Students will investigate traditional and contemporary uses of native Australian foods, plan
and modify a recipe to contain a native Australian ingredient and select appropriate
techniques and equipment, while examining the relationship between food and society.

Explain to students today we will be beginning a new


topic, in which we will use our knowledge from safe
food practices from the previous topic. Ask students to
discuss with a partner why food safety is important and
then raise hands to inform myself and the class. To
cater for cultural differences and diversity pair ESL
students from Lithuania with the two Australian
students who can provide ESL students with support
and cultural knowledge.
Explain to students the topic we are staring today is
Food in Australia. During this lesson we will be
investigating Australian native foods and modifying a
recipe. Ask students how they would define bush food,
the term native and what they know about traditional
and contemporary use of native bush food.

Explain to students they will investigate and record


traditional and contemporary uses of Australian native
bush foods.
Explain to students they are to create two columns in a
word document on their laptops. One column is for
traditional uses of native bush foods and the other
column is for contemporary uses. Students are to have
a minimum of 10 examples in each column. Instruct
students to note down traditional uses while watching
the following video.

With their cooking partner students are given a scone
recipe, which they must modify to include a native
ingredient, taking ingredient quantity into
consideration. They also list the utensils they believe
they would need and highlight the key food preparation
processes in the method section. Students present their
ideas to the class in pairs. The teacher then displays a
copy of the completed recipe with the required utensils
to ensure students have these listed correctly.
