OriginandDevelopmentofNFPA96
Thesubjectoftheventilationofrestauranttypecookingequipmentwasfirstconsideredby
theNFPACommitteeonBlowerandExhaustSystems.Thatcommitteedevelopedmaterial
onventilationofrestauranttypecookingequipmenttobeincludedinNFPA91,Standard
fortheInstallationofBlowerandExhaustSystemsforDust,Stock,andVaporRemovalor
Conveying.ThiswasadoptedbytheAssociationin1946.Revisionstotheapplicable
sectionswereadoptedin1947and1949.
WhentheNFPACommitteeonChimneysandHeatingEquipmentwasorganizedin1955,
thematerialonventilationofrestaurantcookingequipmentinNFPA91wasassignedtothis
newcommitteewiththesuggestionthatitberevisedandpublishedasaseparatestandard.
Thus,inrecentyearsthisstandardhasbeenpublishedasNFPA96.Previouseditionsofthe
standardpreparedbytheCommitteeonChimneysandHeatingEquipmentwereadoptedby
theAssociationin1961,1964,1969,1970,1971,1973,1976,1978,1980,and1984.

TheCorrelatingCommitteeonChimneysandOtherHeatandVaporRemovalEquipment
wasdischargedbytheStandardsCouncilin1986.TheTechnicalCommitteethatprepared
the1987editionbecameknownastheTechnicalCommitteeonVentingSystemsfor
CookingAppliances.
Inthe1991edition,clearancerequirementstocombustiblematerialwererevisedand
expanded,includingappendixfiguresthatillustratedexamples.Anewdefinitionfor
limitedcombustiblewasaddedtothestandard,andanappendixtablewasincludedtoshow
typicalconstructionassemblies.Chapters3and4weretotallyrevised.
Inthe1994edition,theCommitteechangedthenameofthestandardfrom Standardforthe
InstallationofEquipmentfortheRemovalofSmokeandGreaseLadenVaporsfrom
CommercialCookingEquipmenttoStandardforVentilationControlandFireProtectionof
CommercialCookingOperations.Thetitlechangereflectedotherchangesinthestandard
twonewchaptersonrecirculatingsystemsandsolidfuelcookingoperationswereaddedin
1994.Achangetoclearanceandenclosurerequirementsinthe1994edition allowed,forthe
firsttime,materialsorproductstobedirectlyappliedtoaduct.
TheCommitteepreparedarevisiontothestandardreportingtothe1996FallMeeting,
whichwasreturnedtotheCommitteeattheTechnicalCommitteeReportsSession.
The1998editioncontainednewdefinitions,minorrevisionsthroughout,andacompletely
revisedChapter7onfireextinguishingequipment.
The2001editionrevisedthedocumentscopetoclarifytheapplicationofthestandard
regardingresidentialtypecookingequipment.Furthertechnicalchangesclarified
requirementsforductinstallation,rooftopterminations,andfireprotectionequipment.This
editionalsocontainedasignificantorganizationalandeditorialrevisionbasedontheNFPA
ManualofStyle.
The2004editioncontainsanewchapteraddressingtherequirementsfordowndraft
applianceventilationaswellasclarificationsoftherequirementsforcleaningandmaintaining
exhaustsystemsanddiagramsdetailingnewarrangementsforhoodswithintegratedsupply
air.

Chapter1Administration

1.1Scope.
1.1.1* Thisstandardshallprovidetheminimumfiresafetyrequirements(preventativeand
operative)relatedtothedesign,installation,operation,inspection,andmaintenanceofall
publicandprivatecookingoperations.
1.1.2 Thisstandardshallapplytoresidentialcookingequipmentusedforcommercial
cookingoperations.
1.1.3 Thisstandardshallnotapplytocookingequipmentlocatedinasingledwellingunit.
1.1.4* Thisstandardshallnotapplytofacilitieswhereallofthefollowingaremet:
(1) Onlyresidentialequipmentisbeingused.
(2) Fireextinguisherslocatedinallkitchenareasinaccordancewith NFPA10,Standard
forPortableFireExtinguishers.
(3) Facilityisnotanassemblyoccupancy.
(4) Subjecttotheapprovaloftheauthorityhavingjurisdiction.

1.2Purpose.
Thepurposeofthisstandardshallbetoreducethepotentialfirehazardofcooking
operations,irrespectiveofthetypeofcookingequipmentusedandwhetherusedinpublicor
privatefacilities.

1.3Application.
1.3.1* Thisstandardshallbeappliedasaunitedwhole.
1.3.2 Theauthorityhavingjurisdictionshalldeterminecompliancewiththisstandardand
authorizeequivalentdeviationsfromitinallapplications.

1.4Retroactivity.
Theprovisionsofthisstandardreflectaconsensusofwhatisnecessarytoprovidean
acceptabledegreeofprotectionfromthehazardsaddressedinthisstandardatthetimethe
standardwasissued.
1.4.1 Unlessotherwisespecified,theprovisionsofthisstandardshallnotapplytofacilities,
equipment,structures,orinstallationsthatexistedorwereapprovedforconstructionor
installationpriortotheeffectivedateofthestandard.Wherespecified,theprovisionsofthis
standardshallberetroactive.
1.4.2 Inthosecaseswheretheauthorityhavingjurisdictiondeterminesthattheexisting
situationpresentsanunacceptabledegreeofrisk,theauthorityhavingjurisdictionshallbe
permittedtoapplyretroactivelyanyportionsofthisstandarddeemedappropriate.
1.4.3 Theretroactiverequirementsofthisstandardshallbepermittedtobemodifiediftheir
applicationclearlywouldbeimpracticalinthejudgmentoftheauthorityhavingjurisdiction,
andonlywhereitisclearlyevidentthatareasonabledegreeof safetyisprovided.

1.5Equivalency.
Nothinginthisstandardisintendedtopreventtheuseofsystems,methods,ordevicesof
equivalentorsuperiorquality,strength,fireresistance,effectiveness,durability,andsafety
overthoseprescribedbythisstandard.
1.5.1 Technicaldocumentationshallbesubmittedtotheauthorityhavingjurisdictionto
demonstrateequivalency.
1.5.2 Thesystem,method,ordeviceshallbeapprovedfortheintendedpurposebythe

airtobedrawnintothestructuretoreplaceinsideairthatisremovedbyexhaustsystemsor
toimprovethequalityoftheinsideairbyprovidingasourceofairhavingalower
concentrationofodors,suspendedparticles,orheatingcontent.
3.3.3AirPollutionControlDevices. Equipmentanddevicesusedforthepurposeof
cleaningairpassingthroughthemorbytheminsuchamannerastoreduceorremovethe
impuritiescontainedtherein.
3.3.4*ApplianceFlueOutlet. Theopeningoropeningsinacookingdevicewherevapors,

3.3.20EasilyAccessible. Withincomfortablereach,withlimiteddependenceonmechanical
devices,extensions,orassistance.

meetitsintendedlistingorclearancerequirementsandshallbeacceptabletotheauthority
havingjurisdiction.
4.2.4.2* Intheeventofafirewithinakitchenexhaustsystem,theductanditsenclosure
(ratedshaft,factorybuiltgreaseductenclosure,orfieldappliedgreaseductenclosure)shall
beinspectedbyqualifiedpersonneltodeterminewhethertheductandprotectionmethodare
structurallysound,capableofmaintainingtheirfireprotectionfunction,andincompliance
withthisstandardforcontinuedoperation.
4.2.4.3 Protectionshallbeprovidedonthewallfromthebottomofthehoodtothefloor,or
tothetopofthenoncombustiblematerialextendingtothefloor,tothesamelevelas
requiredin 4.2.1.

4.3FieldAppliedandFactoryBuiltGreaseDuctEnclosures.
4.3.1 Fieldappliedgreaseductenclosuresandfactorybuiltgreaseductenclosuresshallbe
listedinaccordancewithUL2221,StandardforTestsofFireResistiveGreaseDuct
EnclosureAssemblies,orequivalentstandardandinstalledinaccordancewith the
manufacturer'sinstructionsandthelistingrequirements.
4.3.2 Fieldappliedgreaseductenclosuresandfactorybuiltgreaseductenclosuresshall
demonstratethattheyprovidemechanicalandstructuralintegrity,resiliency,andstability
whensubjectedtoexpectedbuildingenvironmentalconditions,ductmovementundergeneral
operatingconditions,andductmovementduetofireconditions.
4.3.3 Thespecificationsofmaterial,gauge,andconstructionoftheductusedinthetesting
andlistingoffieldappliedgreaseductenclosuresandfactorybuiltgreaseductenclosures
shallbeincludedasminimumrequirementsintheirlistingandinstallationdocumentation.
4.3.4ClearanceOptionsforFieldAppliedandFactoryBuiltGreaseDuctEnclosures.
Thefollowingclearanceoptionsforwhichfieldappliedgreaseductenclosuresand
factorybuiltgreaseductenclosureshavebeensuccessfullyevaluatedshallbeclearly
identifiedintheirlistingandinstallationdocumentationandontheirlabel:

sealedwithlistedorequivalentliquidtightsealingdevices.
10.2.7.3 Theadditionofobstructionstospraypatternsfromthecookingappliancenozzle(s)

tobesuppliedfromthedomesticwatersupplywheretheminimumwaterpressureandflow

requirefloorcoverageunderneath.
10.8.2 Asinglelisteddetectiondeviceshallbepermittedformorethanoneappliancewhen
installedinaccordancewiththetermsofthelisting.

10.9ReviewandCertification.
10.9.1 Whererequired,completedrawingsofthesysteminstallation,includingthehood(s),
exhaustduct(s),andappliances,alongwiththeinterfaceofthefireextinguishingsystem
detectors,piping,nozzles,fuelshutoffdevices,agentstoragecontainer(s),andmanual
actuationdevice(s),shallbesubmittedtotheauthorityhavingjurisdiction.
10.9.2*InstallationRequirements.
10.9.2.1 Installationofsystemsshallbeperformedonlybypersonsproperlytrainedand

11.2InspectionofFireExtinguishingSystems.
11.2.1* Maintenanceofthefireextinguishingsystemsandlistedexhausthoodscontaininga
constantorfireactivatedwatersystemthatislistedtoextinguishafireinthegreaseremoval
devices,hoodexhaustplenums,andexhaustductsshallbemadebyproperlytrained,
