INGREDIENTS
250g butter, softened

1 cup caster sugar

2 teaspoons vanilla essence

3 eggs

2 1/2 cups self-raising flour

2/3 cup milk

icing sugar mixture, to serve

METHOD
Step 1

Preheat oven to 180C/160C fan-forced. Grease and line an 8cm-deep, 19cm


(base) square cake pan with baking paper.

Step 2

Using an electric mixer, cream butter, caster sugar and vanilla in a medium bowl
on medium-high speed until light and fluffy.

Step 3

Add eggs, 1 at a time, beating to combine. Add half the flour. Stir to combine.
Add half the milk. Stir to combine. Repeat with remaining flour and milk.

Step 4

Spread mixture into prepared pan. Bake for 1 hour or until a skewer inserted
into the centre comes out clean. Stand in pan for 10 minutes. Turn out onto a
wire rack to cool. Dust with icing sugar. Serve.

Tried this recipe. Simple, easy, and tasty! I used loaf pan () and it turned out great! Just the
outer surface is a little bit crispy. Maybe the temperature should be reduced a little. And I
didn't use mixer, just by hands.. Simply delicious plain butter cake. Perfect for an afternoon
tea!

Made this yesterday. Turned out nice but I guess it's meant to be a base cake for decoration
as it's not sweet. If I were to make it again wld probably add more sugar to maybe 1 1/2
cups, unless I plan to have iy covered with icing or jam or something else that'll compensate
for sweetness. Overall it's a good recipe, soft and moist.

I really do not know why this has been rated so high. It leaves an unpleasant aftertaste. I'm
not sure why this is so.. my guess - too much self-raising and/or too much vanilla essence. I
found a much better recipe (which I tried at the same time to accurately select the best)
which used more eggs (more moist), less flour ratio to caster sugar and only 1 tsp of vanilla
essence.

This recipe has a real baking powder taste, if like me you want a buttery moist cake use the
Taste recipe
called Princess Rainbow Cake. You can adapt it to a plain butter cake by making it as one
large cake and omit the food colouring.

Made this for my dad who has fond childhood memories of home made butter cake. He
loved it and has requested for all birthday occasions in the family. Super easy. The trick is to
make sure the butter and sugar are super fluffy (sugar almost melted) and white in colour

This is a very tasty butter cake recipe. However, I found that after the hour of baking was
done, my cake was gooey in the middle. I popped it back in the oven with aluminum foil
over the top for another 40minutes and it came out cooked beautifully. Will be baking again
with the modification.
