fter shiraz, cabernet sauvignon is the

second most widely-planted red wine grape
in Australia and without doubt is one of the
great varietals of the world.

Its rise to fame can be attributed to its

prominence in Bordeaux wines, where it is often
blended with merlot and cabernet franc. It is
grown in nearly every major wine producing
country and across a diverse spectrum of
climates, from Canadas Okanagan Valley to
Lebanons Beqaa Valley.

ripe dark
berry fruits,
blackcurrants
and plums.
The palate
is rich and
flavoursome,
full of plush,
dark fruit
with some
savouriness
and hints
of oak. The
tannins are
soft making
this a classic
regional style.

Despite its prominence in the industry, the grape

is a relatively new variety. It is a product of a
chance crossing between cabernet franc and
sauvignon blanc in south-western France during
the 17th century.

Its popularity is often attributed to its ease of

cultivation the grapes have thick skins, hardy
vines, are naturally low yielding, bud late to avoid
frost and are resistant to viticultural hazards
such as rot and insects. The grapes are also late
ripening, so it is more suited to warmer climates.

The classic profile of cabernet sauvignon tends to

be medium to full-bodied, with high tannins and
noticeable acidity that contributes to the wines
ageing potential.
In cooler climates, cabernet sauvignon tends to
produce wines with blackcurrant tones that can
be accompanied by capsicum, leafy or herbal
tones, mint and cedar which become more
pronounced as the wine ages.

In more moderate climates the blackcurrant

tones are often seen with black cherry and black
olive tones, while in very hot climates the current
flavours can veer towards the over-ripe and
jammy side.

different style and Australia is no exception,
with each key region imparting its own style or

In the Coonawarra, cabernet sauvignon wines

tend to have a unique characteristic of eucalyptus
or menthol tones, while the Margaret River
region cabernets are more tightly structured with
pronounced black fruit tones.
Cooler climates like the Clare Valley produce
wines with more concentrated fruit, while those
from the Yarra Valley are noted for their balance in
acidity, tannins and fruit flavours.

SOUTH AMERICAN PULLED BRISKET

SLIDERS WITH CHIMICHURRI SAUCE
Ingredients

1 x 2 kg beef brisket, kept whole

Green salad
4-6 brioche buns

Marinade for Brisket

1 teaspoon mustard powder

1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon ground chilli
1 teaspoon paprika
1 tablespoon salt
2 tablespoon brown sugar
1 x 400g can tinned tomatoes
cup water

Chimichurri Sauce

Makes 1 cups

3 cloves garlic, peeled and crushed

bunch coriander, chopped
bunch parsley, chopped
1 jalapeno, chopped
2 tablespoons red wine vinegar
cup 125ml olive oil

Juice of lemon
Salt

Instructions
1. Preheat oven to 150C
2. Place brisket in a deep roasting
pan
3. In a pan, combine all marinade
spices. Cook 2 minutes, stirring to
release the aromas
4. Add the brown sugar, tinned
tomatoes and water
5. Cook 10 minutes and pour over
brisket
6. Cook, covered, for 4 hours, then
uncover and continue to cook
for 2 more hours until gelatinous,
basting with the pan juices
occasionally
7. Cover loosely with foil and rest for
20 minutes
8. Shred with a knife and fork or cut
into slices
9. To make chimichurri sauce,
combine all ingredients and use a
stick blender to blend to desired
consistency
10. Serve the brisket with chimichurri
sauce, brioche buns and green
salad

urgerpalooza: heaven on earth one might

say. The place was full of burger-loving
people, all looking for their favourite
burger of the day. It was quite a difficult task
deciding between the venues that came to
play, including BL Burgers, Milk Bar by Cafe
Ish, Chefs Kitchen, Pub Life Kitchen, Barrio
Cellar, and Bare Grill. There was also One Tea
Lounge featuring their mini ice-cream baoger
sliders.
I could write pages on what I thought of the
day, but there were a few highlights that
stood out, in particular Bare Grills burger,
the Son of a Cock-fighter. This burger was
an awesome combination of southern fried
chicken, guacamole, lettuce, cheese, bacon,
and Bare Grill sauce. Out of all

the burgers of the day, this was

the clear winner and many others
thought so too, with the line being
consistently longer than most
other options. Despite the influx
of people and the demand for a
quick turnaround, Bare Grill still
managed to produce the goods.
This burger would be in the top
3 chicken burgers I have eaten,
and Id recommend visiting the
restaurant.
The other highlight of the day
was One Tea Lounges ice
cream baogers. These were deep-fried
baos with ice cream, red bean paste, and miso
caramel sauce. This was a completely new
idea to me, and was a nice change from
the usual savoury burgers. My personal
favourite was the lychee flavour, with
the hot bao and cold ice-cream creating
the perfect treat. The One-Tea Lounge
experience really topped off the day.
Theyre also known for their Asahi burger
which I think will be coming up on my
burger hit list.

varying degrees of chilli, including some of the
hottest in the world. The winner was left redfaced and sweating profusely, all for the glory
and a pair of sunglasses.

Burgerpalooza was a success in that it brought

venues together and allowed people to try their
offerings all in one location. It was good to see
a great turnout, supporting the hard working
