PUMPKIN CHEESCAKE WITH


COOKIE CRUST by Emily Newman
Ingredients
-12 Pecan sandie cookies, more for garnish
- cup of salted pecans, more for garnish
-3 tbsp of unsalted butter
- tsp of kosher salt
-3 8-oz packages of cream cheese, at room
temperature
-1 8-oz container of sour cream, at room
temperature
-1 cup of packed light brown sugar
-4 large eggs, at room temperature
-1 15-oz can of pumpkin puree
-2 tsp of pure vanilla extract
-1 tsp of ground cinnamon
- tsp of ground ginger
- tsp of ground nutmeg
Preparation -Sweetened whipped cream, for serving
1. Preheat oven to 350F with the rack in the middle -Ready in 13 hours
position. Pulse cookies and pecans in a food processor, until
finely ground. Add butter, sugar, and tsp of salt and pulse
until well combined. Press cookie mixture firmly into the
bottom of a 9 springform pan.
2. Bake until edges begin to brown, 10 to 12 minutes. Cool
completely on a wire rack. Wrap outside of pan with
aluminum foil. Reduce oven temperature to 300F.
3. Beat cream cheese, sour cream, and brown sugar,on
medium speed with an electric mixer until blended and
smooth, 1-2 minutes.
4. Add eggs one at a time, beating until incorporated after
each addition. Add pumpkin, vanilla, cinnamon, ginger,
nutmeg, and remaining tsp of salt, beating until just
blended.
5. Pour batter into crust.
6. Bake until edges are set but center is still wobbly, 1h
10min - 1h 20min. Then turn oven off. Let cheesecake stand
in oven, with door closed for 1 hour. Remove from oven, and
gently run a knife around outer edge of the cheesecake to
loosen from sides of the pan. Cool completely on a wire rack,
at least 1 hour. Cover and chill, at least 8 hours.
7. Remove ring and bottom of pan, and transfer cheesecake
to a serving plate. Top with whipped cream and garnish with
cookies and pecans.

TIP:
When loosening cheesecake from the
pan, be sure not to remove the ring of
the pan.
CHOCOLATE PRETZEL
CAKE by Mackenzie Collett
I am a firm believer that cake is the most important dessert in the world. When I think of it, I think not only of
the dessert itself, but also of the celebration that usually comes with it; birthdays, weddings, farewell parties,
the list goes on. And while pie is usually in the spotlight around Thanksgiving, I think this Chocolate Pretzel
cake will be a welcome guest on the Thanksgiving table.
There are countless recipes for chocolate cake and frosting out there, but I can assure you that this one
is the best. Add caramel frosting and pretzels, and what more could you ask for? Though, if youre looking for
more of a classic dessert, omit the caramel frosting and pretzels and youll still have a showstopper.
Ingredients
Chocolate Cake
-2 cups all-purpose flour
-2 cups sugar
- cup unsweetened cocoa
-2 teaspoons baking powder
-1 teaspoons baking soda
-1 teaspoon salt
-1 teaspoon espresso powder
-1 cup milk
- cup vegetable oil
Preparation
-2 teaspoons vanilla extract

-1 cup boiling water
1. Preheat oven to 350F and butter three 8-inch baking pans.
2. Whisk flour, sugar, cocoa, baking powder, baking soda, salt and
