Chris Haisma and Brad Serot Announce That

Clever Rabbit Will Open On May 23

CHEF MATT LAIR BRINGS AN INVENTIVE, VEGETABLE-CENTRIC


MENU TO THE HEART OF CHICAGOS WICKER PARK

Chicago, IL May 2017 Co-owners Chris Haisma, of The Betty and Sparrow, and
Brad Serot, along with Partner Nick Pagor, are excited to open Clever Rabbit in bustling
Wicker Park at 2015 W. Division Street. Clever Rabbit is a contemporary American
restaurant with a focus on fresh, seasonal vegetables, as well as thoughtfully sourced
meats and seafood. Chef Matt Lair will take a signature root to leaf approach to
vegetables, utilizing them in their entirety in his creative takes on familiar flavors.

As Wicker Park continues to grow and change, we wanted to bring something unique to
the neighborhood, said Clever Rabbit Owner, Chris Haisma. For years, I have wanted
to work in a restaurant that presents delicious food but in a healthier way.

The Clever Rabbit menu by Chef Matt Lair (formerly of Bom Bolla) is divided into four
sections including: Salads, Vegetables, Plates, and For The Table and there will also be
a childrens menu upon request. The healthy, nourishing menu features imaginative
vegetable dishes, such as:
Carrot Dumplings: Roasted Carrots, Ginger, Herbs, Honey
Chinese Broccoli: Salt + Pepper Tofu, Fermented Black Beans, Citrus
Crudit Platter: Raw + House Pickled Vegetables, Ramp Conserva, Smoked
Mushroom Mousse, Eggplant Agridolce, Summer Truffle, Hemp Seed Naan
Meat lovers need not fear, as the menu also hosts a wealth of seafood options like a
Cold Smoked Shima Aji (Mackerel, Pimenton, Kumquat, Manzanilla, Sherry), Scallop
Schnitzel (Braised Cabbage, Caraway, Anchovy) and Salmon (Juniper Poached Salmon,
Roasted Heirloom Carrots, Olivada, Capers); as well as proteins like a Half Roasted
Chicken and a Double Cheeseburger, appropriately named The Fat Rabbit.

Clever Rabbit Partner Nick Pagor will oversee the beverage program, which will have a
focus on wine, including a number of patio friendly bottles of bright whites, orange wine,
ross, and bubbles. Clever Rabbit will also have ten draft handles dedicated to craft beer
and ciders, as well as a robust cocktail program that will mirror the healthy food menu.
Expect interesting ingredient combinations, like a Carrot Margarita with Sage and a
Matcha Gin and Tonic.

Clever Rabbit will house 80 seats in their dining room, with an additional 12 seats at the
bar and a 50-person patio on lovely Division Street. The design is playful and bright, with
eclectic artwork, stunning metallic chandeliers, live plants and a moss wall created by
Bottle & Branch. Guests will also be able to enjoy what has become a staple in Chris
Haismas restaurants a record player and bountiful vinyl collection.
