Given the quality of submissions for the Call's 21st annual Home for the Holidays Recipe contest, judges had a difficult time selecting the winning recipes.

Readers prove theyre creative chefs


with entries for Calls recipe contest
Readers continue to prove they are extremely creative cooks, as evidenced by
the concoctions submitted for the newspapers annual Home for the Holidays
Recipe Contest.
With no shortage of submissions, the
entries left judges in a quandary over selecting the best. But the judges rose to the
occasion in naming the winners for the
21st annual Home for the Holidays Recipe
Contest, which is based on the 1995 film
with the same name whose release was
promoted in the Call.
This years winning recipes come from
chefs in Affton, Crestwood, Green Park,
Oakville, Springfield, East Carondelet, Ill.,
and Waterloo, Ill.
Readers are encouraged to try out these
recipes for themselves and perhaps create some new holiday traditions for their
families. Enjoy!

Hors doeuvres
Marinated Cheese

1 envelope Good Seasons


Italian dressing mix
cup vegetable oil
cup white vinegar
2 tablespoons chopped green
onions, tops only
2 tablespoons water
1 cup sugar
1 8-ounce block
Monterey Jack cheese, chilled
1 8-ounce block
cheddar cheese, chilled
1 4-ounce jar chopped pimento,
drained
Whisk together dressing mix, oil, vinegar, green onions, water, and sugar. Cut
Monterey Jack cheese in half lengthwise.
Cut each half crosswise into -inchthick slices. Repeat with cheddar cheese.
Arrange cheese in four rows in a shallow
2-quart baking dish, alternating Monterey

Jack and cheddar cheeses. Pour marinade


over cheese. Cover and chill at least 8
hours. Drain marinade; arrange cheese on
a platter in rows.
Top with pimento, and serve with assorted crackers.

Tender Turkey
Hobo Crock Turkey Breast

5- or 6-pound turkey breast


1 teaspoon paprika
teaspoon salt
1 teaspoon ground black pepper
teaspoon garlic powder
teaspoon mustard powder
1 or 2 onions, quartered
2 or 3 tablespoons olive oil
1/4 cup white wine
Mix paprika, salt, pepper, garlic powder
and mustard powder in a small bowl. Make
sure turkey breasts are dry. Rub mixture
over turkey.
Line a large slow-cooker with a sheet
of heavy-duty foil enough to cover the
breasts. Drop in onion quarters and place
breasts on top. Mix olive oil and white
wine and pour over breasts. Fold the foil
over the turkey in a snug fit and cover.
Cook on high for 4 to 5 hours or on low
for 7 to 8 hours. Internal temperature should
be 165 degrees. Carefully lift the turkey out
of the slow-cooker. Discard the onion. Let
turkey sit for a few minutes before carving.
Yields 16 4-ounce servings.

4 10-ounce cans beef consomm
2 carrots, diced
2 stalks celery, diced
1 cup baked potato with skin, diced
1 can green beans, drained
16-ounce can diced tomatoes,
onion, garlic
10-ounce can corn, drained
10-ounce can peas, drained
Melt butter in soup pot. Add flour. Stir
for 3 minutes. Add consomm.
Add vegetables except onion. Cook over
medium heat until tender. In separate pan,
brown beef and onion. Drain and add to pot.
Serves 6 to 8 or more.

Moms Tasty Dressing

12 cups day-old white bread cubed


2 celery ribs, chopped
1 medium onion, chopped
1 stick butter
1 teaspoon sage
1 teaspoon poultry seasoning
teaspoon sea salt
teaspoon black pepper
1 14-ounce can chicken broth
In a large skillet, melt butter on low.
Then saut celery and onion in butter until tender. Stir in the seasonings.

Place bread cubes in a large bowl. Add


vegetable mixture and toss to coat. Stir in
broth. Spray slow cooker with Pam, put
dressing mixture in a 3-quart slow-cooker.
Cover and cook for 3 to 4 hours. If dressing mixture is too dry, add another can of
chicken broth before you cook it.
My mom used to bake in the oven, but I
cook this in a slow-cooker and it is so tasty.

onion; toss to combine. Combine dressing
ingredients in a small mixing bowl. Pour
over salad and toss to coat. Sprinkle with
remaining cheese. Top with dried cranberries and almonds. Serve immediately.

Baked Ham
With a Bacon Weave

Hot Buttered RumChata

15-pound bone-in ham,


fully cooked
1 pound bacon
3 cups pineapple juice
cup brown sugar
2 tablespoons mustard

Simple Spinach Salad

8 ounces fresh spinach


cup feta
or goat cheese, crumbled
small red onion, thinly sliced
cup dried cranberries
2 tablespoons toasted sliced
almonds, optional
Dressing:
cup bottled balsamic
vinaigrette salad dressing
2 tablespoons orange juice
1 teaspoon orange zest, optional
Wash and clean spinach. Tear into bite-

slicing ham, you may want to pour juices


from the pan over the top to keep it moist.
Can you go wrong with bacon and ham,
and if youre going to make such an awesome meal, do calories really count? I
would say not. This is definitely not something I would make for an everyday dinner,
but its a wonderful special-occasion treat!

Make a 12-inch-by-12-inch square weave


of bacon. Lay bacon on a pan and weave in
and out of each other, until youve created
what appears to be a square.
Put ham in a deep pan. Lay weave on top
of ham and secure with toothpicks. Pour
2 cups of pineapple juice in the pan. Bake
2 hours in a 300-degree F oven. If during
this time the bacon starts to look too crispy,
cover it with foil until time/temperature is
reached 140 or so degrees.
Mix 1 cup pineapple juice, brown sugar
and mustard in a saucepan. Cook until it
thickens and then brush over the bacon/ham.
Place back in the oven for another 30 to
45 minutes temperature of about 160
degrees. Let ham rest for 5 minutes. After

1 cup spiced rum
1 cup RumChata, room temperature
whipped cream for garnish
Combine brown sugar, butter, salt and
hot water in crockpot. Add cinnamon and
cloves. Cover and cook on low for four
hours. Stir in rum and RumChata. Ladle
into mugs and top with whipped cream.

1 tablespoon ground cinnamon
Cream cheese frosting
3 ounces softened cream cheese
cup softened butter
1 cups confectioners sugar
teaspoon vanilla extract
1 tablespoon milk, more
if you like thin frosting
Preheat oven to 375 degrees.
Unroll sheet dough into one large rectangle. Spread pumpkin butter evenly over
the dough. Evenly sprinkle brown sugar
and cinnamon over the pumpkin butter.
Starting with short side of the rectangle,
roll up into a log. Using string, dental floss,
or a serrated knife, cut the roll into 10 slices. Place slices, cut side down, in a greased
8-inch-by-8-inch baking dish.
Bake 18 to 20 minutes or until golden
brown. Let cinnamon rolls cool in pan for
5 minutes. While the cinnamon rolls are
cooling, make the cream cheese frosting.
In a medium bowl, stir together cream
cheese and butter until smooth.
Whisk in the confectioners sugar, vanilla and milk. If the frosting is still too thick,
add a little more milk and whisk until
smooth. Spread frosting over cinnamon
rolls and serve. These yummy cinnamon
rolls are a fall favorite!

Swiss Vegetable Casserole

1 can condensed cream


of mushroom soup
cup sour cream
teaspoon pepper
1 bag frozen California vegetable
blend broccoli, cauliflower,
carrots thawed
1 cup French fried onions
1/2 cup shredded swiss cheese
Stir the soup and sour cream, pepper,
vegetables, cup onions and cup cheese
in a 2-quart casserole dish, cover.
Bake at 350 degrees F for 40 minutes or
until vegetables are tender. Stir the vegetable mixture. Top with the remaining
onions and cheese. Bake for 5 minutes or
until cheese is melted.

of granulated sugar, divided
1 cup all-purpose flour
1 teaspoons baking powder
teaspoon salt
1 tablespoon cinnamon

3 cups blackberries,
fresh or frozen
Preheat oven to 350 degrees F and grease
a 9-inch round baking dish with butter or
nonstick cooking spray. In a medium bowl,
stir together 1 cup of the sugar, flour, baking
powder and salt. Add milk and combine.
Add the melted butter and whisk until
smooth. Pour the batter into the greased
baking dish. Scatter the top with all of the
blackberries. Sprinkle cup of sugar over
the top. Bake until edges are golden and

crispy, 50 to 60 minutes. When 10 minutes remain and topping is just turning


golden sprinkle with remaining 2 tablespoons sugar. I added a pinch more when it
was completely done for a powdery look!
Serve warm with ice cream or whipped
cream if desired! Enjoy!

Stuffing/Turkey Meatballs

2 large eggs
2 tablespoon grated Romano
or Parmesan cheese
2 cloves garlic, chopped
Salt
Pepper
1/2 cup parsley
1 cups leftover stuffing
chopped
1 pounds ground leftover turkey
1 cup marinara or pasta sauce
Heat broiler. Line a broiler-proof rimmed
baking sheet with foil. In a large bowl,
whisk eggs, cheese, garlic, teaspoon salt
and teaspoon pepper. Stir in parsley.
After using a blender to chop the turkey
and stuffing separately, I use the Ninja
blend all ingredients by hand.
Form the mixture into roughly 12 meatballs about 3 inches each and place on
prepared sheet. Broil until cooked through,
8 to 10 minutes; flip them over halfway.
Serve with red sauce. Can be served on
hoagie rolls as well.

Eve and Other Stories returning as the centerpiece of the show to mark that albums
20th anniversary, TSO is bringing back
The Ghosts of Christmas Eve, the rock
opera that was featured for the first time on
TSOs holiday tour last year.
What happened? Basically, ONeill decided to heed the time-honored advice to
give the people what they want.
The amount of fan mail basically of
people that loved it, then asked if we were
going to be doing it again, he said, revealing that fan response convinced him to
bring back The Ghosts of Christmas Eve
for a second year. We exist for the fans.

Last year at this time, Paul ONeill, founder of the Trans-Siberian Orchestra, was already looking forward to the combination
rock band/orchestras 2016 Christmas tour.
This year marks the 20th anniversary of
the album that not only put TSO on the
musical map, it established the group as
a mainstay during the holiday season and
set the stage for TSO to grow into what is
now the most successful annual touring act
during the Christmas season.
That album was Christmas Eve and
Other Stories, and ONeill was promising that TSO would do something big this
holiday season to celebrate that anniversary and that albums legacy. So now the

Letter From Santa program benefits library


Friends of the Kirkwood Public Library
once again will sponsor its Letter From
Santa program that raises money for the
library, as well as helping Kris Kringle
with his correspondence.
A person ordering the letter answers a
few basic questions about the intended
recipient, such as the childs favorite class
in school and recent accomplishments, according to a news release.
Santa then uses those answers to write a
very personalized letter.
The letters dont have to go to children.
College students, spouses, adult siblings,
seniors, members of the military, and even
pets have all received letters, putting some
additional smiles on their faces during the
holiday season, the release stated.
Because the program involves the mail,
the requestor and the recipient can be anywhere.

Ironically, The Ghosts of Christmas
Eve was not created with the idea that it
would be performed on the concert stage,
which is a main reason it was never performed in its entirety live until last year.
The project came about when the Fox
television network approached ONeill in
1999, asking him if TSO would do a
one-hour version of the groups recently
completed rock opera, Beethovens Last
Night, as a television special.
I asked Why? ONeill recalled. And
they said, Well, Dec. 2 we had a show
drop out. I said, If you give me an hour,
Ill give you a movie. They said, Do you
have a script? I said, Ill write it tonight.
We took it pretty simple, a runaway
from the Midwest comes to New York
City, breaks into an old band in Vaudeville
Theater, he said, outlining the story.
There she was discovered by the caretaker, played by Ossie Davis, who uses
the ghost and the spirits of the band and
theater to turn her life around.
We were really lucky, because people
like Jewel and Michael Crawford joined us
to play some of the ghosts. It was only supposed to run once and then run again, but
it did so well for Fox they ran it multiple
times. Then it took off in syndication and
between public TV and all these different
stations, it runs pretty much every year.
The Ghosts of Christmas Eve is now
just one of many success stories that are
part of TSOs two-decade history.
Since that special aired, TSO has gone
on to become a major success, with
Christmas Eve and Other Stories, a triple-platinum hit, leading the way. Its other
releases include two holiday rock operas,

The Christmas Attic (1998) and The


Lost Christmas Eve (2004), and three nonholiday rock operas, 2000s Beethovens
Last Night, 2009s Night Castle and
2015s Letters From the Labyrinth. In
all, TSOs CDs and DVDs have sold more
than 10 million copies.
The groups annual Christmas tour is easily the most popular holiday tour going. It
went straight to arenas its first year in 1999
and last year grossed $45 million in 45
days. This year, the two touring companies
of TSO, each numbering some 60 singers
and musicians, will play 60-plus cities.
ONeill promises that this years holiday
show will continue TSOs tradition of putting on what many consider the most visually spectacular productions of any touring
band, deploying all manner of pyro, lighting and other special effects. ONeill knows
he could cut back on the visuals and boost
TSOs bottom line, but refuses to do so.
The look on the kids faces when they
see an effect that has never been done before, its just worth it, ONeill said. We
do a lot of other silly things. One of the
reasons we put the stage in the back of the
arena is so that during the show theres at
least, theres always going to be a point
during the show where youre like in the
best place to see the show.
I remember the first time we did it, the
accountants going, Paul, you cant do this.
You are killing seats. You are killing floor
seats. Im like, Yeah, but it looks really,
really cool. True story. The next day when
I showed up at rehearsal, the accountant
bought T-shirts for all of the crew. In the
front it just had a little TSO logo. On the
back in big block letters it says, Jesus
saves, Paul spends.
