Scope:
Thisproceduredescribestheequipmentandstandardmethodusedtoevaluatethepastingproperties
ofriceflour,includingpastingtemperature,peakviscosity,finalviscosity,andotherassociated
attributescharacteristicofaviscosityprofile,orpastingcurve.Thesemeasuresareindicatorsofrice
cookingandprocessingproperties.

Principle:
TheRapidViscoAnalyser(RVA)isamicroprocessorcontrolledinstrumentdesignedtoapplyvariable
temperaturesandshearratestoahydratedstarchorfloursamplewhilemeasuringthesampleschange
inviscosity.Apredefinedseriesoftemperaturesandshearratesappliedoveraspecifieddurationis
knownasatestprofile.TheprofiledefinedbelowisapprovedasastandardmethodoftheAACC(no.
6102)forriceflour.

ProcedureARunningatestsample:
1. Grindarepresentativesampleofheadrice,usinga0.5mmscreen,accordingtoSOPMILL007.
2. Performmoisturecontentanalysisonthegroundricesample,accordingtoSOPPHYS002
(Proc.B).
3. SwitchontheRVAandallow30min.forwarmup.Switchontheassociatedcomputerand
opentheRVAcontrolsoftware,ThermoclineforWindows.
4. InsertapaddleintotheRVAtower.Rotatethepaddleuntilitclicksintoplaceandissecure.
5. SelectRunZero.ClickStarttoinitiatethepaddle.Allowthevalueintheboxto
stabilizeandapproach0.Clickzeroandstop,thenclosethewindow.
6. Performaqualitycontroltestusingateststarchpacket,asdescribedinProcedureB,below.
7. SelectSelectConfigurationtoRunundertheRunmenu.
8. LoadtheRiceRapidtestprofilethroughtheThermoclinesoftware.
9. Enterafilenameandfilepathunderwhichtosavethedata.ClickRun,thenYeswhen
promptedtosavechanges.
10. Asampleweightcalculatorshouldappear.Makesurethe3.0gisselectedasthesamplesize,
25.0gasthewaterweight,and12%asthemoisturebasis.
11. Enterthemoisturecontentofthefloursampletocalculatetheexactweightsofwaterandflour
needed.Thiscalculationisusedtoadjustallsamplestoa12%moisturebasis.

12. Placeanaluminumcanisteronthebalanceandtarethescale.
13. WeighthespecifiedamountofDIwaterintothecanister.
14. Placeaweighboatorweighpaperonthebalanceandtarethescale.(Discardweighpaperafter
theseconduse.)
15. Weighthespecifiedamountofflourintothevessel.
16. Addtheflourtothewaterandvigorouslyjogthebladeofthepaddlethroughthesampleup
anddown10times.Repeatasnecessaryuntiltheflourissuspendedandnolumpsremain.
17. Insertthecanisterandpaddleintotheinstrument.Rotatethepaddleuntilitclicksintoplace
andissecure.
18. Whenpromptedbytheprogram,depressthetowertoinitiatethepastingcycle.
19. Uponcompletionofthecycle,removethecanister.Youmayneedaninsulatedglove,asthe
canisterwillbehottothetouch.
20. Washthepaddleandthecanisterwithwarmwaterandabrush.Drythoroughly.Thepaddle
maybeusedrepeatedly;thealuminumcanistermaybeusedthreetimesbeforediscarding.
21. OntheViewmenu,selectViewAnalysisResults.Copythevalues(Peak,Trough,
Breakdown,FinalVisc,Setback,PeakTime,PastingTemp)andpasteintoanExcelspreadsheet.
22. Tobeginanothersample,gototheRunmenuandselectRunlasttest.
23. NOTE:TheSetbackvaluereportedthroughtheThermoclinesoftwarerepresentsthedifference
betweenfinalviscosityandholdingstrength.However,thericeindustrygenerallyconsiders
SetbacktorepresentthedifferencebetweenFinalViscosityandPeakViscosity.Bothofthese
valuesareprovidedinthepastingprofile,andcanbeusedtocalculateSetbackforrice.

ProcedureBRunningacontrolsampleusingastandardizedteststarchpacket:
1. SwitchontheRVAandallow30min.forwarmup.Switchontheassociatedcomputerand
opentheRVAcontrolsoftware,ThermoclineforWindows.
2. Zerotheinstrument,asdescribedinsteps45ofProcedureA.
3. SelectSelectConfigurationtoRunundertheRunmenu.
4. LoadtheStandard1testprofilethroughtheThermoclinesoftware.
5. Placeanaluminumcanisteronthebalanceandtarethescale.
6. Weigh25.000.01gofDIwaterintothecanister.
7. Placeaweighboatorweighpaperonthebalanceandtarethescale.
8. Weigh3.50.01gofstarchintothevessel.
9. Addthestarchtothewaterandvigorouslyjogthebladeofthepaddlethroughthesampleup
anddown10times.Repeatasnecessaryuntilthestarchissuspendedandnolumpsremain.
10. Insertthecanisterandpaddleintotheinstrument.Rotatethepaddleuntilitclicksintoplace
andissecure.
11. Uponcompletionofthecycle,thePeakViscosityandBreakdownvaluesshouldfallwithinthe
rangesspecifiedonthestarchpacket.
a. Ifthevaluesarenotwithinrange,repeattheprocedureusinganotherstarchpacket.
b. Ifthe2ndsetofvaluesisnotwithinrange,notifyasupervisor.
12. Cleancanisterandpaddleasdescribedinstep20ofProcedureA.
13. Toproceedwithtestsamples,beginatstep7ofProcedureA.
