Food Processing
Food industry, including vegetable, meat and sea food processing industry, due to its important role
in human health has to be treated as an industry requiring very high standards of hygiene. This is to
ensure that there are no bacteria or virus, mold or fungi bred in the foods to be processed or
packaged for human consumption. All the foods being processed for any reason from any stage to
any stage, have to necessarily undergo very rigid standards of hygiene and disinfection processes. As
a result, the use of ozone has increased many folds in the food industry in the last decade.
For various applications, various processes are adapted with ozone technology to realise the high
standard of disinfection and to maintain a high level of hygiene. Ozone is applied in air to control the
atmospheric bacteria and other contaminations in areas where food processing is being carried out
to avoid air borne pathogens from contaminating the foods under process. The other aspect is to
dissolve ozone in water and use the ozonised water for washing the foods to eliminate surface
contamination. Ozonised water can also be used in the process as well in place of regular water for
better hygiene control. This keeps the foods sterile while under process. In some instances, gaseous
ozone at very low concentration is applied directly to the foods being processed to sterilise it.
Ozonised water is also used for washing of equipment, work surfaces, floors and walls in the
processing room. Personnel handling the foods also use ozonised water for washing hands. Ozone is
applied at various points during the processing till the foods are packaged. In some instances, even
the packaging used in the process is sterilised using ozone.
Besides the processing part, food processing industry generates a huge quantity of biological waste
which forms a part of the liquid waste in addition to the solid waste. It is mandatory to treat this
waste before disposing off. While solid waste can be treated in incinerators, the liquid waste, which
is mainly water containing the solid particulates, requires to be taken care with a properly designed
waste water treatment plant. Since it contains a good quantity of biodegradable material, it requires
a good combination of oxidation treatment in more or less the same way sewage water is treated.
After the primary treatment of removal of solids from the waste water, the water is ozonised to
break down the bio-organics which become easy to digest in the bioreactors. The second stage of
ozone application is the tertiary treatment for disinfection. The water treated with two stage
ozonation can help in realising the water for recycling. This can save on water wastages as well.
Ozone also offers the advantage of reduction of odour from the water while improving on the colour
due to bleaching action of ozone in water. Additionally ozone helps In reduction of BOD (biological
oxygen demand) and COD (chemical oxygen demand). However, the primary function of using ozone
in the tertiary treatment is to disinfect.

Why ozone is essential in poultry?

Ozone is the perfect solution for the Poultry Processing Industry, for plant cleaning, disinfecting, and
sanitizing. Ozone in poultry destroys bacteria and eliminate odors. Also Ammonia concentrations in
animal sheds can be reduced by ozone treatment.
Ozone can be used to destroy airborne bacteria and eliminate odors reduces the ammonia
concentrations in animal sheds. Ozonated water in slaughterhouse helps in bacterial control of dead
animals and environment. Spraying chilled Ozonated water onto chicken meat will kill pathogens on
the surface reducing the spoilage. Washing the slaughterhouse and equipments with Ozonated
water reduces the potential for dangerous bacteria outbreak.
Ozonated water is more effective, faster and stronger than chlorinated water, killing all bacteria and
viruses, including those that have become resistant to chlorine and conventional cleaning methods.

Ozone as an air treatment is used in the poultry industry:

1. For the storage and incubation of eggs, to the breeding of healthy birds.
2. for effective processing, storage and transport of poultry and meat products.
3. Ozone is more effective than other air disinfecting systems such as chemical fogging and UV
4. The use of ozone during refrigerated storage of poultry has a pronounced effect on flora
causing deteriorations and consequently prolongs the useful life of poultry in the
refrigerated storage.

than formaldehyde in disinfecting and requires no dormant period in which the sheds have to

Ozone Effects on Specific Bacteria, Viruses and Molds
Bacteria are microscopically small, single-cell creatures having a primitive structure. The bacteria
body is sealed by a relatively solid-cell membrane. Ozone interferes with the metabolism of
bacterium-cells, most likely through inhibiting and blocking the operation of the enzymatic control
system. A sufficient amount of ozone breaks through the cell membrane, and this leads to the
destruction of the bacteria.

Viruses are small, independent particles, built of crystals and macromolecules, Unlike bacteria, they
multiply only within the host cell. They transform protein of the host cell into proteins of their own.
Ozone destroys viruses by diffusing through the protein coat into the nucleic acid core, resulting in
damage of the viral RNA. At higher concentrations, ozone destroys the capsid, or exterior protein
shell by oxidation so DNA (deoxyribonucleic acid), or RNA (ribonucleic acid) structures of the
microorganism are affected.

Advanced Oxidation Process refers to a variety of chemical treatments that can sanitize and disinfect
water by oxidizing organic and inorganic contaminants. The concept is similar to the use of ozone for
disinfection, but AOPs go beyond standard treatment methods since they produce hydroxyl radicals.
Hydroxyl radicals have a higher oxidation potential than any other substance, with the exception of
elemental fluorine, which is not safe for direct human applications. In AOP systems, the highly
unstable hydroxyl radicals react with dissolved waterborne contaminants in a series of strong
oxidation reactions. This process happens almost instantaneously. AOP systems are synergistic in the
sense that they multiply the power of the precursor oxidants (like ozone) to yield more disinfection
potential than the sum of the input taken separately.

There are two main reasons that make AOP systems so desirable:

AOP is Highly Effective: AOP fully oxidizes organic contaminants of ALL kinds, including
microorganisms, human waste, dangerous chemicals - such as pharmaceutical waste and
petrochemicals - fungus, pesticides and other toxic elements. They also oxidize non-organic
materials, such as dissolved metals (iron, manganese, etc.), body lotions, oils, and cosmetics.

AOP is Environmentally Benign: The by-products of AOP systems are clean enough for re-use. Even
beginning with sewage waste, which is infinitely more contaminated than swimming pool water,
these systems can eventually result in water pure enough to recycle.

What is Ozone

ozone is tri-atomic form of oxygen which is generated by passing dry air

or oxygen which is fed through an electrical discharge created between
two electrodes.

There is a wide spectrum of possible inorganic and organic molecules, which
can create unpleasant Odours. The most common are hydrogen suphide,
ammonia, sulphur compounds, mercaptans, amines, aldehydes, ketones etc.

Hydrogen Sulphide and Ammonia are two main parameters restricted by

regulations. The concentration of H2S found in the exhaust air of Sewage
Treatment Plant is in the range of 5 - 15 ppm. Threshold limit of H2S = 0.002 -
0.15 ppm The emission level for ammonia is typical in the range of 50 to 150
ppm. Threshold Limit For NH3 is = 5 ppm

Here Aqozone De Odour Ozone is dosed into the ducts of the STP chamber
either carrying the fresh air or the exhaust air depending on the requirement
of the customer. Our engineers visit the site and understand the layout
conditions and submit the observations like area and the specification of the
blowers used to our design team. A separate In house design team makes the
calculations of the Ozone dosage required based on the specifications of the
blower installed.

The engineers then inject the Ozone into the ducts precisely and ensure the
odour is reduced by 90% and also killing the virus, bacterias in the air of the
exhaust or inside the STP room.

Ozone for STP/ ETP treated water:

Waste water treatment is a need of the hour and water has to be reused either
for flushing or the gardening.
The waste water after being treated by technologies like ASP, SBR, MBBR,
DEEWATS etc has a color and a smell in the final treated water even after the
chlorine dosage.

Why ozone is essential in swimming pool?

Anybody entering a swimming pool contaminates the water either from

secretion or just from washing off. Typical contaminated are Sweat,skin
flaks,mucous,hair ointments and urine In addition there are contaminants and
organisms from the environment of the swimming pools such as dust algae and
microorganisms therefore the pool water has to be constantly filtered and
disinfected. On average the human body will absorb half a litre of pool water
every hour. So you can only imagine what sort of harmful contaminants are
being absorbed into your body whilst swimming.

Ozone swimming pool technology sanitizes pool water by utilizing the natural
sterilizing action that is produced when oxygen molecules are broken apart to
produce ozone. The ozone is then forced into the swimming pool water, where
