Words from our chef

Each month, we like to share a little of whats cooking in our minds and ovens.
Our dishes change frequently. Were always learning about regional cuisines, new
techniques and most importantly, what our customers prefer to find on our menus.

The decadent layers of opera cake

Opera gteau was invented by pastry chef Cyriaque Gavillo in 1955, who desired to
make a dessert that satisfied the entire palate in only one bite. Layers were the answer,
and his wife cleverly named it after Pariss Palais Garnier opera house, which mirrors
the decadent layers in its gilded tiered balconies.

The layers are joconde almond sponge soaked in coffee syrup, coffee buttercream and
chocolate ganache. As with many French patisserie items, making the cake can be
time consuming, so its a good thing these ingredients work so well together.

Those who love their coffeeflavoured desserts may pick up on some similarities
between this and Italys tiramisu, and others may say its simply a variation of Hungarys
chocolate and caramellayered Dobos torte, both of which have already been around
for a long time before opera cake. But at the end of the day (or the middle of a flight)
it doesnt matter what it is named, or how it came about, so long as it tastes and
looks good. And we think it does.
