Serves 2-4
Ingredients
burger patties
200g minced beef (not a lean cut)
100g minced pork (or chicken)
4 tbsp panko breadcrumbs
1/2 tbsp worcestershire sauce
1/2 tbsp soy sauce
1/2 medium onion
2 3 tbsp milk
1 egg
pinch of salt and pepper
oil for cooking
breading
plain flour for dusting
1 egg, beaten
4 tbsp panko breadcrumbs

2 tbsp tonkatsu sauce
white cabbage, shredded
4 small brioche buns
(alternatively use 8 thick slices of white bread or 300g of cooked japanese rice).
How To Prepare
1. Finely chop the onion and saut in a pan with a little oil until
soft. Remove from the heat and allow to cool.
2. Next, in a large bowl soak the panko in the milk, add the
minced meat and mix together by hand. Then add the
cooled cooked onions, egg, worcestershire sauce and soy
sauce, as well as salt and pepper to taste. Mix well once
more.
3. Separate the mixture into 4 equally sized portions and mould
into rounded patties, indenting the centre a little with your
finger to ensure it cooks through evenly. Dust each patty
with plain flour and dip into the beaten egg.
4. Spread the panko breadcrumbs on a plate and cover the
patties on both sides with the breadcrumbs. Fill a wok with
oil for deep frying. Heat the oil until a small sprinkle of panko
sizzles when added.
5. Deep fry the burger patties in cooking oil on a medium-high
temperature (about 150C/300F) turning several times until
golden brown on the outside. Remove from the oil and drain
on a wire rack.

want to short cut this, you can simply buy burger patties, then
coat them in flour, egg, and panko, and deep fried them to
make menchi katsu.
