I am working as a commis chef at art Rotana amwaj island hotel, Bahrain.
Wu restaurant -it's basically Asian cuisine speciality restaurant Thai, Malaysian, Japanese,
Arabic, Korean. 150 capacity restaurant with bar.
My responseblity-
Make mise en place
Help the chef for making food,
Maintain the basic food hygiene.
Maintain the first in first out.
Prepare and cook food according to recipes and flow the standard -
salad section -pamalo salad, papaya salad, Wu lettuce wraps, rosted duck watermelon salad,
Fry and grill section - all tempura items, Japanese crispy chicken, Kalbi beef rib,Malaysian
short ribs, crispy fry fish, miss chilean sea bass, tariyaki chicken,
From the wok- deferment type of fry rice like nasi goring, young chow fry rice, different
types of noodles like pad Thai, me goreng, lobster chow neon. And beef broccoli, crispy
calamari, Kung Pau prawns, kai pad mad. Rest duck. Thai curry, deferent types of soup,
and sushi.
