Dick's Bar: Bio | Cocktails

Hidden away in the depths of Friday night television is a small


bar, with only one bartender and one customer. Meet Dick -
creator of all things tasty, fantastic and above all extremely
alcoholic. Each week Dick revealed all on the cocktail of his
choice with step by step instructions on how to make it with the
odd "did you know?" about the drinks past.

He's smooth, he makes good drinks and unlike that other barman
in The Shining, he's not going to suggest you butcher your family
with a fireman's axe....

Dick Bradsell is London's premier, and Jamie Oliver's favourite


cocktail bartender.

In this series of shorts he reveals the secrets of making the


perfect cocktails.

He also describes their origins, the variations which have been


made over the years, as well as the many surprising and often
bizarre facts and fantasies which have attracted themselves to
cocktails such as the Singapore Sling, the Zombie and the French
75.

Ernest Hemingway enjoyed Daiquiris. He drank them to forget.


They obviously didn't work - because he had to go one step
further and blow his brains out.

Dick's Bar is to be found somewhere between the Hereafter and


The End of the World. A deserted basement club where a solitary
customer must return again and again, his only solace being
some of the finest cocktails ever created.

Bio:

Dick Bradsell was brought up in Cowes on the Isle of Wight. He


first started working for his uncle, a manager of the Naval and
Military club, Piccadilly. He later then trained for 4 years as a
cocktail bartender under Ray Cook at the Zanzibar Club. After his
training he specialized in opening bars and clubs including Dome
chain, Groucho Club and the Flamingo Club to name but a few.
Later he opened a bar consultancy company called Bar Solutions.
He spends some of his time training bar staff around the UK.

During the last decade, he started writing first for Arena


magazine, the Attitude and Time Out. He still has is own column
in Class magazine and is responsible of having to review the
quality of cocktails in bars across the country. In a similar vein
he also judges about ten to twelve cocktail competitions a year.
This year he's being chosen as one of the judges for the
Glenfiddich Awards. Dick has also won numerous awards for his
impressive cocktail making.

The Daiquiri, favoured drink of one Ernest Hemingway. Into a
shaker full of ice pour exactly50mls Cuban rum12.5 mls fresh
lime juice3 barspoons sugar syrupadd a handful of crushed ice
shake vigorouslyStrain through a wire mesh into a prechilled
cocktail glass.

liqueur(or the juice that comes with the cocktail cherries) add a
scoop of crushed iceBlend for 14 seconds. Pour into glass.
Garnish with a half cherry.

world" Mai Tai - which sadly has now become extinct... Into a

cocktail master Dick Bradsell shakes and makes that best "hair of
the dog" hangover cure of all time: The Bloody Mary.Into a glass

Enemy army stolen all your cannons and started firing them back
at you? Then why not make a cocktail so you can toast your
cheeky foes and your stolen artillery at the same time? That's
exactly what the French did in World War I and that's what Dick
Bradsell does tonight as he turns his bar into the Somme to
explain this drink's rather bizarre origins.

2 teaspoons sugar syrup

Strain into champagne flute.

beverage has been the bane of inexperienced bar staff the world
over, but 4Later's very own master barman Dick Bradsell tonight
clears up all mysteries as he demonstrates the perfect way to
make one - just don't forget the spoon... Into a wine glass pour
50mls Irish Whiskey2 teaspoons of sugar syrupAdd a spoon to
the glass!!!!! Top with hot black coffeeStir gently from side to

float on drink.

It's last orders at the 4Later bar and barman supremo Dick
Bradsell concocts one final cocktail for the road that is
guaranteed to put a spring in our step: The Mint Julep.

Put 4 heads of mint into a glassadd 3 teaspoons of sugar syrup


Muddle mint into sugar to release oilsAdd two straws to glassFill
with crushed iceAdd 50mls of bourbonChurn until glass is frosted
Add more crushed ice. Slap a sprig of mint and use as garnish.
Drink through straws.
