Chapter I
INTRODUCTION

Pan de sal,which literally means bread of salt, is a typical Filipino bread that is
traditionally served as breakfast roll. Usually, it is soft, airy, chewy and has a slightly
crunchy crusty outside. It is oven-fresh baked bread sold by small neighborhood bakers
handed to customers while still hot, that is where the Filipinos derived the term Hot
Pan de sal. It is Portuguese in origin. It is commonly referred to as poor mans bread
because Pan de sal, becomes the cheaper alternative for rice during the war era. These
days now, you can find variety of pan de sal everywhere like raisin pan de sal, whole
wheat pan de sal, cheese pan de sal, vegetable pan de sal, but nothing beats the original
home-made plain pan de sal.
Pan de sal is the most popular yeast-raised bread in the Philippines. They are
shaped like garrison caps due to its unique method of forming. The dough is rolled into
long logs (baston) that are rolled in fine bread crumbs first before being cut into
individual portions with a dull dough cutter and then allowed to rise and baked on sheet
pans. Its taste and texture closely resemble those of the very popular rolls of the
Dominican Republic called Pan de Agua and Mexicos most popular type of bread
Bolillos for the reason that they all use a lean type of dough and follow similar
techniques that were learned from Spanish or Spanish trained bakers early in their
history.

Most of Filipinos cant spend a day without eating pan de sal. All over the country,
you can find people eating it in different ways but the normal way most Filipino eat pan
de sal is by dipping it into a hot coffee, just like what Filipinos says Walang matigas na
Pan de sal sa mainit na kape.
The national bread has become an institution of the Philippine culture. These past
years, Filipino havent changed at all. Pan de sal is still the favorite Bread of Masa. It
was introduced to the Philippines in the 16th century as the Spaniards answer to the
French baguette.
Tilapia fisheries originated in Africa. The accidental and deliberate
introductionsof tilapia into Asian freshwater lakes haved inspired outdoor aquaculture
projects in various countries with tropical climates, most notably Honduras, Papua New
Guinea, the Philippines and Indonesia. Tilapia raised in Inland tanks or channels are
considered safe for the environment, since their waste and disease is contained and not
spread to the wild.
Commercially grown tilapia are almost exclusively male. Being prolific breeders,
female tilapia in the ponds or tanks will result in large populations of small fish.
To do this kind of business is profitably and observing the highest work ethics
and to give employment deserving individuals.

MARKET STUDY

General Market Description


Pan de sal fish will focus on marketing activities on reaching the students, office
workers and factory worker whose wake up early and whose work in the morning or
located to the bakery shop. It is expected that the clients will accept to buy these pan de
sal fish.

Flow Chart
The Pan de sal fish preparation process
Procedure in making Pan de sal Fish
Preheat oven at 175 C (350F)

Prepare all the ingredients

Combine the bread flour and instant


yeast

And mix the water ,refined sugar, and


salt

After you mix all the ingredients,


knead the dough, place in a bowl,
cover with a damp cheesecloth and
leave for 2hrs.

Punch the dough to remove air.

And after you remove the air , baston


the dough and cut into a medium size.

Roll in breadcrumbs and arrange on


baking trays

Bake 10-15 minutes until it golden


brown.
