Its a kiwi innovation thats causing a storm in a teacup. Thats because those clever clogs at Red Seal have perfected a way to

Its estimated that 168 million children globally are engaged
in child labour, of which 73 million are between 5 and 11 years old.
A group of New Zealand designers are adding their voices to

According to another ILO report, Global Child Labor Trends 2008 to

2012 (published in 2013), the largest number of child labourers existed
within the Asia-Pacific region, while Sub-Saharan Africa has the highest
incidence of child labour. In Latin-America, the number of child labourers is
low in comparison with Asia-Pacific, but persistent especially when
looking at hazardous work.
But what happens to the children once the labour is removed? In the
case of Child Labor Free, its Foundation is dedicated to ensuring any child
found in labour is cared for and not disadvantaged by CLFs intervention.
Our team has processes and procedures in place in instances where child
labour is found in a supply chain, as well as relationships with NGOs
[non-governmental organisations] and other organisations who work in
this area, and other community-based programmes, to ensure children and
their families are cared for, Pratt says.
Throughout the accreditation process, CLF supports brands as they
work back through their supply chains, to certify their products at a
manufacturing level, component level and eventually all the way back to
their source materials, from cotton to the metal used to make zips.
From the consumers perspective, the mark will give them the
information they need to make an informed choice, Pratt says. One thing
we want to stress is that this is a positive movement for change. This is a
highly complex issue and for a company to come out today and say theyre
prepared to take this first step with us is a bold move, but one we believe
their consumers will reward them for.
This is backed up by Dr Amabel Hunting, an expert in consumer
behaviour and ethical consumption, from Auckland University. While
ethical consumers were once considered a niche group, recent research
has found an increasing number of consumers across the market are
concerned about these issues. This is especially true among the younger
generation. Were moving into an era of mindful and conscious
consumption. People want to know: Where have these products come
from? Who made them? And how are these people being treated? Child
labour has really been the hidden issue thats now coming to the forefront.
As a society, were empowering consumers to shape the market, based on
the choices that they make. Were living in a time of transparency
and brands that are open and honest about this are getting rewarded, and
brands that hide things are really getting called out for it.
The fact that CLF is a consumer-led movement is something that Emily
Miller-Sharma, designer of label Liam, applauds.
Liam and its sister label Ruby (designed by Deanna Didovich), are
manufactured in China as well as New Zealand. The most common
questions they are asked by customers are around where the clothing they
are producing is made and if the garments have been made with slave
labour or by children. Every time someone asks that question
of a producer they are contributing to the movement, which I think is really
cool, Miller-Sharma says. And, we are actually consumers of our factories,

It wasn t long ago that when you bought your eggs

you didn t know whether they were free-range or caged,
badly-kept chickens. But now we all know we can choose.

E hippy uncle would do, but theres a growing

trend in using colourful blooms to brighten up
food. Its far from a new concept, in fact using
flowers in food dates back to the Stone Age. In 15th
century England it was particularly popular: herb and
flower salads using violets, daisies and borage were
common, along with cakes made with rosewater and
elderflower vinegar. Sage flowers, lavender, and peonies
were made into conserves, which had medicinal virtues.
By the 18th century, there were cookbooks filled with
instructions on how to candy all sorts of flowers.
There is something magical about putting flowers in
your food; scattering their bright petals like confetti
over salads and desserts turns any meal into a
celebration. Flowers are a happy ingredient that make it
feel like summer, no matter the season. And not only
are they beautiful and uplifting, many of them are high
in nutrients with antioxidant and anti-inflammatory
properties too.
With their delicate and cheerful appearance, edible
flowers can make even the simplest of dishes look
spectacular. Although they each have their own subtle
flavours and scents, their primary role is to look pretty
they can inspire creativity and turn a cook into an
artist. Try using them as a healthy alternative to icing or

Say cheers with Kvass

Soda is too sugary, and beer and wine are too boozy. Coffee and tea may
keep you buzzing all night long, and water, while great for hydrating our
bodies, doesnt always wow our taste buds. So what are thirsty folks to do?
Drink kvass! These fermented drinks push every health button, from
vitamin and mineral content to probiotic pizazz, all while tasting great.
Every vegetable has its own flavour signature. Some are fresh and acidify
quickly, while others are earthy and funky. Many of these drinks can be
made fizzy through bottling, if youre the bubble-loving type. Kvass is
traditionally made from beets, but any vegetable that ferments well will
give you a top-notch beverage.

Red Beet Kvass

Makes 3 litres

3 large beets (1.4kg) 3 litres filtered water

2.5cm of ginger, grated 1 - 2 teaspoons salt (optional)
1 cup whole basil stems

Remove the beet greens and wash the beets. Trim any unattractive
bits of root and any soft spots and cut each beet into eighths.

Add the beets, ginger and basil to a 4 litre jar. Pour the water in and
cover the jar either with an airlock or with a lid left loose enough to
Avas Hot Pink Kraut allow CO2 to escape.

Allow to ferment at room temperature for six to 10 days and then strain
the liquid into a clean jar and chill before drinking.

Sunny Herb Kvass

Makes 3.5 litres

1 bunch of flat-leaf parsley teaspoon sea salt

1 bunch of coriander 3 litres filtered water
1 bunch of basil

Pick through the herb bunches, removing any yellowing or browning

leaves. Rinse the herbs and place the whole bunches and the salt into
a 4 litre jar. Pour in the filtered water until the jar is full to 5cm below
the rim or fill all the way to the rim and place in a bowl for the duration
of the fermentation.

Cover your jar, making sure it can vent CO2, and allow to ferment at
room temperature for five to six days. Strain the liquid into a clean jar
and chill before drinking.

Top Tips
When brewing, kvass is prone to having a surface layer of Kahm yeast
form. This is harmless and can be skimmed off. Swirling the jar daily,
however, can help prevent it forming.
Water-sealing crocks or large jars that seal with a gasket and clamp are
good for making kvass.
