TEAMTALK

THE SOURCE OF LIFE

Om Swastiastu...
Usually rain is pouring down hard in Bali at this time of the year. But due to global
warming, the weather has been pretty unpredictable. So whether November sees rainy
days that you have to carry an umbrella wherever you go or beautiful sunny days that
make you want to plunge in a pool, we want to invite you to embrace the water.
Water heals and the Mulia Spa understands this very well. Aside from its massage

treatments, this spa has complete facilities from a Hydrotherapy pool to their Emotional
Steam Room. And only at the Mulia Spa will you nd Asia Pacics rst ever Ice Room. Flip
through Invite & Indulge to discover more about this spa. And if youre looking for a place
to swim in Bali, our Foto Folio boasts seven swimming pools, each with its own distinctive
style. From the long and heated pool in Padma Ubud to the eco-friendly pool in Bambu
Indah, and the innity pool that overlooks the ocean in Anantara Uluwatu you pick!
At the same time we would also like to invite you to appreciate water as the source of
life, which we can learn from the springs in Bali. The Balinese construct pipelines so that
everyone can enjoy the fresh water straight from the spring. They also build a Pura Beji
and a statue of Dewa Wishnu to honor the water you can nd out more about this in
Craft & Culture.
Last but not least, we cant hide from the fact that fresh water is scarce in many parts of
Bali. This is a bitter truth that we all have to get a grip on. What is causing this and what
can we do to help? Read our talk with the Bali Water Protection program in Prole &
Portrait for inspiration. If you still need more reasons as to why we need to preserve water,
lets take the literal meaning of a verse from a love song by 90s boyband Boyz II Men,
Lets dont wait til the water runs dry. Well make the biggest mistake of our lives

FALL FOR JOHN

Welcoming fall, John Hardy debuts The Modern
Chain Collection that is an evolution of the 1990s
at woven chain bracelet for men. With this new
design, these chain bracelets are versatile and ideal
for casual or formal wear. However, John Hardy still
pays a tribute to the original chain-weaving method
and thats why this collection is woven by men due to
the need for more physical strength to make the large
links bracelet. By the looks of the bracelet, this mens
collection conveys a powerful and masculine symbol.
John Hardy also produces the womens collection that

The magical vibe and livelyy culinar

culinary scene of Bali intrigued
Sydney-based restaurateur Maurice Terzini (MT) enough to
spread his wings to the Island of Gods. He has successfully
established a number of Australias iconic dining venues and
events and now he welcomes us in his latest baby, Da Maria,
an Italian osteria in the middle of Petitenget. He talked to Bali
& Beyond (BB) about it before the opening night on November
5!
BB: Hi Maurice, we are excited to see Da Maria restaurant!
Would you explain a little bit about it?
MT: Im beyond excited too! Da Maria is an Italian-based
restaurant. It is an Italian osteria, which means a restaurant
with comfort food at affordable prices. Its a bit casual and fun.
It is an idea that we have been experimenting with in Sydney
and it has been very successful. And now we are going to take
elements from that idea and introduce them to Bali. Its going
to be unique.
BB: What should guests expect at Da Maria?
MT: The inspiration is from Southern Italy, so the food could
basically be found in places like the Amal coast in Italy.
Guests should expect tropical food like Southern Italian pizza,
which is fermented and cooked in a particular way, and a lot
of seafood as well because Southern Italian or Italians in
general cook and eat a lot of sh. We are creating some
incredible seafood and sh dishes, and we are working with
local shermen and sourcing the ingredients locally in order to
maintain our sustainability. Its all simple and true Italian food,
and everyone will have a good time!
BB: What is behind the name Da Maria?
MT: Da Maria is a mysterious person. No, Im just kidding.
Shes actually no one, its just a name. It actually means at
Marias. So I want the restaurant to have a casual ambiance,
just like when you dine at your friends or aunts place.

BALI&BEYOND NOVEMBER 2016

BB: Why are you opening Da Maria in Bali?

MT: I have come to Bali many times. This island has a special
place in my heart and Ive always wanted to do something
here. Now I see that Bali has become a food and beverage
destination with a much better quality than before. And
the feeling to open an Italian restaurant just feels right and
hopefully people in Bali will love what Da Maria offers.

adventure beckons, I brace myself,
gear up and just go. Nevertheless,
the concept of canyoning or
canyoneering was foreign and a
little bit scary for me.
Canyoning is an adventure sport
that is rapidly gaining popularity
worldwide. It involves the uncharted
territory of specialized equipment,
brain-boggling technicalities and
challenging courses. But at the same
time it is also a combination of fun
and thrilling outdoor activities such
as trekking, scrambling, sliding,
rappelling, jumping and swimming,
and it often takes place in remote and
rugged natural settings. I was sold.

READY TO GO!
It was no ordinary Sunday
morning. My husband and I were
deep in the heart of wilderness,
beneath the rainforest canopy of
Git Git in northern Bali. We were
already suited up in our canyoning
necessities: ve-millimeter wetsuits,
helmets, rubber boots, a climbing
harness with carabiners and a
Pirana descender for rappelling as
well as an unattering butt cushion
for water sliding.

presents a Modern Myths exhibition. Located at the
hotels ARTSPACE, this exhibition displays the creations of
three young talents Kunci Sathya Viku, Rio Simatupang

Call an ambulance by dialing 118, but it is a lot

more practical and quicker to hire a taxi. Most
hotels have on-call doctors on standby. For Bali
Belly, Lomotil and Imodium eliminate symptoms,
but not gastro-related infections. A fever along
with symptoms requires doctor-prescribed
antibiotics.
Drink as much liquid as possible. Isotonic
drinks under various brand names are widely
available and are known to replenish body
hydration and replace uids. For discomfort,
diarrhea and cramping, drink strong, hot tea;
avoid fruits and spicy foods.
Some day-biting mosquitoes carry dengue
fever, but this is not a problem in tourist areas.
Bali is non-malarial and prophylaxis is not
required. Mosquito bites, cuts or abrasions
easily become infected in the tropics. Treat them
immediately.
Drink only bottled or boiled water. Peel fruit
before eating; avoid raw vegetables except at
reputable restaurants. Ice in restaurants is safe.
Protect yourself from the intense equatorial sun.
Use high SPF sunblock and a hat.
AIDS and sexually transmitted diseases
are increasing in Indonesia. Local sex workers
have multiple partners from around the world.
They are not checked for sexually transmitted
diseases. Act responsibly and use condoms,
available over the counter at pharmacies.
