General information
Matricaria recutita belongs to the Asteraceae family and is an
annual herb which grows in meadows, fallow fields and grain
fields throughout Europe.
Chamomile is indigenous to southern and eastern Europe, as
well as to the Middle East. Today, this species is cultivated on a
large scale in many countries (e.g. Argentina, Egypt, Bulgaria,
Hungary and also Germany). In addition, wildcrafting is common in Macedonia and Serbia.
Chamomile prefers dry lime soils and full sunlight.
Cultivation is carried out by direct sowing in autumn or spring.
The root ball is relatively small, yet the plants grow to be
80100 cm tall.
Several chamomile cultivars are available on the market, each
differing significantly in the composition of active ingredients
and flowering time.

A single, small flower head develops at the tip of each branch.


The first flowers develop near the base of the plant, moving
upward until the last sweet-smelling flowers bloom at the end
of June. The inflorescences are picked once 24 rows of the
tubular florets within a flower head have opened.
The harvest is done either mechanically by specially developed picking machines or manually by picking individual
flower heads (Egypt). Material that is harvested by machine
usually contains leaves and stems. The crop is gently dried in
well-ventilated and shaded locations or in artificial dryers with
temperature control.
Anklam Extrakt acquires its chamomile from Egypt (mostly
organic quality) and from other experienced growers
worldwide.

Use as a food

Extract qualities

Chamomile flowers have a pleasant, sweet, and fruity


scent. Their taste is aromatic, slightly flowery and somewhat
bitter. Even to this day, not all components responsible for the
characteristic flavour of chamomile are known to science.

The chamomile soft extract is produced from the herbal drug


using water as the extraction solvent.

In the food industry, chamomile is used for the production of


tea preparations. Chamomile is very popular in baby teas,
also in combination with other herbs, such as lemon balm,
anise and fennel.
Chamomile flowers are also used as a spice and to flavour
herbal liqueurs.

Functional properties

Constituents

Chamomile has been used in folk medicine for centuries.


In the 16th century, chamomile was considered one of the
most important medicinal plants in Germany and was used
to treat many diseases.

Essential oils are the most important constituents of chamomile (0.31.5 % in flowers). The oils owe their characteristic blue colour to chamazulene, which itself is not found in
the drug. It arises during distillation from its natural precursor, matricin.

Traditionally, it is applied in cases of agitation, sensitivity,


insomnia and menstrual disorders. Chamomile flowers
have an anti-inflammatory and analgesic effect. The key
active ingredients are essential oils (chamazulene, bisaboloids and spiro-ether) and water soluble flavonoids.
Furthermore, some constituents of chamomile flowers are
effective against bacteria and moulds. Thus, inflammations
of mucous membranes of the stomach and the mouth have
been treated with chamomile.

Further constituents of Chamomillae aetheroleum are


-bisabolol, bisabololoxides A, B and C and spiro-ether.
Chamomile flowers contain a large quantity of water-soluble
flavonoids (< 6 %), including apigenin and apigenin-7-glucoside, as well as quercetin- and luteolin-glycosides. Up to
10 % polysaccharide mucilage was found in Matricariae flos.
The mucilage is composed of galacturonic acid, xylose, arabinose, galactose, glucose and rhamnose, of which galacturonic acid is the main component (75 %).
Further constituents are coumarins, choline (0.3 %),
the phenylcarbonic acids caffeic, syringic, vanillic and
4-methoxybenzoic acid, as well as 89 % mineral components.
