Chapter III

Technical Study
The overview of the planting process of Gabi (Taro) and its total production
process to Gabi (Taro) flour will be discussed in this chapter.
Business Process
Gabi Flour Production is a manufacturing business that produces flour made of
Gabi (Taro). The business is located along Brgy. Talim, Lucena City. The delivery of the
raw materials Gabi (Taro) from suppliers will be made once a week, every Monday. The
raw materials will be stored in the storage area. The raw materials and other
manufacturing supplies inventory will be organized and checked from Mondays to
Fridays. The machineries and equipment are expected to be prepared and conditioned
before the production. Cleaning and sanitizing the machineries and the equipments as
well as the entire area will be every after the production each day.
Transaction Process
Taro Flour Production plant site is located at Brgy. Talim, Lucena City.The
finished goods will be distributed to the different bakeries in Lucena City.
Taro Flour Production will deliver the product to the bakeries with the condition
of paying cash on delivery. Bakeries that will purchase the Gabi Flour are in a contract
basis.

Raw Materials
The raw material that will be processed in the production is taro. The taro will
come from the suppliers of the business. The taros to be used in the production are
thematured ones. The type of taro is the Piko Uli-Uli. This type of Taro has the maturity
of 12 to 15 months. Its life span is 2 to 3 weeks.

Another raw material that will be used in the production is the salt. This material
will be used in the immersing process of the production.

Production Process

The transaction or production of Gabi (Taro) flour is more likely like any other
flour manufacturing.

Water is boiled in a pressure cooker. Cooking is accomplished by the hot vapor


which gradually penetrates the mass of taro. The time required is 1 hour.

Peeling and Washing


After the taro has been cooked, it will now be peeled and washed by the workers.

Slicing
Slicing process is process to cut the taro into pieces.

Soaking

Soaking is the process wherein the raw material is put into large basins with water
and it is soaked for 1 hour.

Immersing
It is the process wherein the Taro is dipped in a 25% of salt.

Blanching
After immersing, the Taro will be blanched in boiling water for 4 to 5 minutes.

Drying

Tray drying was obtained by the use of an insulated cabinet through which heated
air was circulated. The feed air was heated by thermostatically controlled electric feeder
strips, and the supply of relief, or fresh, air was controllable within any limits.

Milling
Milling processes in the production of taro flour involve only grinding and sifting
of the tray-dried refrigerated taro.

Sifting

It is a separation of the wanted or desired elements of flour from the unwanted


materials using a machine, known as flour sifter. This process makes the taro flour extra
fine flour. The unwanted particles separated are not harmful and are disposed off through
a garbage collector.
The Gabi Flour are sent to the last stage of the process and checked by the quality
control personnel ( operating manager) before packaging.

Packaging
The best stage is the packaging process where in the Taro Flour are packed into
sacks. The weight of the Taro flour per sack is equivalent to 25kg.
Since flour is intended for human consumption, all the equipment used in the
factory is thoroughly cleaned and sterilized by hot steam.
Indirect Raw Materials
The indirect raw material that will be used in the production is water. The water is
used in washing the taro before the process of peeling.

number of sacks the company can produce. The total annual production (kg) is 453,600.

Plan Size and Layout


The overall lot area of Gabi (Taro) Flour Production site is 714 square meters
allotting 296 floor area to its factory, warehouse and offices. The following are some of
the important parts of the site:

Guard House
It will be located in front of the entrance gate where the security guard will stay to

secure the whole premises.

Parking Area
The company will provide a parking area located in front of the building for the

delivery trucks and for the employee vehicles.

Mess - Hall Area


It is an eating area provided by the company for the lunch break and snack time of

the company workers.

Storage Area
It is a room provided for the safety storage of the raw materials.

Finished Product Warehouse


It is a room provided for the finished products that is ready for delivery.

Offices
Each functional unit will have their own offices. It includes finance, human

resource, marketing and general manager's office.

Quality Control Office


There will be an office in the factory for quality assurance personnel for them to

easy monitor the whole production process.

Working Area
This is the place for Gabi (Taro) flour making; all machineries and equipment
needed in the production are set up here. The following are the areas in the

working place:

Comfort Rooms
It is a facility provided to allow use of a toilet by the members of the company or
other person outside organization like customers and visitors. Separate comfort
rooms for male and female can be used by factory workers, customers and

visitors. While the toilet and bath comfort room located inside the office area can
be used by the office workers.
Utilities
A facility composed of one or more pieces of equipment connected to or part of a
structure and designed to provide a service such as heat or electricity or water. Since both
the factory and administrative building is located at the city of Lucena, both of the
buildings are expected to be operating well with the use of the service of Meralco for the
electricity; Quezon Metropolitant Water District for the water supply; and Philippine
Long Distance Communication (PLDT) for communication.
Electricity and Water
The company will avail the services of Meralco for its electricity needs, and will
avail the services of Quezon Metropolitant Water District for its water needs.

Telecommunication and Internet Service Provider


The company will avail the services of PLDT for its telecommunication and
Internet Service. The company will avail a plan from the said company to suffix its need
for both the internet and the telecommunications.

Waste Disposal
It is common among manufacturing firms to think of ways in which they can
reuse other parts of their products. The waste to be produced by the business in its factory
is the unwanted particles of flour removed in the sifting process. The business shall
observe non-toxic waste in its factory operations. Regarding the office operations, the
business should implement garbage segregation system. The overall waste produced will
be disposed of through garbage collectors on a regular basis.
Health and Safety concerns
Maintenance of health and safety requires its communication and proper display
at different site areas so as to make sure the safety of worker. The workers in the work
area will wear masks and caps. The electrical wires are managed in a nice and safe
manner. No broken plugs, sockets and switches. No machines must be exposed to live
wires. Appropriate firefighting equipment is maintained at proper places.
Accidents may occur in every phase of production and therefore, training of
operators and in safe manipulation of the machines to reduce the occurrence of
unnecessary and unpleasant events during the course of the process / production.
Operators should be well trained and fully aware in using the machines. The company
will be giving high attention on these trainings. For maintenance and safety purposes,
there would be regular inspections of the machines to keep them for future unwanted
accidents.
