Disqualified Dependents are now entitled to a
Php2,500.00 all-consumable Guest Card instead of

dependent was previously declared and qualified
upon activation of principal membership. This

Taal Lake and Volcano will mark its tenth this year.
Madre de Dios first opened its doors last December
2006. Since then, grand receptions are hosted at the Tagaytay
Midlands Golf Club almost every weekend all year round.

Blessed with a natural verdant beauty of the mountains on one


side, the other elevation showcases the sprawling Midlands
Golf Course and majestic Batangas lakeside and islands. The
California-Mission style church features open truss ceiling
design with a large stained glass window on the rear depicting
the biblical nuptials at Cana. Facing west, the window absorbs
the dramatically setting light during afternoon rites, blessing the
couple for a blissful and abundant married life.
Its red-orange roof tiles gleam fiery tones in the midst of
emerald landscape. Faade windows are decorated with colorful
glass medallions depicting Mary as Mother of God. She was
declared Theotokos (God-Bearer) in 431 in the Council of
Ephesus by Catholic traditions. Such Marian title was chosen as
the chapels patronage and celebrates its feast every January 1.
On its anniversary, the Madre de Dios Chapel will peal its
first set of bells to mark the festivity. On December 26, 11:00
in the morning, a special mass will be celebrated presided by
Most Rev. Ramon Arguelles, D.D.,Archbishop of Lipa. The
thanksgiving mass will be dedicated to all Highlands, Midlands
and Greenlands community. The Philippine Madrigal Singers
will grace the event for liturgical hymns and praise. Be sure to be
part of this momentous club event.

Twenty Years of

Enriching the Soul

his is a sanctuary where families gather to pray and to


be blessed. A haven for our hopes, reflections, answered
prayers and cherished moments with our parents and
children. This is a home for the Holy Family and to all the Club
members aspiring to be holy in their own ways.

Woodridge properties. The garden is full of local and imported


flora dotted by heavy boulders. Such is the signature of the
renowned landscape architect and National Artist IP Santos
who designed much of the pocket green spaces, scenic ponds
and foliage in The Country Club.

Since its first mass in 1996, the contemporary vernacular


architecture chapel celebrated countless masses in its lifetime.
The attending congregation has grown over the years and the
little circular chapel remains almost unchanged. Surrounded by
the lush gardens of The Country Club and the Sports Center, the
Holy Family Chapel sits on the edge of the property near a gulley
overlooking the green mountains and slopes of the Woodlands and

On its anniversary and feast day on December 30, Friday, at


11:00 oclock in the morning, all club members are invited for
a special mass with H.E. Luis Antonio Cardinal Tagle, D.D.
Archbishop of Manila and Most Rev. Reynaldo Evangelista,
D.D. Bishop of Imus. This year, the festivity will be serenaded
by the UST Singers, the overall champion of the 4th Florence
International Choir Festival in 2015.

Deconstructing Shabu-Shabu
T

he coming of ber months signals the arrival of the cold weather. Here in Tagaytay, we experience cool weather all year round,
with the coldest months being December to February. Enjoybale the cold weather may be, you will eventually want something
to keep you warm other than thick clothes. Were talking about food and here at Tagaytay Highlands, we have more than just the
likes of our Special Bulalo to warm you up. Head on over to the Highlands Golfers Lounge with family and friends and share a pot of
shabu-shabu.
Often mistaken as a dish originating from Korea, shabu-shabu is actually a Japanese hotpot dish usually composed of thinly sliced meat
and vegetables boiled in water. The ingredients are stirred in the pot and cooked at the table then served with dipping sauces.
At Tagaytay Highlands, we do our shabu-shabu differently and a cut above the rest to make sure that diners will have a gastronomic
experience that is uniquely Highlands. To start things off, instead of just using water for cooking, we provide two kinds of broth as the
heart of the dish: savory beef and mild seafood. Then an assorted mix of protein and vegetables make up body: prawns, fish, chicken,
beef cutlets, mushroom balls, squid balls, tofu, fish cake, Baguio and native pechay, and onion leeks. To compliment this hearty fare, we
prepare a special satay mix made from bullhead and taro.

ight Treasures is a popular representation in Chinese art. It is a subset of the Hundred Treasures inventory used in objet dart
collection popular among traditional Chinese art connoisseurs. Often it is comprised of a wish-granting pearl ( , bozh); a
double lozenges ( , fngshng); the stone chime ( , qng); a pair of rhinoceros horns ( , xjio); double coins ( ,shungqin);
the gold or silver ingot ( ,dng); coral ( ,shnh); and, a wish-granting scepter ( ,ruyi). These objects are housed in special wooden
cabinets fit for imperial appreciation.

At the Winter Garden of the Highlands China Palace, we have hundreds of culinary treasures freshly prepared by our Hong Kong
Chef and his battalion of experts. These dishes are crafted from centuries of traditions using authentic ingredients and culinary

Ice Blanc Foussy Chardonnay


A medium-dry sparkling wine is perfect to start the night. This is produced
from the best parcels of Chardonnay grapes, the second white grape variety
consumed in France. Each glass reveals a pale yellow color trimmed with
emerald tinges. Notes of white flowers, exotic fruits and citruses greet the
nose. The attack is always smooth and the finale is a burst of elegant freshness.
Extremely fine with fruity and nutty dishes as well as with rich buttery flavors.
Experience this in a unique way. Best when at its freshest (7-8C) so just
pour into a large wine glass with plenty of ice cubes. This is how it reveals its
freshness.

Ventisquero Pangea Syrah


A full-bodied with premium ripe tannins is made from the grapes Syrah
distinctly grown in the Apalta Colchaga Valley. Seductive and sophisticated,
the deep ruby red color with purple reflections exudes a generous, warm,
deep taste of dark and ripe red fruits and spices. Its rich aroma brings fruit,
graphite, spices, black pepper, dark chocolate and vanilla sweet motifs. Great
for meat dishes and cheese. This is a unique wine as it combines the vision,
experience and philosophy of two worlds- John Duval of Australia and Felipe

Rib Shack Red


A full-bodied, vintage blend, juicy red with generous wood guts supporting
sumptuous ripe dark berry fruits. Taste the splendid texture from chunky ripe

and savory smoky oak spice. This wine of Western Cape origin is a red blend

hristmas is here! It is a season of sharing and giving. And, we want


to make it the best for our family and friends. The twinkling of
candles and lights, the scent of fresh pines and fruits, mixed with
the euphony of holiday carols bring joy and warmth to the hearts. And
to the tummy, the comforting whiff from the kitchen is a prelude to an
expected celebration with loved ones.
But preparing for this holiday dinner also brings anxiety and panic for
some. We do not know where to start, what to buy, and how to make it
extra special. Here are some of our yuletide tips.
Set the welcoming mood with candles. It works well for both formal and
casual dinners. Use varied forms of lights. Mix it with other Christmas
motif like pine cones, berries, shiny silvers and crystals to create a
cornucopia of lights, reflections and colors on the Christmas table. A
flickering candle is always magical, so why not add a little more if you have
extra?
Food is the priority on the table. Try to lessen inedible decorations.
If available, use nuts and fruits as part of the tablescape. These can be
nibbled as the family wait for the meal to be cooked or even for afterdinner conversations. Chocolates wrapped in golden foils can be a yummy
addition to the spread, a sweet surprise to your children and guests.
To make the table always festive, use red. Bring out the love and happiness
with this color. It is a sure choice to exude joy. Choose the color for fruits,
table napkins and decorative ribbons. Do not over use the color, though.
A popping red here and there will complement the white china, wooden

Golfing in St. Andrews

round the last week of June, nine damsels from the Highlands
of Tagaytay flew to the Highlands of Scotland, railed to the
little golf kingdom of Fife by St Andrews Bay and collectively
sighed, we finally made it home!
All the narratives about Ol St. Andrews where golf reportedly started
is true..fascinatingly surreal unreal..dazzling magical. Goosebumps!
Acting like stars strutting into a location shoot, we visualized the
perfect swing and the surgical short game of our favorite players
through the 7,297 yards, 18-hole par 72 links.
We soaked it all in - the royal and ancient history, the salty air,
the fabled swirling winds, strips of fescue, the coastline of Chariots
of Fire fame, Hamilton Hall by the 18th - playing in our minds the
Opens gentlemen gladiators and spectators.
As Jack Nicklaus said, I fell in love with it the first day I played it.
Theres just no other golf course that is even remotely close.
In this theater of old world golf, the Scottish classic revetted bunkers,
all 112 of them, including the 10-ft tall Hell Bunker on the 14th are
par for the course! We made a shout out to three-time British Open
champion Tiger Woods as we repeatedly blasted out of the potholes.
Nothing fancy when golf started here along the ancient sand dunes
five centuries ago. Although unsuitable for crops and houses, the
coastal land had perfect golf genes! Golf s FOREfathers just exploited
its organic ecosystem - shallow top soil, sandy subsoil, sound
drainage, exposed sand, closely grazed turf, tree free with swaths of
fescues, gorse and heather.

Turns out God is the architect of true links which mortals are copying. The
sea, sand, soil, and sea winds are in sync with natural grassy and sandy
hazards. No earth moving. No sand nor turf import. Seminal true links.
The Scottish experience intensified the bond of the Sisterhood of Traveling
Golfers whose passion for the ancient game of sticks and ball flourished up
and down the fairways of the Philippine islands and beyond to Hong Kong,
Kunming, Mission Hills, Osaka.
I have to pinch myself that am playing in St. Andrews, recounted Dionne
Cu, two years ago when my daughter Camille and I visited, we just bought
gifts in the souvenir shop.
Marge Tan, instrumental in booking our hotels, sighed, All my late nights to
early mornings googling for the best deals paid off. We have arrived in golf
Mecca and living our dream.
Legally blind, philanthropist Rosalind Wee, remarked, Unbelievable. Golf
is so democratized in Scotland, referring to the fact that the Old Course
and the six others in the St. Andrews complex remain open to the public all
through the centuries. And on Sundays, the Old Course is a public park for
all. Best time for selfies!

Betsy Tuason, member of several clubs, butted in, Philippine golf is


friendlier to women though. We have had women members and member
wives playing, ever since.. It was only in 2014 that St. Andrews accepted
women and invited seven honorary members, among them, Princess Royal
Anne, and Swedish Annika Sorenstam.

With the course reeking of medieval times, we recalled the first


known female golfer, Mary Queen of Scots (1542 -1587), whose
love of golf proved disruptive. Six foot athletic Mary,
who allegedly originated the term caddie, stayed incognito in
a cottage along the Firth of Forth near St. Andrews. Golfing a
few days after her husband was strangled became the evidence
for trumped up murder charges and beheading by her rival
Elizabeth I. The portrait of the mother of golf hangs amidst a

Across the greens, shrieks of laugher and shouts of FORE
interrupted our historical musings. Apparently Aloma Lopez,
landed her ball on the wrong green because one of the Olds
unique features is the ginormous double greens, shared by 14
holes. Only the 1st, 9th, 17th and 18th holes have their own
greens.

Are we golfers or tourists, queried Totelle Dimson, since we


often paused and posed for photographs. Both of course,
replied Surli Walker. Were Asians. Totelle teed off at 5:20 pm at
the Old Course with her caddy, Alan Carlyle.
Joining the conversation regarding her St. Andrews episode,
Totelle waxed poetic. It was exactly 20 years ago when I saw
the Old Course on a Scotland tour. I havent picked up the game
and viewed the course as a big, bare garden by the sea. Now that
I played the Old Course, there is a yearning to be back. I simply
left my heart in St. Andrews.
Every time I swing the club, it feels like I made a hole in one,
said Mayenne Varua. My hubby Dong doesnt play golf. So
coming here with all women golfers in the holy ground of golf is
heaven sent.
After evading the notorious Road Bunker on the Road Hole at
17th, we sauntered to the 18th,
lingered at the 700 year old iconic Swilcan Bridge, did the Jack
wave, and doff our visors to St. Andrews.

We end the day with ale and regale ourselves of our errant shots,
putts, the potholes and surviving walking the grand the Ol
course!

was our third. Himalayas, the worlds first mini golf, elicited
smiles and fist pumps while putting the sharply undulating 27hole right beside the Old Course.

Twas a perfect script for the Sisterhood of Traveling Golfers in


Scotlands St. Andrews. Six days of perfect golf weather with long
summer days that adrenalin rushed golfers can play two rounds
a day, even tee off as late as 5:30 pm finishing before 10:30 pm
sunset. Golf nirvana.

Between our games, we explored the university town where


students with backpacks from the venerable University of St.
Andrews bump into golfers carrying golf bags. Most famous
alumni of the worlds third oldest university and Scotlands first Prince William and Kate Middleton.

The sisterhood of traveling golfers made history of sorts being


the first group of Filipino ladies to pay homage to the legendary
home of golf. Eight are members of the Tagaytay Highlands
Ladies Chapter -Dionne Cu, Totelle Dimson, Aloma Lopez,
Marge Tan, Betsy Tuason, Mayenne Varua, Rosalind Wee,
and Veronica Wuson. Travel buddy Surli Walker, a Canadian
Indonesian, made the 9th.

Ten days before the 2016 British Open, we day tripped to Royal
Troon, shaking hands in VR (virtual reality) with Jason Day,
James Speith, Rory McIlroy and lunched at Trump Turnberrys
Duel in the Sun framing the famous lighthouse.

The swinging skirts also tackled the tough 18-hole hilly Castle
course with spectacular views of the town, barley fields and the
Eden estuary. Jubilee, challenging 18-hole championship course,

The two week St. Andrews/Edinburgh/London swing was


bookended with Verdis Nabucco at the Royal Opera House and
2Cellos concert at the Old Royal Naval College in London. The
Philippine Air Lines straight flight from Manila to London was
the drive that started the swing of a lifetime dream come true.
And propelled more plans for girls gone golfing.

F&B Senior Manager, Fernan Digno believes in the balance of strict


management and empowerment. He added, to ensure the highest
quality of service, one has to be hard on detail, accuracy, efficiency
and costing but one needs to be soft to embrace hospitality and
cordiality to guests. This is the core of their passion for service
and he regularly shares this with his team. Fernan has a twentyyear badge to his expertise. He has been part of the Highlands
pioneering team in 1996 but left the company for a decade to
work in luxury cruises in Europe, Caribbean, and the Americas.
He returned to the Club equipped with hard-earned international
experience in 2009 and now heads the Food and Beverage Division.

The Highlands China Palace is another epicurean gem.


Headed since 1996 by its Hong Kong Chef, Patrick
Wong, the outlet at The Country Club serves a plethora
of authentic Cantonese cuisine choices to delight the
taste buds. Fine dining is always phenomenal as food and
architecture combine for the best palatable experience. The
massive green roof tiles, decorative motif, and crimson
columns herald the noble eastern designs from afar. Walk
into the Spring Garden for private banquet arrangements
or head off down stairs to the Winter Garden for its regular

There was big turnout at the 13th Louis Coson Friendship Cup that was held at the Midlands Golf
Course last June 2016. Among the attendees, only a handful of golfers were able to rise to the top of the

The Clubs of Tagaytay Highlands hosted the first by-invitation dinner for
its top patrons. Select attendees from the Tagaytay Highlands International
Golf Club, Tagaytay Midlands Golf Club and The Country Club at
Tagaytay Highlands were greeted by Manila Philharmonic Orchestra
Quartets chamber music performance. Top event stylist Michael Badang
Rueda adorned the interiors with rouge rose and indigo making the affair
truly warm and cordial. All gathered for a family-like feast at the newlyopened Conrad Manilas Forbes Ballroom. The event also launched the
Highlands Imperial Card to the attending members. The gold and brown
card would entitle a member to a roster of all-season discounts on club
facilities and services along with more privileges exclusively extended to

Harvest Festival at Pick and Pay


Kabalikat sa Kabuhayan (KSK) farmers from surrounding communities planted their crops for their hands-on practice at the Pick n Pay
area at Tagaytay Highlands. To celebrate the completion of their 12-week training conducted by program partner Harbest Agribusiness
Corporation, the 102 farmers held a harvest festival and was able to gather lots of fruits and vegetables from the 5,000 sqm land provided
by Tagaytay Highlands. Club members and guests may buy these fresh, organic produce any day at the Pick n Pay farm.

Youth Mass 2016
In 1st Timothy in the Bible, the Lord
encourages the youth to be very active
in their christian duties and not let their
young age be a hindrance. Every year,
Tagaytay Highlands reminds the youth
of that mission through the Youth Mass.
This years mass was presided by Rev. Fr.
Randell Marero.

Special Mass for Saint Teresa of Calcutta


Tagaytay Highlands celebrated a special mass at the Holy Family Chapel with the Order of Missionaries of Charity just few hours
away from Vaticans canonization ceremony of Mother Teresa of Calcutta. Club Members Nancy Coo, Allen Jimena and Miguel
Reyes proclaimed the Word of the Lord and led the Prayers of Faithful respectively while the Jimena Family brought in the gifts for
the celebration of Eucharist. Devotees of Mother Teresa attended the event with Reverend Father Dante Venus of SVD presiding the
morning mass.

The Nativity
of Mama Mary
In celebration of the Feast of the Nativity of
Mama Mary, the Clubs Catholic community
joined the Holy Family Chapel for an early
morning procession in and around the
Clubs residential areas and clubhouses,
followed by a eucharistic celebration back at
the chapel.

Grupo da Imaculada:
Flag Turnover

On September 12, the flags of the Grupo da


Imaculada were turned turned over to the
local chapters in the Philippines, Taiwan and
China. The event was held at the Carmelite
Convent in Lipa, Batangas. The Club was
represented by its General Manager, Claire
Kramer. The event was celebrated by His
Excellency Most Rev Ramon C. Arguelles,
D.D., Archbishop of Lipa, who also gave
a talk about Our Lady of Fatima and the
relevant issues around the Miracle of the Sun
which occured on October 13,1917.

Caritas Manila Donation


Tagaytay Highlands joined the countrys lead
Church non-profit organization, Caritas Manila,
in giving aid to our less-fortunate brothers and
sisters, Tagaytay Highlands donated beddings such
as towels, blankets, and pillows. Caritas Manila is
currently headed by former Bishop of Imus and
now Archbishop of Manila, H.E. Luis Antonio
Cardinal Tagle.

WESTERN UNION
ADVENTURE
Country Directors of Western Union all gathered at
Tagaytay Highlands for a week-long corporate planning
and team building. he program was devised by Club Sports
& Recreation Division Head Alfredo Labadan II and WU
Senior Manager Anil Santhapuri, both members of the
International Coach Federation. Their event included
seminars, meetings, eco trekking, bird watching, and
adventure-based team building.

SGV DAY
SGV & Co, the largest Professional service firm in the
country, decided to stay at Tagaytay Highlands for 2 days as
part of their formation activities for their executives. Aside
from seminars, they also had a team building activity with
one activity called Prisoners Dilemma as the main event.
The activity deals with the idea on why two completely
rational individuals might not cooperate, even if it appears
that it is in their best interests to do so.

CHAMPION
Tagaytay Highlands bested participants from the different golf
clubs and was able to bag the Overall Champion title in this
years FEDCOHR Interclub Sportfest. Out of the 11 games, Team
Highlands was able to get 8 Gold Awards, 4 Silvers, and 3 Bronzes.

Club Member, Chats Billano, held once again
her own brand of badminton tournament for
Club employees at the Sports Center. This
tournament is one of the ways employees
from different division are able to build
relationships from healthy competition.

Blooming 6th Year


It is said by Dr. Jerome Lejeune that, To look at a child
as a child first and his disability second. Love that child
unconditionally and that child will bloom, and true enough,
this was witnessed in our participants during Lets Get High
6 with the theme, Allowing the Flowers to Bloom.
It was another heart-warming and inspiring day spent with people with disabilities who
came from beneficiary organizations of Down Syndrome Association of the Philippines,
Inc. (DSAPI) - also an event partner - CommuniCare, Autism Society Philippines
(ASP), Parent Advocates for Visually Impaired Children (PAVIC),and Parent Council
Welfare for the Hearing Impaired Children (PCWHIC).
Volunteers or the ates and kuyas from one of the event partners, De La Salle University
Manilas Center for Social Concern and Action (COSCA), were extremely delighted that
they shared their Saturday paired with a kid participant. A learning and unforgettable
experience for the volunteers, the participants and the parents, and even for the
Tagaytay Highlands employees present during the activity as they went for a trip at
Animal Farm, tree-planting at Camp Highlands, and vegetable picking at Pick & Pay.
The day was commenced with a lunch-gathering at Bistro Saratoga with raffles and
presentations from the volunteers and children.

Security Force

As one of the countrys biggest leisure developments, Tagaytay


Highlands is equipped with a 24/7 security force stationed
inside the complex. From main gates, village entries, outposts
and roving units, we assure of our members and guests safety.
Checkpoints and security measures are employed to all guests,
suppliers, and affiliates as provided by our Universal Guidelines
on entry. Sufficient night duty officers are deployed daily in the
estate.

Corporate Outreach Programs

This season, Belle Corporation is scheduled to contact its Eye


Mission in Talisay City. This will cover the Barangays of Aya,
Tranca, and Quiling. Another batch of donation is extended
to Talisay School of Agriculture with the turnover of used and
refurbished computer units. Apart from these, the External
Affairs has concluded several donations to the community.
Barangay Tumaway received a portable generator and antidengue pesticides benefiting 2,684 residents. Similarly, Barangay
Quilings 12,879 residents benefited to the anti-dengue
pesticides. Continuing the Feeding Program for SY 2016-2017,
Belle Corporations Health and Education Initiatives reached 254
special case students in Suplang, Sulpoc, Montana, Tranca, Aya
and Quiling Elementary Schools.
