6cups(1lb8oz/675g)powderedsugar,SIFTED
1cup(115g/4oz)cocoa
1tablespoonvanillaextract
cup(51/2floz/165g)wholemilk

Instructions
1.Preheattheovento350oF(180oC).Butterandline38inchx2inchroundcakepans.Youcanuse2
time,Ijustwanted3layersinmine.
2.Sifttheflour,sugar,cocoa,bakingsoda,bakingpowder,andsaltintoalargebowl.Whiskthe
ingredientstogetherbyhand.
3.Inanotherbowl,combinethebuttermilk,oil,eggs,vanillaandcoffee
4.AddthewetingredientstothedryandGENTLYmixthebatterjusttocombine.Donotovermixorbeat
asthiscakecantoughenup.
5.Pourthebatterintothepreparedpansandbakefor30to35minutes,untilacaketestercomesout
clean.
6.Note:thiscakecooksfastsocheckifafter25minutes.Youdontwanttoovercookit.
7.Coolinthepansfor30minutes,thenturnthemoutontoacoolingrackandcoolcompletely.
8.TomaketheFudgeFrosting:Inthebowlofanelectricmixer,beatroomtemperaturebutteruntil
lightlyfluffy.Addthesiftedpowderedsugar1spoonatatimeandmixwell.Itwillgetlightincolorand
bigger
9.Addvanillaandcocoa,andthemilk,scrapingdownthesidesofthebowlasyouwork.
10.Turnmixeronmediumhigh.Beatfrostinguntillight,fluffyandofspreadingconsistency.
11.Ifthefrostingistoothick,slowlyaddmoremilkorhalfandhalf,onetablespoonatatime,untilit
reachesthedesiredconsistency.
12.Youcanusethefrostingimmediately,orstoreitintherefrigeratorfor3days,orfreezeifforupto3
months.Allowfrostingtocometoroomtemperaturebeforeusing.
13.ToDecorate:Place1layer,flatsideup,onaflatplateorcakepedestal.
14.Createacrumblayer:Withaknifeoroffsetspatula,spreadthetopwithfrosting.Placethesecond
layerontop,roundedsideup,andspreadthefrostingevenlyonthetopandsidesofthecake.
15.Putthecakeinthefridgeandletthecrumblayersetforaround30minutes(thiswillmakethe
finishedproductlookreallyclean)
16.Takethecakefromthefridgeandputonanother,finallayeroffrosting.Tryandgetitassmoothas
youcan.
17.Tofinishthetopofyourcake,takeaspoonthathasbeendippedinhotwateranddried.Workfrom
theoutsideinandcreateaswirluntilyougettothecenter.
18.Finishyourcakeoffwithyourhomemadesprinkles.
19.Storeatroomtemperatureorinthefridgeforupto4days.Ifstoringinthefridgemakesureit
reachesroomtemperaturebeforeeating.
