12 reps.

Dumbbell Bent-Over Reverse Fly

Place feet shoulder-width apart. Bend at the knees and bend over
at your hips keeping a fat back, close to horizontal. Bring two
dumbbells together hanging down below your chest with your
elbows slightly bent. Raise arms to your sides until elbows are slightly
higher than shoulders. Keep upper arms perpendicular to your body
and elbows pointing up. Exhale as you execute this movement with a
slight pause at the top. Lower the dumbbells back down slowly to the
starting position as you inhale. Do 3 sets of 15 reps.

Standing Single-Arm Cable Rear-Delt Fly

Stand perpendicular to the machine with feet shoulder-width apart. The cable
pulley should be even with your shoulders. Grip the cable with the hand furthest
from the machine while resting the opposite arm on the hips. Keep your arm
extended in front of you and parallel to the foor. Initiate the movement by moving
your arm back and outward, keeping your arm straight and parallel to the foor
with a pause once your arm is extended to your side. Exhale as you execute this
movement and with a controlled motion return back to starting position as you

IT'S SO EASY to get caught in a rut.


As routine oriented as humans are,
we sometimes fnd ourselves going to
the gym, day in and day out, ultimately
leading us to feel bored, tired, and in
the worst cases, like quitting.
This workout is designed to provide
you with a simple way to get out and
enjoy the weather and break it up from
the monotony of the gym. Since these
are body weight movements, it's not
recommended to replace more than
1-2 days per week with these workouts.
Give this workout a try in this order for
a quick, high-intensity cardio burn that
not only recruits some new muscle
fbers, but burns up some of that
subcutaneous fat as well!

Outdoor Workout
WARM UP: Find some good stairs (or at least a hill) and run up them for 3 minutes
GLUTE AND HIP FLEXOR STRETCH: Press up against a bench and step into a lunge
position and stretch
10X10 PUSHUPS: 10 pushups, rest for 10 seconds, 10 pushups, rest for 10 seconds (repeat
for 10 total sets of 10)
30-SECOND INTERVAL RUNS: 30 seconds on, 1 minute rest for 5 total rotations
PULL-UPS: Do as many as possible, rest 1 minute, then do as many reps as possible
STEP UPS SUPER SET WITH JOGGING: Bodyweight step ups, 30 reps single leg, jog for
60 seconds, repeat with other leg for 30 reps (repeat this total cycle for 3 rotations)
SINGLE LEG HAMSTRING STRETCH: Hold for 60 seconds each leg
Now you've got it! A quick cardio variation that gets you outside!

IN APRIL OF 2012, Ashley Azevedo was


involved in a car accident that left her with
bulging discs along her spine and a post
concussion syndrome. However, the biggest hit
she sufered is that she was told she could not
lift heavy or run again. She began an arduous
yearlong series of treatments.
The efect of the accident made me
diferent as a person and I had a hard
time coping, Azevedo said. Once I
was released from treatment I became
determined to get myself back mentally
and physically. I knew if I could get
myself going physically, everything
would change.
Azevedo continued her rehabilitation
on her own, working to get back into the
gym and running.
Change did come, albeit gradually. It was
a slow process, Azevedo said, but I came
back with a completely new mind-set. I was
just so grateful for my mobility.
She competed in her frst ftness
competition in April 2014 to celebrate
how far she had come in two years.
Azevedo has successfully been able
to build herself back up, yet states she
learned a far greater lesson: that ftness
is really more about how you feel and

IN 2007, Gina Turner decided that
shed had enough of being obese. Prior
to having her second child in her 20s,
she had never been heavy, but after
that second pregnancy she struggled
to lose weight in fact, she started
gaining. I was unhappy in my current
situation and really let myself go, she

not caring about the consequences and

personal trainer. Ive had a couple of
great trainers, but the one Ive trained
with the longest and has really made an
impact on my ftness is Joshua Voight,
she said. He pushed me even at my
weakest points, kept me motivated,
and never gave up on me! She started
off slow and walked a lot until she was
ready to move on to a more regimented
workout. The walking transitioned to
cardio then to strength training and
weights. Eating clean and working out
4 to 5 times a week resulted in some
awesome changes! I felt better on the
outside and inside, and I felt a spike in
my energy level, she said.
In a year and a half, Gina lost 100
pounds, of which she has gained back
10. After losing the weight, its not
over. You work on maintaining and you
set new goals that require even more
discipline, she said. I never deprive
myself and make sure I have a cheat
day, but I dont indulge all day and
limit it to a meal or a dessert. And I
also accept that my body will never
be perfect no matter how hard I try
because that can be discouraging and I

Here are seven food
trends to get excited
about this year.

IF YOUVE ever eaten a depressionera inspired comfort food like


creamed tuna fsh and peas on
toast, or made a 70s recipe using
a boxed mix or canned soup (think
green bean casserole) you know
that food trends throughout history
refect the social culture of the time.
These days, some of us might cringe
to consider Manwich Sloppy Joes
or a Hamburger Helper casserole
for dinner, but these foods were
cost efective and time saving
innovations during the days that
women increasingly began working
outside of the home and the pace of
life became too hectic for traditional
home-cooked meals.
Today, there is an increased
understanding of the impact of food
upon our health, and also an interest in
the impact of food production upon our
environment. This knowledge is key to
2016s food trends, which, in a nutshell
are focused upon foods that are good
for you, good for the planet and just
plain old good. Some of the trends youll
see this year, according to food industry
experts:

Move over, meat! I see vegetables


taking over more space on the plate
traditionally reserved for meat or fsh,

1. Veggies Taking the Spotlight:

in part due to the
increased knowledge that too
much meat is just not good for you or
our planet, he explained.
But dont expect to see the same
old tired green beans on your plate.
Consumers are demanding that the
vegetables they are served become
ever more favorful and diverse, added
Ahern. At Als Place, for example, you
can snack on French fries with smoked
applesauce followed by a yellow eye
bean stew with torn bread. And one
of Vedges signature sandwiches is a
wood carrot kimchee Reuben on rye
with sauerkraut puree.
If youre a DIY person, youll be
able to fnd plenty of unique veggies
at the grocery or local farmers market
to prepare at home. One relative
newcomer to try is kalettes, also
called fower sprouts or lollipop
sprouts. A cross between red kale
and Brussels sprouts, these compact
little shuttlecock shaped veggies are
fnding their way into top notch eateries
and into home kitchens as well.

2. Root-to-Stalk Cooking: Remember


when nose to tail cooking became
hot? The same principle that drives the
use of an entire animal when cooking
(sustainability, health
benefts) applies to veggies
as well. Restaurants
are trying to incorporate
hitherto discarded items on
the plate, encouraged by the
likes of Dan Barber, who has
begun a program to use such
items as broccoli leaf and kale
stems in his salads, said Ahern.
Aherns company, Baldor
Specialty Foods, one of
the largest importers and
distributors of fresh produce
and specialty foods in
Northeast and Mid-Atlantic
region, has responded to
this interest by initiating a

plan called SparCs to eliminate food


waste from its supply chain by offering
veggie trims, tops, and peelings from
their processing facility to both chefs
and manufacturers. And, according to
Ahern, the company is exploring other
innovative ideas for reducing food waste,
such as using these leftovers in products
like gluten-free four.
Even if you havent dined at Dan
Barbers Greenwich Village restaurant,
you can follow the root to stalk trend at
home by cooking the beet greens with
your beets or broccoli leaves with the
forets.

3. Increased
Demand for High-Quality Protein:

Sure, grass-fed, antibiotic free,


sustainably grown meat is a bit pricier.
But a little meat goes a long way on
the plate, and consumers are springing
for smaller cuts loaded with healthy
Omega 3 and CLA fatty acids, free of the
harmful effects of routine antibiotic use,
and grown with thought to improving the
quality of land where the animals graze.
Restaurants are moving toward
embracing sustainable practice with
seafood as well, said Ahern, by
purchasing locally caught fsh and
making this the special of the day,
rather than promoting the overfshing of
tuna and swordfsh.
People are opting for healthy new
old meats, too, such as bison, said
Chris Flocchini, CEO of Sierra Meat
and Seafood, a third generation meat
company that boasts the 55,000 acre
Durham Bison Ranch in Wyoming. Bison,
explained Flocchini, is a meat that is a
very high source of protein with a lower
calorie and cholesterol count than beef,

pork even chicken and salmon. Bison


has hit the mainstream, he claimed. At
this point, theres more demand than
supply.
In addition to bison, look on the menu
for other non-traditional uber-healthy
meats, such as venison, elk, rabbit, and
ostrich.

4. Less Sugar: Sugar has muscled out


fat as the new food villain, according to
Anna Castellani, co-owner of Foragers
City Grocer, a small grocery with two
locations in New York city that sell
mostly organic foods from local farms,
including Castellanis own upstate 28
acre spread. People are looking for
foods and snacks, like granolas
and energy bars, with low to no
sugar, she said.
And for good reason. Research
has shown that sugar, found in
the obvious food culprits like soda,
cake, cookies, and candy, as well
as that hidden in products like
salad dressings, spaghetti sauces
and the like, may be worse for us
than fat. Excess sugar damages
the heart, promotes obesity, affects
brain aging, and is even linked with
cancer formation.
Sugar-savvy shoppers at Foragers
are buying healthier (and delightfully
trendy) snacks with low sugar counts,
such as White Mustache Yogurt, a
product made of whey and sweetened
with fresh fruit, or BjornQorn popcorn, a
non-GMO organic popcorn popped with
solar kettles and seasoned with high B
vitamin brewers yeast.
If you cant pick up your low-sugar
snacks at Foragers, pare it down with
products like 18 Rabbits Veritas Granola,
with only 6 grams of sugar (unrefned
honey or maple syrup) per serving,
Bionaturaes no sugar added organic fruit
spreads, or Almond Honey Rise protein
bars, with only 13 grams of sugar. And
if youve never tasted LUV ice cream,
which is sweetened with organic Stevia
and sells in Minnesota or Wisconsin,
youre in luck. LUV, a company that

sugar-free delectable treat.
5. Fermented Foods: Okay, fermented
foods have been around since about

known how good these foods are for
you. From cultured milk products to
sauerkraut, fermented foods are packed
with good bacteria probiotics that result
from the fermentation process. What
they do improve digestion, increase
immunity, and possibly, result in weight
loss.
According to Castellani, fermented
foods are incredibly popular, with a
growing interest in alternative milk
sources, such as sheeps milk, and in
dairy-fermented foods like yogurts and
kefr. And chefs are fnding new uses
for kimchi sauerkrauts spicy Korean
cousin by placing it on top of old
American favorites, such as burgers
and tacos.
Bellying up to the juice bar is the
Kombucha trend, an industry that
according to research frm Euromonitor
International, is projected to turn into a
$650+ million business in U.S. sales by
2019. Look for Kombucha, a fermented,
tangy, effervescent tea, favored with
herbs or fruit, at your local health food
store.

6. Year of the Pulses: What in the


world are pulses? These are dried peas,
edible beans, lentils and chickpeas
not new ingredients in popular cuisine,
but their importance has moved to the
forefront of the food industry. In fact,
The Food and Agriculture Organization
of the United Nations recently named
2016 the International Year of the
Pulses, lauding the grain legumes for
their healthy dose of protein and fber.
And they are good for the earth, too,
according to Ahern. While being full
of nutrients and amino acids, they
reduce the demand for meat and
provide nitrogen fxing to
improve overall
soil fertility,
he said.
If you

lately, try

in your
scrambled eggs
along with kale
and tomatoes, or top
a spinach and beet salad
with cooked lentils and goat
cheese. And of course, theres
good ol' split pea soup!

7. Complex Flavors: Blame it


on travel and cooking shows,
but borders continue to blur
and people are craving food
adventures with an international
fair. An increasingly popular
favor trend is sweet heat, or
the pairing of hot peppers from
around the world with sweet
favors; restaurants are jumping
on this trend with Sriracha
and maple syrup over roasted
veggies, chicken with jalapeoinfused honey, pork chops with
jalapeo jelly, and chipotle
barbecue sauce on ribs. Even
snack foods are refecting the
sweet heat craze; youll fnd
Noosa Yoghurt (available in Colorado)
in blackberry serrano favor, and sweet
and spicy favors in meat sticks, such
as Vermont Smoke and Cure in ancho
pepper turkey and chipotle beef and
OSTRIM Beef and Elk sweet and spicy.
Complex spice blends are becoming
popular, too, with Shichimi-Togarashi
(also called Japanese Seven-Spice),
a blend of red chili pepper, black
pepper sesame seeds, dried orange
peel, seaweed fakes, and poppy
seeds showing up on pastas, burgers,
sushi, and in cocktails, and Berbere,
a fragrant hot Ethiopian mix with
cardamom, hot peppers, paprika,
cumin, clove, cinnamon, fenugreek,

nutmeg, turmeric, and ginger being


used as a rub or mix for braised foods.
And topping the list of spices is
spice of the year turmeric, the spice
that makes curry powder yellow. Its
not the powdered form but the fresh

importation and use of this relatively
innocuous root has increased, and
for good reason, said Ahern. Its
thought to help with everything from
being an anti-infammatory to lowering
cholesterol and improving liver

Cycling Performance

L-Citrulline is an amino acid present in the body and is a


potent endogenous precursor of L-arginine, which is a
substrate for nitric oxide synthase. Many human studies
report that nitric oxide improves sport performance.
Researchers from Kitasato University, Tokyo, Japan
investigated the efect of oral L-citrulline supplementation
on cycling time trial performance in humans. A doubleblind randomized placebo-controlled 2-way crossover
study was employed. Twenty-two trained males
consumed 2.4g/day of L-citrulline or placebo orally for
7days. On Day 8 they took 2.4g of L-citrulline or placebo
1h before a 4-km cycling time trial. Researchers found
that L-Citrulline supplementation signifcantly increased
plasma L-arginine levels and reduced completion time by
1.5percent compared with placebo. Moreover, L-citrulline
signifcantly improved subjective feelings of muscle
fatigue and concentration immediately after exercise.

Researchers from Chonbuk National University, Jeonju, Korea investigated


the efects of Gynostemma pentaphyllum (GP) on body weight, fat loss, and
metabolic markers of obese Korean participants in a 12 week, randomized,
double-blind, placebo-controlled clinical trial. The 80 subjects were randomly
divided into the GP supplemented or placebo groups. During 12 weeks
of GP supplementation, total abdominal fat area, body weight, body fat

in any safety parameter were observed. Researchers
concluded that GP is a potent anti-obesity reagent that

Medicine [IOM] established adequate
intake recommendations for water
based on national surveys. These
recommendations are 16 cups/day or
1 gallon/day for men, and 12 cups/
day for women. According to these
hydration guidelines, moderately active
adults in warmer climates may require
a minimum of 1.5 gallons/day of water.
Therefore, a hard-training bodybuilder
or endurance athlete will likely need
even more than the 1.5 gallons/day
recommendation.

clear soon after pounding the fuid.
So, its best to provide your body with
water consistently throughout the
day.
Thirst has been shown to be an
inadequate indicator of hydration
status. Once you feel thirsty, you
are likely already dehydrated by 1-2
percent body mass. Rehydration
doesnt occur until well after thirst
has been quenched. Therefore, dont
solely rely on whether you feel thirsty
to decide on reflling your water
bottle.
Athletes should aim to be
hydrated prior to activity, hydrate
extra during activity, and continue
regular hydration throughout the
day after exercise. According to an
ACSM position paper, variability in
sweating rates and sweat electrolyte
content between individuals requires
customized fuid replacement
programs. Individual sweat rates
can be estimated by measuring body
weight before and after exercise.
Caffeinated beverages, such as
coffee, tea or energy drinks, DO NOT
count toward your hydration goals.
Caffeine has a diuretic (fuid-draining)
effect on the body.
