Preparethecurefortheporkbellybymixingalloftheingredientstogetherinasmallmixingbowl.Place
theporkbellyonacleansurfaceandrubgenerouslywiththecuremixonbothsides.Placethebellyinto
aziplockbagandpouranyremainingsaltcureoverthepork.Sealthebagtightlyandplaceintothe
refrigeratorovernight,turningthebagoveraftertwelvehourstoinsureevencuring.Removethepork
aftertwentyfourhoursandrinsewellundercooltapwater.Patdryandplaceonawirerackandintoa
smokerat250degreesforthreetofourhoursuntilforktender.Besuretosoakthehickorychipsforat
leastanhourbeforeusing.
Removetheporkfromthesmokerandallowittocool.Cutthebellyintoby3stripsandsetaside
untilreadytouse.

Boilfourcupsoflightlysaltedwaterandblanchtheasparagusforthreeminutes,removefromwater
andplungeintoanicebathuntilcooledcompletely.Drainthewaterandsettheasparagusasideuntil
timetoplate.
Placetheeggyolk,vinegar,mustardandchoppedchivesintoasmallmixingbowl.Slowlywhiskinthe
oliveoiltoformastrongemulsification.Seasonthevinaigrettewithsaltandwhitepepper.
Fortheeggs,bringfivecupsofwatertoaslowboilandgentlyaddtheeggs.Allowtheeggstocookfor
exactlyoneminuteandtwentyseconds.Removethepotfromthestoveandletsithotforseven
additionalminutes.Removetheeggsfromthewaterandplaceintoanicebathforthreetofour
minutes.Whencoolcrackthetopinchoftheshellandremove,leavingtherestoftheeggprotectedby
theshell.Sprinkletheeggwithseasaltandplaceintoasmallcuptoallowtheexposedeggtorestabove
therimofthecup.Servewithasmallspoontotheside.Dividetheasparagusupandplacetothesideof
theeggonasmallsaladplate.Seasontheasparaguswiththesherryvinaigrette.Placetheporkbellyon
thegrillovermediumhighheatuntilwarmedthroughandgoldenbrown,threetofourminutesperside.
Seasonthearugulawiththeremainingvinaigretteandplaceitovertheasparagus.Toservebreakopen
theexposedeggandspoonitoverthesaladandporkbelly.
