As a result, alcohol and liquor manufacturers joined efforts to create the largest
ageing facility in the country: the Central
Anejadora Guatemalteca, S.A., located in
the province of Quetzaltenango. As the need
arose, manufacturers built additional ageing
facilities.

SUGARCANE IN THE KINGDOM OF GUATEMALA
Although lay people first planted it, sugarcane quickly evolved into an important crop for
religious orders such as the dominican, augustine and jesuit brotherhoods. In addition, indigenous groups planted it on their communal
lands. The crop went hand in hand with the use
of manually operated presses and the first processes to refine sugar. There are records of the
technical requirements, including the innovative use of iron mills that date back to the 18th
century.
By 1569, the dominican brothers had founded the first sugar press in Central America
in San Jernimo, Baja Verapaz. The mill is currently the site of the regional sugar press museum, Museo Regional del Trapiche.

of distillation. Although both can be traced back
over the centuries, mankind had to discover the
New World and many years went by before a
new level of sophistication could take hold.

There are no documents or historical records describing the details of when rum
came to life; we have no information on who
was responsible or when the technology
took shape to evolve spirits from molasses,
nor do we have descriptions of the first attempts to produce rum, but there are references earlier than 1650 recording the name
of the spirit.

Rum produced in the English and French colonies in the Caribbean became a commodity for
export to Europe beyond Spain and eventually
climbed the social ladder to become a sophisticated consumer product. It was widely used in
the merchant marine and the navy where it quickly rivaled Port and Brandy in popularity. The
British crown briefly banned rum before soon
allowing it free trade with no further opposition.
Rum kept a lower profile in Spain and the colonies,3 known as guarapo, sugarcane juice diluted with water, then fermented it was banned
in Guatemala in the early part of the 17th century
as a result of the monopoly on these products
granted to the viceroy of Per. Prohibition was
overturned by the middle of the 18th century and
spirits were then freely produced and traded.
Consumption of spirits increased and became
an excellent source of fiscal revenue. In 1755,
the Spanish Crown granted Santiago de Guatemala the right to sell aguardiente throughout
every province in the Kingdom.
In 1806, Friar Sebastian Garca de Goyena was granted a license to produce sugarcane aguardiente and required to pay royalties to
the Royal Treasury in the amount of 15 pesos
a month. In 1811, he was then granted the right
to produce rum aguardiente as long as he paid
the royalties and as long as the rum was sent
to the capital city and other locations. After the
Dominican Order was expelled from Guatemala,
sugarcane production was relocated to the Pacific coast where it remains today as the principal
source of raw material that goes into making Ron
de Guatemala.

La zona geogrfica del Ingenio Tulul se caracteriza por los siguientes factores naturales:

A key component in rum is virgin sugarcane honey. The virgin sugarcane honey
comes from the first press from the cane
and the juice is obtained by evaporating the
water and concentrating the sugars.*
El Ron de Guatemala es producido nicamente utilizando como materia prima la miel virgen de caa de azcar. Haciendo honor a su
nombre, este lquido tiene la consistencia de la
miel y es virgen porque no se le han extrado
los azcares presentes en la planta de caa.
Tiene un sabor dulce, con aroma a caa y notas caramelizadas.
La miel virgen de caa de azcar es producto del prensado de la caa madura. El jugo
obtenido de la molienda es calentado, clarificado y filtrado para eliminar los restos de caa
slidos que hayan podido quedar en suspensin. Finalmente, el jugo ya limpio es sometido
a evaporacin para sustraer el exceso de agua
y concentrar los azcares.
This is one of the key steps that distinguish Ron de Guatemala from most other
rums in the world, usually produced from
molasses one of the byproducts of the
sugar production process.

SLOW FERMENTATION

A yeast strain derived from pineapple (Saccharomyces cerevisae) is used to create Ron
de Guatemala. Using strict quality controls and
careful oversight by the lab at the distillery, the
starter yeast is reproduced until it proofs and is
ready to begin the fermentation process.
The entire fermentation process takes between 100 and 120 hours until the entire array
of aromas and flavors are fully developed. Our
specialists rigorously monitor temperature, pH
and other biochemical variables throughout
the process.
Fermentation also yields additional components that are essential to the undertones and
aromas of the rum carbon dioxide, aldehydes,
esters, superior alcohols and specific acids.

THE SOLER A AGEING SYSTEM
El proceso del Sistema Solera es un
mtodo de envejecimiento de bebidas alcohlicas que ha sido utilizado en mayor
medida en Espaa para el aejamiento de
vino del marco de Jerez, Montilla-Moriles
y Brandy. El origen de la palabra es el latn
(solaria > de solum, suelo) y consiste en
el posicionamiento de las barricas en las
cuales se aejarn los vinos o destilados.
Se trata de un sistema dinmico, mediante el que vinos con distintos nivel de
envejecimiento son metdicamente mezclados, con el fin de perpetuar determinadas caractersticas en el vino finalmente
comercializado, que son el resultado de
todas las vendimias.

The city that touches the sky
La ciudad que desde el siglo XVI es llamada Quetzaltenango, originalmente se llam Kulaj (de origen mam). En el siglo XIV
fue conquistada y rebautizada por los kichs
como Xelaj, nombre que hasta hoy perdura
con nostalgia.
En el siglo XVII, la ciudad de Quetzaltenango era un centro administrativo de gran importancia. Su privilegiada posicin geogrfica,
permite que desde ella se controlen las rutas
comerciales de la Boca Costa y del altiplano
occidental y la posicionan como la segunda
ciudad del pas.

finish. Dried cranberries, lemon peel and dried oranges combine with the scent of cloves, cinnamon and
nutmeg with a hint of caramel.

vainilla y aromas caramelizados. Cuando el ron evoluciona en copa, emerge el aroma de frutos secos,
arndanos deshidratados, perfumes especiados,
piel de naranja y notas ctricas.
Nose: Friendly and sophisticated with distinctive expressiveness. At the outset, notes are rich in woodiness, roasted cacao, vanilla and whiffs of caramel.
As the rum breathes, the aroma of dried fruit emerges together with dried cranberries, spicy fragrances,
orange peel and hints of citrus.
Palate: Robust and succulent, dry and explosive. Elegant notes of candied fruit together with spices such
as cloves, nutmeg and pepper join roasted cacao
and delicate citrus fruit.

Early in the 20th century, Guatemala enacted legislation on alcohol to encourage liquor industries to increase
their annual production as a means to
ensure that they could reserve a portion
to comply with the new requirement to
age all aguardiente for at least a year.
A recently created company back then,
Licorera Zacapaneca, complied with
the mandate so efficiently that it stored
aged rums to the point that it was able
to treat those reserves using a slower
and more mindful ageing process.
