Tarragon Chicken Salad Tea Sandrriches

Yield: 3 cups chicken salad

INGREDIENS
1/2 chopped red grapes
4 cups cooked and shredded chicken ( roasted 2,5 pounds of
bone-in breasts)
/4 cup coarsely chopped pecans
/2 cup good-quality mayonnaise ( prefer Duke's or homemade)
SaIt and pepper, to taste
1/4 cup sour cream
Sliced whole wheat bread, for sandviches
1 tablespoon finely chopped fresh tarragon (or more to taste)

DIRECTIONS

Fold
medium bg mix chicken, mayonnaise, sour cream, and tarragon
again and ad,iust, if desired. The chicken salad can be made at least
grapes and pecans. Ch for e one hour. Check seasoning
24 hours advance.

Cut off crusts, then cut sandivich into desired shape


Scoop chicken d onto sice of bread. vith another se of bread.
(rectargles, triangles, or rounds).
