VESTALIA HOSPITALITY ANNOUNCES JAMES BEARD-AWARD WINNING CHEF

PAUL BERGLUND JOINING TEAM AS CULINARY DIRECTOR

Today Ann Kim and Conrad Leifur, co-owners of Vestalia Hospitality, announced that James Beard-award winning chef
Paul Berglund will be joining their leadership team in the newly created posiHon of Culinary Director. Vestalia includes the
Minneapolis restaurants Young Joni and Pizzeria Lola, as well as Edinas Hello Pizza.

Weve been considering creaHng this posiHon for a long Hme, says chef Kim. We have three thriving restaurants now,
and having one head (me) in charge of everything culinary no longer makes sense. This doesnt mean that our exisHng menus
or restaurant visions will change. What it does mean is a new set of eyes to help us raise and push the bar in terms of culinary
excellence. Bringing Paul onto our team is an investment in and commitment to leadershipPaul is an excellent mentor as
well as a very talented chef. Our values are aligned, and we both have mutual respect for each others work. Im vey much
looking forward to collaboraHng with Paul. I think our organizaHon will ulHmately be so much stronger based on what we can
learn from one another. Were going to accomplish lots of exciHng things together as a team.

Kim and Leifur announced the formaHon of Vestalia Hospitality earlier this year in order to create structure for
strengthening the operaHons of their restaurants and lay the groundwork for future growth and expansion. The company is
named ader the annual ancient Roman fesHval of Vesta, the goddess of the hearth, and the name of the company is intended
to reect a philosophy of warmth, community, and celebraHon.

I am excited about the energy around Vestalias people-rst culturethats whats truly drawn me to this job, says
Berglund. Personal growth and learning are really important to me, and this posiHon aords me the opportunity to ex the
skills that I want to improve on, and learn other skills that I dont currently have.

Berglunds responsibiliHes will include collaboraHve and facilitaHve leadership for all of Vestalias culinary operaHons,
including quality and consistency, menu development, collaboraHon on possible new concepts, and coaching and mentoring
senior kitchen sta. He joins the company as it pursues its strategy of sustainable and ethical growth.

A naHve of St. Louis, Berglund served as an ocer in the United States Navy before launching his culinary career at
Oakland, Californias renowned Oliveto, where he began as a line cook and eventually became chef de cuisine. For the past six
years he has led the kitchen at Minneapoliss renowned The Bachelor Farmer, where in 2016 he received the Best Chef:
Midwest honor from the James Beard FoundaHon.
