Roasted Sea Bass with Chive, Crme

Fraiche, Green Beans and Baby
Potatoes

I Pkt of fresh Green beans

1 Tablespoon of lemon juice
500g new potatoes
100g crme fraiche
6 tbps olive oil
1 tbs shredded fresh basil
100ml fresh vinaigrette
2 shallots finely chopped
1 tbsp sherry vinegar
2 tbsp cream
4 x 200g fillets of sea bass
sea salt and fresh black pepper

Boil the baby potatoes until just cooked and drain off all the
water.
At the same time take the beans and wash under the trap pat
dry and with a small knife chop off the two ends of the beans.
Put on a pot of boiling water and add a pinch of salt to it. When
the water comes to the boil, drop in the green beans and cook
for no more than 4 minutes. Drain off the boiling water.
Mix the chopped chives with the crme fraiche and place to one
side in the fridge.
Next heat 2 tbsps of the oil in a frying pan and saut the
potatoes until golden brown on either side this will take about 5
minutes. Remove the potatoes from the oil, leave a plate to one
side with a bit of kitchen paper on it to remove any excess oil on
the potatoes. When you have this done mix the warm potatoes
with the basil and the vinaigrette leave to cool.
On a low heat saut the shallots in a frying pan until soft deglaze
the pan with the sherry vinegar or a drop of white wine instead.
Stir in the cream, allow to reduce slightly for 2-3 minutes and
season.
Gently score the skin of the fish with a sharp knife and lightly
season on both sides. Heat the last drop of oil in a hot frying
pan, gently place the fish in when its sizzling skin side down,
allow to cook for 3-4 minutes turn it carefully onto the other
side and cook for a further 3-4 minutes, season the fish again
with salt and pepper. When you press your finger on the flesh it
should spring back when its cooked.
Just as your finished pop the beans back in the pan with the
fish for one minute. To serve place the beans on the plate, pop
the shallot cream on top. Place your potatoes around the plate
and pop the fish on top of the beans. Place a small tbsp of the
crme fraiche mix on top of the fish at the very very last minute
(otherwise it will melt)

Vanilla Panna Cotta

3 gelatine leaves
250ml/9fl oz milk
250ml/9fl oz double cream
1 vanilla pod, split lengthways, seeds scraped out
25g/1oz sugar
175g/6oz sugar
175ml/6fl oz water
splash of cherry liqueur
350g/12oz raspberries

Method
For the panna cotta, soak the gelatine leaves in a little cold
water until soft.
Place the milk, cream, vanilla pod and seeds and sugar into a
pan and bring to a simmer. Remove the vanilla pod and discard.
Squeeze the water out of the gelatine leaves, then add to the
pan and take off the heat. Stir until the gelatine has dissolved.
Divide the mixture among four ramekins and leave to cool.
Place into the fridge for at least an hour, until set.
For the sauce, place the sugar, water and cherry liqueur into a
pan and bring to the boil. Reduce the heat and simmer until the
sugar has dissolved.
Take the pan off the heat and add half the raspberries. Using a
hand blender, blend the sauce until smooth.
Pass the sauce through a sieve into a bowl and stir in the
remaining fruit.
To serve, turn each panna cotta out onto a serving plate. Spoon
over the sauce and finish with a sprig of mint. Dust with icing
sugar.
