Research:IamheadofthefoodchemistrygroupatthedepartmentofBiotechnology,
NTNU.Theresearchismainlymarineorientedandisfocusedonproteinandlipidchemistry
relatedtofishprocessingandchangesinfishquality.Inrecentyearsworkhasbeenfocused
onutilizationofrestrawmaterialsforfishandthestudyofprocessestoextractproteinsby
makingfishproteinhydrolysates.Theextractionofandstabilityofmarinelipidsisalsoan
importantresearchtheme.Wearealsostudyingtheeffectofchillingandsuperchillingon
thequalityandshelflifeoffish.Workisalsobeingdoneontheeffectofreducingsalt
contentinfishproducts.
WehaveextensivecollaborationwithseveralresearchgroupsatSINTEF(researchinstitute)
andalsowithNorwegianfoodindustry.
Theresearchgroupisinternationallyorientedandregularlyhostresearchvisitsby
internationalphdstudents.
